Skip the bun and the mess with this twist on sloppy joes! The homemade sauce is sweet and tangy and the mixture is so good served under creamy, cheesy mashed potatoes.

½ sweet onion
1 bell pepper
2 carrots
1 ½ pounds ground beef
¾ cup ketchup
2 tablespoons yellow mustard
2 tablespoons brown sugar
1 tablespoon white distilled vinegar
1 teaspoon Worcestershire sauce
1 teaspoon salt
½ teaspoon ground pepper
1 cup frozen corn
24 ounces Bob Evan's Original Mashed Potatoes
1 cup grated cheddar
1 tablespoon chopped chives

Steps:

  • Finely dice the onion, pepper, and carrots. Set aside.
  • Heat a 12-inch oven safe skillet over medium heat and add the ground beef.
  • Crumble the beef as it begins to brown. When about half of the beef is browned, add the onion, pepper, and carrots to the skillet. Continue cooking, stirring often, until the beef is cooked through.
  • Drain the grease from the skillet.
  • Whisk together the ketchup, mustard, brown sugar, vinegar, Worcestershire sauce, salt, and pepper. Pour this mixture into the skillet with the beef.
  • Cook over low heat, stirring occasionally, for 15 minutes.
  • Add the corn to the mixture and stir well.
  • Cut a slit in the film over the mashed potatoes and microwave for 2 minutes.
  • Add the mashed potatoes, grated cheddar, and chives to a mixing bowl and stir to combine.
  • Spread the mashed potatoes evenly over the sloppy joe mixture.
  • Place skillet in a preheated 350 degree oven and bake for 15 minutes.
  • Serve immediately.

1 tablespoon bacon grease ((or olive oil))
1 clove garlic (minced)
1/2 medium yellow onion (minced)
1 pound ground beef
1/4 cup ketchup
1 tablespoon Worcestershire sauce
1/2 tablespoon light brown sugar
2 cups frozen corn
4 cups mashed potatoes
3/4 cup cheddar cheese (shredded)
3/4 cup Monterey Jack cheese (shredded)

Steps:

  • Pre-heat the oven to 350° F.
  • Heat the bacon grease, or olive oil, in a large skillet over medium heat.
  • Then add in the garlic and sauté for 1-2 minutes.
  • Add the onion in with the garlic and sauté for another 2-3 minutes.
  • Add the ground beef into the skillet, stirring the onions and garlic into the meat. Cook on medium heat for 15 to 20 minutes, or until the meat is well cooked. Drain off any excess oil when the meat has finished cooking.
  • Mix the ketchup, Worcestershire sauce, and brown sugar into the meat, stirring until combined. Let this mixture simmer for at least 5 minutes.
  • Layer the sloppy joe meat in the bottom of the skillet or a 9x13 baking dish.
  • Next add a layer of corn.
  • Now add a good thick layer of mashed potatoes.
  • Finally, add the shredded cheese as the top layer.
  • Bake the casserole at 350° F for 20 to 30 minutes, or until the mixture is heated through and bubbly, and the cheese is melted.

To be honest, I don't hear many compliments on this dish...folks are always too busy eating! I developed the recipe by grabbing ingredients from my refrigerator and cupboards one "crunch time" when I needed an easy dish fast. -Kathy McCreary, Goddard, Kansas

1 pound ground beef
1/2 cup chopped onion
1 can (8 ounces) tomato sauce
1 can (8-3/4 ounces) whole kernel corn, drained
1/4 cup water
1 envelope sloppy joe mix
2 tubes (6 ounces each) refrigerated buttermilk biscuits
2 tablespoons whole milk
1/3 cup cornmeal
1 cup shredded cheddar cheese, divided
Minced fresh parsley, optional

Steps:

  • Preheat oven to 375°. In a large skillet, cook beef and onion over medium heat until meat is no longer pink; drain. Stir in tomato sauce, corn, water and sloppy joe seasoning; cook over medium heat until bubbly. Reduce heat and simmer for 5 minutes; remove from heat and set aside. , Separate biscuits; flatten each to a 3-1/2-in. circle. Place milk and cornmeal in separate shallow bowls; dip both sides into milk and then into cornmeal. Place seven biscuits around the sides and three on the bottom of an ungreased 9-in. pie plate. , Press biscuits together to form a crust, leaving a scalloped edge around rim. Sprinkle with 1/2 cup cheese. Spoon meat mixture over cheese. , Bake until crust is deep golden brown, 20-25 minutes. Sprinkle with remaining cheese and, if desired, fresh parsley. Let stand 5 minutes before serving.

1 lb lean (at least 80%) ground beef
1/2 teaspoon salt
1/4 teaspoon pepper
1 medium onion, finely chopped (1/2 cup)
1/4 cup chopped green bell pepper
3 tablespoons ketchup
1/2 cup Original Bisquick™ mix
1 cup milk
2 eggs
Additional ketchup, if desired

Steps:

  • Heat oven to 400°F. Spray 9-inch glass pie plate with cooking spray.
  • In 10-inch skillet, cook beef, salt, pepper, onion and bell pepper over medium-high heat 5 to 7 minutes, stirring occasionally, until beef is thoroughly cooked; drain. Stir in 3 tablespoons ketchup. Spread in pie plate.
  • In medium bowl, stir Bisquick mix, milk and eggs with wire whisk or fork until blended. Pour into pie plate.
