OREO MUD PIE RECIPE
This no-bake mud pie has an Oreo cookie crust, a layer of homemade chocolate pudding, and a fluffy whipped cream topping. It's cool, creamy and totally irresistible!

- Remove 4 Oreo cookies from the package and set aside. In a food processor (or a large ziploc bag with a rolling pin) crush remaining Oreo (filling intact) cookies until fine crumbs form. Add butter and salt, pulse or mix to combine.
- Press moistened crumbs into the bottom of a 9-inch pie dish. Freeze for 30 minutes while preparing the filling
- In a large bowl combine the chocolate, butter and vanilla. Place a mesh sieve over top and set aside.
- To make the filling, in a medium heavy bottomed saucepan set over medium-low heat, add the milk, 1 1/2 cups heavy cream, sugar, salt, and espresso powder. Heat until the sugar has dissolved and the mixture is warm, and gently bubbling.
- Meanwhile, in a medium heatproof bowl, whisk together the remaining 1/2 cup of heavy cream, cornstarch and the egg yolks until a thick paste forms.
- Carefully temper the egg yolks by slowly drizzling the warm mixture into the medium bowl, whisking continuously to prevent the eggs from scrambling. It will take about 5 minutes to incorporate the mixture.
- Return the mixture to the stovetop and heat until it reaches 165 degrees on an instant read thermometer AND is thick like pudding (the thicker, the better), about 5-8 minutes. Pour over the sieve to remove any overcooked pieces of egg that make have formed. Remove the sieve and whisk the milk into the chocolate until melted. As the pudding cools the mixture will thicken.
- Pour warm mixture into the chilled crust. Cover with plastic wrap, directly on the pudding. Chill in the refrigerator for 4 hours or overnight until fully set. It should be firm to the touch.
- When ready to serve in the bowl of a stand mixer fitted with the whisk attachment or a large mixing bowl with a hand mixer, beat the heavy cream, powdered sugar and vanilla extract until stiff peaks form. Spread over the pudding, then remove the filling from the remaining 4 Oreo cookies and crumble over top.
- Keep refrigerated until ready to serve.

- 2. Layer as Follows: Layer 1 1/3 C Crushed Cookies Layer 1/2 of the Chocolate Pudding Layer Crushed Cookies Layer Pudding Mixture Ending with some Cookie Crumbs on top Optional Toppings: Shaved Hershey bar Chocolate, Pecans, sliced Almonds or Nuts of Choice. Chill at least 1 hr before serving.

- 1. Soak the Marshmallows overnight in the Cherry Juice.
- 2. Whip cream, then Add to Marshmallow Mixture, with the Pineapple and nuts. Chill Several Hrs. (4 hrs at least) Serve in Dessert Dishes. (OPTIONAL) Top with a Marashino Cherry with a stem, and a Sprinkle of Chopped Nuts.

STRAWBERRY VANILLA CUSTARD PUDDING BY FREDA
This Pudding Very Light and Creamy, Very SIMPLE to make. It is a Partially Borrowed, Tried and True Recipe from an old 1950's cookbook that was given to me by an Aging and Very ill Aunt of one of My best Girlfriends in Missouri,(Jo). She had been cared for by My friend Jo. This book was given to me before her passing as She enjoyed me & my Friend so much and was so grateful for the "Good times" we shared with her. Noting "She hated to Cook, and Knew I love to, along with my Love of Cookbooks. This recipe is In Her Memory. "Aunt Inez" I make this and simply Layer Fresh or Frozen Strawberries, or Raspberries with this custard in a Footed dessert dish, with a dollop of Whip Cream on top. Very Good and Very Pretty. - 1. Preheat Oven @ 350 degrees
- 2. Butter Bread slices, Cut into Cubes, then arrange in a 1 Qt baking dish. Sprnkle with raisins.
- 3. Combine the Remaining Ingredients in seperate bowl, Mix well, Pour over the bread and raisins.

- Whisk French vanilla pudding mix with milk in a large bowl until softly set, about 2 minutes. Pudding will thicken as it stands. Cream confectioners' sugar, cream cheese, and butter in a separate bowl until smooth and creamy. Stir cream cheese mixture into pudding until thoroughly combined; gently fold frozen whipped topping into the mixture.
- Place half the cookie crumbs into the bottom of an 9x12-inch dish; retain remaining crumbs for topping. Spread the filling over the layer of cookie crumbs and top with remaining crumbs, covering completely. Chill for at least 30 minutes.
