1 boneless fully cooked ham (9 pounds)
1-1/2 cups champagne
3/4 cup packed brown sugar
4-1/2 teaspoons honey
3/4 teaspoon ground ginger
3/4 teaspoon ground mustard

Steps:

  • Place ham on a rack in a shallow roasting pan. Score the surface of the ham, making diamond shapes 1/2 in. deep. Bake, uncovered, at 325° for 1-1/2 hours., Meanwhile, in a small saucepan, combine the remaining ingredients. Bring to a boil; cook until glaze is reduced by half. Remove from the heat., Baste ham with glaze; bake 30 minutes longer or until a thermometer reads 140°, basting twice with glaze. Serve with remaining glaze.

This is a Paula Deen classic made with a spiral-sliced ham coated with a brown sugar/mustard glaze and then covered with pineapple rings, maraschine cherries and cloves. I found this in the December 2009 Food Network Magazine. Note: I am guessing on the size of the jar for the maraschino cherries. The recipe just calls for a small jar.

1 spiral-sliced ham
1 (20 ounce) can pineapple slices, juice reserved
15 -20 whole cloves (optional)
1 (8 ounce) jar maraschino cherries
3/4 cup packed light brown sugar
2 tablespoons yellow mustard

Steps:

  • Preheat the oven as directed on the ham package and follow the instructions for baking the ham. Remove the ham from the oven about 30 minutes before the end of the warming time.
  • Decoratively arrange the pineapple slices on top of the ham, securing the with whole cloves, if using, or toothpicks. Place a cherry in the center of each pineapple and secure with a clove or toothpick.
  • In a small bowl, combine the brown sugar, mustard and just enough of the reserved pineapple juice to make a thick glaze. Spoon the glaze over the ham and bake for the remaining 30 minutes. Remove the ham from the oven, transfer to a cutting board and carve.

1 cooked smoked bone-in ham (6 Ib)
1 cup packed brown sugar
1 tablespoon cornstarch
1/4 teaspoon salt
1 can (8 oz) crushed pineapple, undrained
2 tablespoons lemon juice
1 tablespoon yellow or Dijon mustard

Steps:

  • Heat oven to 325°F. Place ham on rack in shallow roasting pan. Insert ovenproof meat thermometer in ham so tip is in center of thickest part of meat and does not touch bone or rest ¡n fat. Bake uncovered 1 hour 30 minutes or until thermometer reads at least 140°F.
  • Meanwhile, in 1 -quart saucepan, mix brown sugar, cornstarch and salt. Stir in pineapple, lemon juice and mustard. Cook over medium heat, stirring constantly, until mixture thickens and boils. Boil and stir 1 minute. Brush glaze over ham during last 45 minutes of baking.
  • Remove ham from oven. Cover loosely with foil; let stand 10 to 15 minutes for easier carving.

1 canned ham (5 pounds)
1/2 cup packed brown sugar
1 teaspoon ground mustard

1 tablespoon cider vinegar
Maraschino cherries

Steps:

  • Drain pineapple, reserving 2 tablespoons juice; set aside. Place ham in a baking dish. Bake at 350° for 30 minutes., In a small bowl, combine the brown sugar, mustard, cloves, vinegar and reserved pineapple juice. Score top of ham. Place pineapple slices and cherries over ham; spoon glaze over top. , Bake 40-45 minutes longer or until a thermometer reads 140°, basting occasionally.

1 1/2 pounds thick-sliced good-quality baked ham such as Virginia
1/2 cup heavy cream
1 firm-ripe Camembert, chilled, rind discarded and cheese coarsely chopped
1 large egg yolk
Accompaniments:
Broccolini or green beans

Steps:

  • Preheat oven to 350°F with rack in middle.
  • Overlap ham slices on a baking sheet and cover with foil. Bake until just heated through, 8 to 10 minutes.
  • Bring cream to a simmer, then whisk in cheese until smooth. (If necessary, purée in a blender, then reheat.) Whisk in yolk and cook, whisking, 1 minute.
  • Serve ham with sauce.
