Great for a lightened up corn casserole. My family just loves easy side dishes and casseroles too. So quick and easy to make. Servings: 15 • Size: about 2-2/3 x 3 inch piece •

8 1/2 oz corn muffin mix
15 1/2 oz can sweet yellow corn, drained
14 3/4 oz sweet corn cream style
16 oz fat free greek yogurt
1/4 c melted light butter
1/2 c egg whites
baking spray

Steps:

  • 1. Preheat oven to 350°. Spray a 9 x 13 baking dish with cooking spray.
  • 2. In a large bowl combine all the ingredients and mix with a spoon, it will be fluffy and you will think you did something wrong, don't worry, you are doing fine.
  • 3. Pour into baking dish and bake 55-60 minutes, or until the edges are golden. Let it cool a few minutes before cutting. Makes 15 pieces

We added Cheddar and chives to this classic and quick side that goes from mixing bowl to oven in less than 10 minutes. It bakes up golden brown and puffy -- perfect for a potluck or holiday gathering.

One 15-ounce can whole corn kernels, drained
One 15-ounce can creamed corn
1 large egg
1 1/2 cups shredded sharp Cheddar
1 cup yellow cornmeal
1 cup sour cream
6 tablespoons unsalted butter, melted
1/4 cup chopped fresh chives
1/4 cup sugar
2 teaspoons baking soda
Kosher salt and freshly ground black pepper

Steps:

  • Preheat the oven to 350 degrees F.
  • Add the whole corn, creamed corn, egg, Cheddar, cornmeal, sour cream, butter, chives, sugar, baking soda, 1 1/2 teaspoons salt and a generous amount of black pepper to a large bowl and stir until well combined.
  • Pour the mixture into a 2-quart baking dish and bake until lightly golden on the outside and set in the middle, 30 to 35 minutes.
