5 small potatoes
2 teaspoons parsley
1 garlic clove
1/2 cup fat free chicken broth
4 pieces Laughing Cow light garlic and herb cheese

Steps:

  • Peel and chop potatoes (or leave the peels on).
  • Boil potatoes until tender. Drain.
  • Mash the potatoes with a masher, adding broth a little at a time to desired consistency.
  • Add garlic and parsley.
  • Chunk up the cheese slightly and mix in gently. Do not mix completely.
  • Salt and pepper to taste.

This wonderful recipe came from my friend, Diane, and both of us prepare this for almost every family occasion. It would not be a meal at Mama's without them. Easy to make ahead and complements everything.

4 large garlic cloves, minced
1 teaspoon salt
2 lbs idaho potatoes (4-5)
1/2 cup butter, cut in pieces
2 1/2 tablespoons butter, cut in pieces
1 cup heavy cream
1 tablespoon chopped parsley
1/2 cup dry breadcrumbs
chopped chives, and if desired or sour cream, if desired

Steps:

  • Steam potatoes until tender.
  • Beat JUST potatoes 'til no lumps remain.
  • Beat in minced garlic cloves, salt, 1 stick butter, cream, and parsley -- adding liquid gradually and beating 'til creamy.
  • Spoon into oil-sprayed baking dish. Sprinkle with bread crumbs and dot with remaining butter.
  • Bake uncovered at 375 degrees for 25 minutes.

½ cup milk
¼ cup butter
2 cloves garlic, minced

2 tablespoons sesame seeds

Steps:

  • Bring a large pot of water to boil; add potatoes, and boil until soft, about 20 to 25 minutes. Drain, and place in a large bowl.
  • Combine potatoes with milk, butter, garlic, salt, and pepper. Mix with an electric mixer or potato masher to your desired consistency. Sprinkle with sesame seeds.

6 cups potatoes, peeled and cut
1 (14 1/2 ounce) can chicken broth (regular or reduced fat)
salt and pepper, to taste (the broth has enough salt for most people but taste them first and season if you wish)

Steps:

  • Boil potatoes until tender and drain well.
  • Combine potatoes and broth in a bowl and mash to desired consistency.
  • Season with salt and pepper if desired.
  • Tip: For a 'buttery' look without the butter, add a few granules of chicken bouillon- Thanks SusieQusie! You could also add some butter flavored granules like Butter Buds or Molly McButter).

2 lbs potatoes
4 garlic cloves, whole, peeled
1 1/2 teaspoons butter or 1 1/2 teaspoons olive oil
1/4 teaspoon dried sage
1/8 teaspoon salt
black or white pepper, to taste
1/4 cup nonfat sour cream or 1/4 cup 1% fat buttermilk

Steps:

  • Peel potatoes and cut in half. Place in large stovetop pot with 4 whole garlic cloves. Cover with cold water and bring to a boil. Reduce heat to a gentle boil and cook until potatoes are tender.
  • When potatoes are tender, drain and mash along with garlic cloves using a potato masher or electric beaters.
  • Stir butter or olive oil, sage, salt, pepper and sour cream or buttermilk into the remaining potatoes and return to low heat, stirring until warm.
