6 cups torn mixed salad greens, such as Italian blend
2 cups small broccoli florets
1 cup shredded carrots
2 cups frozen sweet peas, cooked, drained
1 medium red bell pepper, cut into thin bite-size strips
2 medium stalks celery, thinly sliced (1 cup)
6 slices bacon, crisply cooked, drained and crumbled
5 medium green onions, thinly sliced (5 tablespoons)
3/4 cup reduced-fat mayonnaise
3/4 cup buttermilk
2 tablespoons chopped fresh or 1/2 teaspoon dried basil leaves
1/2 teaspoon finely shredded lemon peel
1 teaspoon lemon juice
1/4 teaspoon pepper
1/2 cup shredded reduced-fat Cheddar cheese (2 oz)

Steps:

  • Place salad greens in large salad bowl. In order given, layer remaining salad ingredients over greens.
  • In small bowl, mix all dressing ingredients except cheese until well blended. Spoon dressing over salad; sprinkle with cheese. Toss salad to coat.

4 cups red potatoes, unpeeled and cubed
1 teaspoon olive oil
1 cup chopped green bell pepper
1/4 cup chopped onion
1 1/4 cups skim milk
2 tablespoons all-purpose flour
1/4 cup fat-free mayonnaise (I like Kraft Free)
1/8 teaspoon black pepper
1 cup shredded reduced-fat sharp cheddar cheese
2 cups cubed cooked ham

Steps:

  • Place potatoes in 2-quart saucepan; add enough water just to cover potatoes. Heat to boiling. Reduce heat to medium-low; cook uncovered 8 to 10 minutes or until tender. Drain.
  • Heat oven to 350°F In 10-inch nonstick skillet, heat oil over medium-high heat. Add bell pepper and onion; cook 3 to 4 minutes, stirring occasionally, until vegetables are tender.
  • Meanwhile, in small bowl, mix milk and flour with wire whisk until well blended. Stir into vegetables in skillet. Heat to boiling. Reduce heat; cook uncovered 2 to 3 minutes, stirring constantly, until thickened. Stir in mayonnaise, pepper and cheese; stir until cheese is melted.
  • Place ham and potatoes in ungreased 2-quart casserole. Pour milk mixture over ham mixture; stir to mix. Bake uncovered 25 to 30 minutes or until bubbly and light golden brown on top.

1/4 cup bottled fat-free Italian salad dressing
3/4 cup Progresso™ cannellini beans, rinsed and drained (from a 19 oz can)
1 1/2 teaspoons spicy brown mustard
1/4 teaspoon salt
2 6- to 7-inch whole wheat pita bread rounds

Steps:

  • In a medium bowl, combine squash, broccoli, tomatoes, olives, and parsley; toss with 2 tablespoons salad dressing. Cover and chill for 2 to 24 hours.
  • For hummus: In a food processor, combine cannellini beans, the remaining 2 tablespoons salad dressing, mustard, and salt. Cover and process until smooth and spreadable. (Or mash beans with a potato masher or fork. Stir in salad dressing and mustard.)

3 cups penne pasta, uncooked
2 tablespoons light Italian dressing
1 tablespoon minced garlic
1 1/2 lbs boneless skinless chicken breasts, cut into 1-inch chunks
2 zucchini, cut into chunks
1 1/2 cups fresh asparagus, cut into one inch lengths
1 red pepper, chopped
1 cup reduced-sodium fat-free chicken broth
4 ounces reduced-fat cream cheese, cubed
1/4 cup grated parmesan cheese

Steps:

  • Cook pasta as directed on package.
  • While the pasta is cooking, heat dressing in large skillet on medium heat.
  • Add garlic, chicken and vegetables; cook 10 to 12 minutes or until chicken is cooked through, stirring frequently.
  • Add broth and cream cheese; cook 1 minutes or until cheese is melted, stirring constantly.
  • Add Parmesan cheese; mix well.
  • Drain the pasta and return to pot.
  • Add chicken and vegetable mixture; toss lightly. Cook 1 minute or until heated through.
  • Sauce will thicken after standing.

1 head lettuce, torn into bite size pieces
1/3-1/2 cup chopped onion
1/2 cup thinly sliced celery
1/2 cup chopped red bell pepper (Can substitute using green, orange or yellow peppers)
1 (9 ounce) bag frozen peas, thawed by running under hot water, then blotted with paper toweling
1 -1 1/4 cup salad dressing
2 tablespoons sugar
1 cucumber, peeled and thinly sliced (blot with paper towels to remove excess moisture)
1 (8 ounce) package shredded medium cheddar or 1 (8 ounce) package sharp cheddar cheese
10 slices bacon, cooked and crumbled

Steps:

  • In a large bowl, layer salad with vegetables and ingredients in order given.
  • Chill 30 minutes to 1 hour.
  • This salad is best eaten, shortly after being made.
  • Serves 8.
  • Note: Sometimes I substitute 1-(8 oz.) can of well drained bamboo shoots for the sliced cucumbers. Just be sure to blot the bamboo shoots with paper toweling before placing them on the salad.

6 cups bite-size pieces mixed salad greens
2 medium stalks celery, thinly sliced (1 cup)
1 cup thinly sliced radishes
8 medium green onions, sliced (1/2 cup)
4 slices bacon, crisply cooked and crumbled
1/2 cup reduced-fat mayonnaise or salad dressing
1 cup Yoplait® Fat Free plain yogurt
1/4 cup grated Parmesan cheese or shredded Cheddar cheese (1 oz)

Steps:

  • Cook peas as directed on box; rinse with cold water and drain.
  • Place salad greens in large glass bowl. Layer celery, radishes, onions, bacon and peas on salad greens.
  • Mix mayonnaise and yogurt; spread over peas, covering top completely and sealing to edge of bowl. Sprinkle with cheese.
  • Cover and refrigerate at least 2 hours to blend flavors but no longer than 12 hours. Toss before serving if desired. Store covered in refrigerator.

During my engagement I read an article in a bridal magazine in which a nutritionist/psychiatrist was asked, what is the easiest way for a woman to lose a large amount of weight? Her reply was, "Get Engaged". I had to laugh, I was running on the treadmill at the time in preparation for the big day in my white dress. Over the course of 11 months, I lost 20 pounds, gained a ton of self confidence and learned to eat healthy and excersize. However, it took some major dietary changes and I learned to take my uber-fattening favorites and make them healthier and still yummy :) I put these recipes in a book and I called it the Skinny Bride's Guide. But this was by far my favorite! It was my grandmother's recipe that I altered. NOTE: This will not rise like a normal cake! It is very moist and very dense. Put it in a muffin tin or a bundt pan. 9" rounds won't work, or you will end up with the world's thinnest cake! For a spluge I mix up a glaze of powdered sugar and skim milk.

1 cup no-sugar-added applesauce

  • Gently, stir in carrots.
  • Bake in bundt pan for 35-40 minutes or until tooth pick inserted near the center comes out clean.
