SKILLET JACKPOT CASSEROLE
My mother use to make this as an oven casserole when I was a child. I decided to jazz it up a little bit and cook it on the stovetop to avoid heating up the oven during the summer. It's a quick after work dinner to make that will please adults and children.

Steps:
- 1. Cook macaroni, rinse and set aside. Dice onion.
- 2. In a non stick skillet, cook onion until translucent and add LEAN ground beef, cook until done. Drain.
- 3. On medium heat, add tomato sauce (15 oz), drained corn, and half of sauce can of water to meat/onion mixture. Stir in taco seasoning and warm through.
- 4. Add cooked macaroni to above mixture until desired ratio of macaroni to meat mixture, warm through.
- 5. Add shredded cheese to top of meat/macaroni mixture and turn heat down to medium low until cheese melts. I used a jack & cheddar mix. Serve.

- Spray a large skillet with cooking spray.
- Saute onion in skillet until tender.
- Add ground beef and cook until browned.
- Add rest of ingredients except cheese.
- Simmer until heated through.
- Add grated cheese and heat through until cheese is melted.
