2 cans (11 ounces) refrigerated breadstick dough or 2 cans (13.8 ounces) refrigerated pizza dough
3 ounces sliced pepperoni or turkey pepperoni
2 cups mozzarella cheese, shredded
1 cup shredded Parmesan cheese
2 tablespoons parsley flakes
1/3 cup olive oil
1 teaspoon minced garlic
Marinara sauce, optional

Steps:

  • Cut breadsticks into quarters or pizza dough into small pieces. Remove pepperoni from package and cut into smaller pieces; save remainder for another use. Mix all ingredients in a bowl and toss so oil is spread evenly., Spread mixture in greased 13x9-in. baking dish or fluted tube pan. Bake at 350° for 35 minutes or until top is brown. Be sure center is thoroughly cooked; if not, continue baking and check every 5 minutes until done. Flip pizza onto serving plate and serve with marinara sauce for dipping if desired.

I got this recipe out of HomeBasic book. It's a good carb recipe. Made it tonight for supper and hubby said to make it anytime. I used regular sauce as that's all I had on hand.

2 lbs lean ground beef
1 (700 ml) jar garden-style low-carb pasta sauce, divided
1/2 cup green pepper, chopped
1/2 cup quick-cooking oats
1 cup shredded part-skim mozzarella cheese, divided
2 eggs, lightly beaten
salt and pepper
1/2 cup chopped onion

Steps:

  • Preheat oven to 350°F.
  • In a large bowl combine ground beef, 1 cup sauce, 1/2 cup green peppers, 1/2 cup oats, 1/2 cup cheese, eggs, salt and pepper.
  • In a 13 x 9 baking pan, shape into loaf.
  • Top with 1/2 cup sauce.
  • Bake uncovered for 50 minutes.
  • Top with 1/2 cup cheese and bake an additional 10 minutes.
  • Let stand 10 minutes before serving.
  • Remove meat loaf to serving platter and serve with sauce.
  • 377 calories per serving, 26.8 g fat, 7.2 g carbohydrates.

S'KAT'S EASY PIZZA DOUGH



S'kat's Easy Pizza Dough image

Throw away your coupons, put the local greaseries to shame! It's easy to make pizza dough at home! Prep time includes rising time.

Number Of Ingredients 7

1 1/2 cups water (test on inside of wrist, like for a baby bottle- that's the right temp!)
1 (1/4 ounce) packet dry yeast
1 teaspoon sugar
3 -4 cups bread flour
1 tablespoon cornmeal
1 teaspoon salt
3 tablespoons olive oil, plus additional as needed

Steps:

  • Stir together the water, yeast and the sugar.
  • Let rest until the yeast foams, about 3 minutes.
  • Place 2 1/2-cups of the flour, salt and cornmeal in a mixing bowl and combine.
  • Add the yeast mixture and olive oil and stir together to form a sticky dough.
  • Remove from bowl and knead, adding the remaining flour a little at a time until the dough becomes smooth and elastic, about 5 minutes.
  • The longer you knead, the more texture your dough will have.
  • Turn the dough into a lightly oiled bowl.
  • Cover with a dry towel and place in a warm, draft free area.
  • (I usually stick it in the oven. If your oven is cold, very briefly- about 1 minute- turn to highest temp, then off again, well before placing bowl in oven. Let's not melt any bowls, eh?) Let rise for at least one hour.
  • When dough has doubled in bulk, punch back down.
  • At this point, add any of the optional ingredients at end of recipe, or as desired.
  • Let the dough rise again, until almost doubled, about 30 minutes.
  • Or, if there were no extra additions, shape and add toppings.
  • Bake at 500°F for about 8 minutes.
  • Optional, but worthwhile: fresh herbs (I use basil, oregano and thyme), chopped minced garlic, parmiagiano-reggiano and extra cornmeal for texture.

1 pound ground beef
1 cup heavy cream
3/4 cup ketchup
1/2 cup breadcrumbs
1/2 cup ice water
2 tablespoons salt
1 tablespoon lemon juice
1 tablespoon ground mustard
1 tablespoon dehydrated onion
1 tablespoon smoked paprika
1 tablespoon ground white pepper
1 tablespoon sugar
1 teaspoon garlic powder
2 eggs
8 ounces Cheddar, diced 1/2-inch
8 ounces Swiss cheese, diced 1/2-inch
1 cup sliced black olives
1/2 cup fire-roasted bell peppers
1/4 cup sun-dried tomatoes

Steps:

  • Preheat the oven to 250 degrees F (convection) or 275 degrees F (conventional).
  • Blend pork, beef, cream, ketchup, breadcrumbs, ice water, salt, lemon juice, ground mustard, dehydrated onion, smoked paprika, white pepper, sugar, garlic powder and eggs in a food processor until well blended.
  • Turn out into a bowl and add the Cheddar, Swiss cheese, olives, peppers and tomatoes (or add your favorite pizza toppings like salami, pepperoni, mushrooms...).
  • Pack into a 9-by-5-by-3-inch loaf pan.
  • Bake until internal temperature reads 160 degrees F, about 2 hours.

PEPPERONI PIZZA LOAF

1 loaf (1 pound) frozen bread dough, thawed
2 large eggs, separated
1 tablespoon grated Parmesan cheese

8 ounces sliced pepperoni

1/4 to 1/2 cup pickled pepper rings
1 medium green pepper, diced
1 can (2-1/4 ounces) sliced ripe olives
1 can (15 ounces) pizza sauce

Steps:

  • Preheat oven to 350°. On a greased baking sheet, roll out dough into a 15x10-in. rectangle. In a small bowl, combine the egg yolks, Parmesan cheese, oil, parsley, oregano, garlic powder and pepper. Brush over the dough. , Sprinkle with the pepperoni, mozzarella cheese, mushrooms, pepper rings, green pepper and olives. Roll up, jelly-roll style, starting with a long side; pinch seam to seal and tuck ends under., Position loaf with seam side down; brush with egg whites. Do not let rise. Bake until golden brown and dough is cooked through, 35-40 minutes. Warm the pizza sauce; serve with sliced loaf., Freeze option: Freeze cooled unsliced pizza loaf in heavy-duty foil. To use, remove from freezer 30 minutes before reheating. Remove from foil and reheat loaf on a greased baking sheet in a preheated 325° oven until heated through. Serve as directed.

2 eggs
1 jar (14 ounces) pizza sauce, divided
1 cup shredded mozzarella cheese
1 cup Italian-seasoned bread crumbs
1/4 teaspoon garlic salt
1/8 teaspoon pepper
2 pounds ground beef
1/2 pound bulk Italian sausage

Steps:

  • In a large bowl, beat eggs. Add 3/4 cup of pizza sauce, cheese, bread crumbs, garlic salt and pepper; mix well. Combine beef and sausage; add to egg mixture and mix well. Press into a 9x5-in. loaf pan. Bake at 350° for 1-1/4 hours. Drain. Spoon remaining pizza sauce over meat loaf; bake 15 minutes longer or until no pink remains. Let stand 10 minutes before slicing.
