SWEET POTATO, APPLE AND LEEK CASSEROLE

2 tablespoons olive oil
2 medium leeks, white and light green parts sliced lengthwise and thinly sliced crosswise
Salt and freshly ground pepper
1 tablespoon fresh thyme leaves
1/2 cup heavy cream
1 large sweet potato (about 1 pound), peeled and sliced into 1/2-inch-thick rounds
1 large or 2 medium red skinned apples, such as Gala or Honeycrisp (about 12 ounces), halved, cored and cut into 1/4-inch slices
1/4 cup freshly grated Parmesan

Steps:

  • Preheat the oven to 350 degrees F.
  • In a large skillet, heat 1 tablespoon of the oil over medium heat. Add the leeks and 2 tablespoons water; season with salt and pepper. Cook, stirring occasionally, until tender but not browned, about 8 minutes. Add the thyme and then the cream and cook until the liquid thickens, about 2 minutes; set aside.
  • In a 2-quart shallow baking dish, arrange the sweet potato in overlapping layers. Spread the leek mixture evenly over the potatoes. Arrange the apples in an overlapping layer on the leeks. Brush the apples with the remaining tablespoon of oil and sprinkle with the Parmesan. Cover tightly with aluminum foil and bake 40 minutes. Uncover and continue to bake until the Parmesan is golden brown and melted, about 20 minutes more. The tip of a paring knife should easily pierce the apples and potatoes. Let cool 10 minutes before serving.

3 cups thinly sliced, peeled granny smith apples (, , about 1 1/4 pounds)
1 teaspoon lemon juice
4 small sweet potatoes, peeled and thinly sliced (about 2 pounds)
1/4 cup maple syrup
1 tablespoon butter, melted
1/2 teaspoon salt
1/4 teaspoon black pepper
cooking spray
2 (1 ounce) slices white bread
2 teaspoons olive oil
1/4 teaspoon ground nutmeg

Steps:

  • Preheat oven to 400 degrees.
  • Combine apples and lemon juice in a large bowl.
  • Add the sweet potatoes and the next 4 ingredients (sweet potatoes through pepper).
  • Place the sweet potato mixture in a 13 x 9-inch baking dish coated with cooking spray.
  • Bake at 400 degrees for 40 minutes, stirring after 25 minutes.
  • Place bread in a food processor; pulse 10 times or until coarse crumbs form to measure 1 cup.
  • Combine breadcrumbs, oil, and nutmeg; sprinkle over the sweet potato mixture.
  • Bake for an additional 15 minutes or until golden.
  • Let stand for 10 minutes before serving.

4 large sweet potatoes, baked until soft and peeled (or two 15.5 oz. cans sweet potatoes, drained)
1/3 cup unsalted butter, melted
1/3 cup firmly packed light brown sugar
1/3 cup dark corn syrup
1 tablespoon brandy
1 teaspoon ground cinnamon
ground nutmeg, a pinch
2 medium apples, peeled, cored, and sliced 1/4-inch thick

Steps:

  • Make it now: in the bowl of an electric mixer, beat together the sweet potatoes, 2 tablespoons of the butter, the brown sugar, corn syrup, brandy, cinnamon, and nutmeg at medium speed, until smooth.
  • Coat the inside of a 9-inch baking dish with nonstick cooking spray.
  • Spread half of the sweet potato mixture in the dish; top with a layer of apples, then the remaining sweet potato mixture.
  • Cover the sweet potatoes with the remaining apple slices, arranging them in an artful pattern.
  • Brush the top of the apples with the remaining butter, completely coating the apples so they don't discolor.
  • Cover and refrigerate for up to 4 days or freeze for up to 1 month.
  • Bake it later: defrost the casserole in the refrigerator overnight, if necessary.
  • Preheat the oven to 350°; allow casserole to come to room temperature for about 30 minutes.

Sweet potatoes, Ontario apples and the rich tang of Gruyère cheese are a divine combination of flavours and add a sweet touch to Sunday night's roast pork dinner or your Thanksgiving dinner.

3 lbs sweet potatoes (peeled and sliced)
1 onion, thinly sliced into rings
4 ontario apples (peeled, cored and sliced)
1 cup milk
1 tablespoon all-purpose flour
1/2 teaspoon dry mustard
1/2 teaspoon salt
1/2 teaspoon pepper
1 cup shredded gruyere cheese

Steps:

  • Preheat oven to 400°F (200°C). Arrange half of the sliced sweet potatoes over the bottom of an 8-inch round (2 L) baking dish. Arrange half of the sliced onion rings over the sweet potatoes and half of the sliced apples over the onion. Repeat these layers with remaining ingredients.
  • In medium bowl, whisk together milk, flour, mustard, salt and pepper. Drizzle over apples. Sprinkle with cheese.
  • Cover with foil and bake in preheated oven for 45 minutes. Remove foil and bake until cheese is bubbly and golden and potatoes and apples are tender, approximately 15 minutes. Let stand 10 minutes before serving.
