5 pounds russet potatoes (about 8 medium russets)
1 1/2 cups real mayonnaise, plus more if needed
4 tablespoons yellow mustard, plus more if needed
5 whole green onions, sliced up to the darkest green part
2 tablespoons fresh dill, chopped
1 teaspoon kosher salt, plus more if needed
1/2 teaspoon fresh ground black pepper
1/2 teaspoon paprika
10 whole small sweet pickles, sliced
2 tablespoons pickle juice
6 whole hard boiled eggs, peeled and sliced

Steps:

  • Cut the potatoes in halves or thirds, then boil until fork tender. Drain. Mash the potatoes or run them through a ricer or food mill to make them extra fluffy.
  • Fold the potatoes together with the mayonnaise, mustard, green onions, dill, salt, pepper, paprika and other seasonings you like. Fold in the pickles, pickle juice and eggs, and taste for seasoning. Add more salt, mustard or mayo as needed.

3 pounds small white potatoes
Kosher salt
1 cup mayonnaise
1/4 cup buttermilk
2 tablespoons Dijon mustard
2 tablespoons whole-grain mustard
1/2 cup chopped fresh dill
Freshly ground black pepper
1/2 cup chopped celery
1/2 cup chopped red onion

Steps:

  • Place the potatoes and 2 tablespoons of salt in a large pot of water. Bring the water to a boil, then lower the heat and simmer for 10 to 15 minutes, until the potatoes are barely tender when pierced with a knife. Drain the potatoes in a colander, then place the colander with the potatoes over the empty pot and cover with a clean, dry kitchen towel. Allow the potatoes to steam for 15 to 20 minutes.
  • Meanwhile, in a small bowl, whisk together the mayonnaise, buttermilk, Dijon mustard, whole grain mustard, dill, 1 teaspoon of salt, and 1 teaspoon of pepper. Set aside.
  • When the potatoes are cool enough to handle, cut them in quarters or in half, depending on their size. Place the cut potatoes in a large bowl. While the potatoes are still warm, pour enough dressing over them to moisten. Add the celery and red onion, 2 teaspoons of salt and 1 teaspoon of pepper. Toss well, cover, and refrigerate for a few hours to allow the flavors to blend. Serve cold or at room temperature.

3 red potatoes
2 eggs
1 ½ cups creamy salad dressing

Steps:

  • Bring a small pot of salted water to a boil. Add potatoes; cook until tender but still firm, about 15 minutes. Drain and cool.
  • Place eggs in a saucepan, and cover completely with cold water. Bring water to a boil. Cover, remove from heat, and let eggs stand in hot water for 10 to 12 minutes. Remove from hot water, and cool.
  • Peel the eggs and cut around the egg white; keep the yolk whole.
  • Dice the egg whites and potatoes. Combine in a mixing bowl and add the salad dressing.
  • Toss the potatoes and egg; crumble the egg yolk on top and serve chilled.

3 pounds sweet potatoes, peeled and cut into 1/2-inch cubes
1 medium mango, peeled and cut into 1/2-inch cubes
1 medium red onion, thinly sliced
Cooking spray
1-1/2 tablespoons chili powder
1/4 teaspoon salt
1/4 teaspoon pepper
1/2 cup Miracle Whip
1/4 cup plain Greek yogurt
2 tablespoons thawed pineapple juice concentrate
2 serrano peppers, seeded and finely chopped, veins removed
Thinly sliced serrano pepper, optional

Steps:

  • Preheat oven to 350°. Place sweet potatoes, mango and onion in a single layer in 2 foil-lined 15x10x1-in. baking pans. Spritz with cooking spray; sprinkle with chili powder, salt and pepper. Bake, turning vegetables at least twice, until tender, 35-40 minutes; cool. Transfer to a large serving bowl., Combine Miracle Whip, yogurt, pineapple juice concentrate and serrano peppers. Fold into potato mixture. Refrigerate, covered, at least 1 hour. Serve cold. If desired, sprinkle with sliced serrano.

1/2 medium onion
2 eggs, whisked with
salt & pepper
1 tablespoon flour
1/2 teaspoon garlic powder

Steps:

  • Grate the onion on the large section of a box grater into a bowl to retain the onion juice.
  • Add the Simply Potato hash browns, Mix in the eggs, sprinkle 1 Tablespoon Flour and 1/2 Teaspoon Garlic Powder.
  • Drop 1 Heaping tablespoon Hash browns into medium hot skillet with 8 tablespoons of oil. Spread outward to create a cake about only 1/16" thickness-do not crowd skillet. Crisp the bottom about 3 minutes, flip and cook about 2 minutes.

1 tablespoon red wine vinegar

1 cup diced fresh pineapple
1 cup chopped and toasted macadamia nuts
3 green onions, chopped (optional)
1/4 cup flaked coconut, toasted

  • In blender, combine pineapple, red wine vinegar, oil, sugar, pepper and salt. Blend until pineapple is smooth and ingredients are incorporated.

1 lettuce or 1 other green salad
2 cups pineapple, crunches (fresh is best)
1/4 cup onion, sliced (if possible red onion)
1 lb tomatoes (cut into 1/2-inch cubes, or sliced or whole cherry tomatoes)
1/2 cup celery, green chopped or 1/2 cup celery, trimmed
1/2 cup plain nonfat yogurt
1/4 cup olive oil
1 lime, juice of
salt and pepper
1/2 cup peanuts, rough chopped (if possible fresh roated in the pan)

Steps:

  • Put all dressing ingredients in a blender or food processor and mix at low speed until thoroughly blended.
  • In a large, wide bowl, mix together salad greens, pineapple, onion, tomatoes and celery.
  • Stir dressing well just before using, and spoon over salads.
  • Top with peanuts and serve.
  • Note: you can add to the salad cooked chicken cubes and serve with bread to make a whole meal.

1 lemon, juice of
1 lime, juice of
2 ripe tomatoes
2 nectarines or 2 peaches
4 cups lettuce greens, approx
2 kiwi fruits
2 tablespoons unsalted dry roasted peanuts
3 tablespoons grated ginger
1/4 cup chopped basil leaves
1/4 cup fresh lime juice
3 tablespoons Thai fish sauce
3 tablespoons brown sugar
3 tablespoons no flavour cooking oil
1 chili, finely sliced

Steps:

  • Pit, peel and slice the avocados, squeeze on a little lemon or lime.
  • Thinly slice the tomatoes.
  • Peel the mangoes and cut the flesh from the pits in large sections and slice thinly.
  • Peel and slice the kiwi fruit.
  • Place the peanuts in a food processor and chop finely.
  • Combine the dressing ingredients.
  • In a large bowl put in all ingredients, pour over dressing, toss well.
  • Place on serving platter or dinner plates.
