1 teaspoon olive oil
1 medium yellow onion, diced
1 poblano pepper, diced
2 cloves garlic, minced
1 (32 ounce) container chicken broth
1 ½ pounds shredded cooked chicken breast
2 (15.5 ounce) cans no-salt-added navy beans, rinsed and drained
1 (10 ounce) package frozen corn
1 teaspoon ground cumin
½ teaspoon chili powder
½ teaspoon ground black pepper
salt to taste

Steps:

  • Preheat a deep skillet over medium heat. Add olive oil, then onion, poblano pepper, and garlic. Saute until onion is translucent, about 5 minutes. Add chicken broth, shredded chicken, navy beans, corn, cumin, chili powder, pepper, and salt; bring to a boil.
  • Reduce heat and simmer for 10 minutes.

A simple version of white chili that can be made on the stove top or in a slow cooker. This is our go-to chili for those chilly winter days. Cook on Low in a slow cooker for 4 hours if preferred. Serve with garlic cheese bread. Enjoy.

1 ¼ pounds ground turkey
1 tablespoon low-sodium chicken base (such as Better Than Bouillon®)
3 cups boiling water
3 (14.5 ounce) cans Great Northern beans, drained
1 (28 ounce) can green enchilada sauce
2 (4 ounce) cans diced green chiles, undrained
1 onion, chopped
1 tablespoon granulated garlic
¼ teaspoon ground cumin
2 teaspoons dried Mexican oregano
1 bunch fresh cilantro, finely chopped
1 onion, diced

Steps:

  • Crumble ground turkey into a Dutch oven over medium heat; cook and stir until turkey is browned, 10 to 15 minutes. Drain and discard any excess grease.
  • Stir chicken base and boiling water together in a bowl until base is dissolved; pour over cooked ground turkey. Add Great Northern beans, enchilada sauce, green chiles, chopped onion, granulated garlic, cumin, and oregano; stir well. Simmer until flavors have blended, about 1 hour. Spoon chili into bowls.
  • Combine cilantro and diced onion in a bowl; sprinkle over chili for serving.

1 (12 ounce) package vegetarian ground beef crumbles (such as MorningStar Farms® Recipe Crumbles®)
2 (14 ounce) cans great Northern beans, rinsed and drained, divided
1 cup beef broth
1 cup medium salsa
1 cup frozen corn kernels
4 ounces jalapeno pepper Cheddar cheese, cut into cubes
4 ounces Cheddar cheese, cut into cubes

Steps:

  • Stir crumbles, 1 can great Northern beans, vegetable broth, salsa, and corn together in a large pot over low heat.
  • Puree remaining can great Northern beans in a blender until smooth; stir with the mixture in the pot. Bring the mixture to a simmer and cook for 30 minutes.
  • Stir jalapeno pepper Cheddar cheese and Cheddar cheese into the chili; cook, stirring frequently, until the cheese is melted, 5 to 10 minutes more.

1 whole Fryer Chicken, Cut Up (or 3 Cups Cooked Chicken)
1 whole Medium Onion, Diced
4 cloves Garlic, Minced
2 whole Cans Green Chilies, Chopped
1 pound Dried Great Northern Beans, Rinsed
8 cups Chicken Broth
1 whole Jalapeno, Sliced
1-1/2 Tablespoon Ground Cumin
1/2 teaspoon Paprika
1/2 teaspoon Cayenne Pepper
Salt To Taste
White Pepper, To Taste
1 cup Whole Milk
2 Tablespoons Masa (corn Flour) OR Cornmeal
Grated Monterey Jack, To Taste
Sour Cream For Garnish
Cilantro For Garnish
Guacamole (optional)
Pico De Gallo (optional)
Corn Tortillas (warmed)

Steps:

  • Cover chicken and cook for 20 to 30 minutes or until done. Remove meat from bones. Set aside. In a dutch oven over medium-high heat, saute onions and garlic for 2 minutes. Add chopped green chilies, then rinsed beans. Pour chicken broth into the pan. Add sliced jalapenos. Season with salt, pepper, and cumin. Place lid on pot and reduce heat to low. Cook for 2 hours or until beans are done. Halfway through the cooking process, add 3 cups of cooked chicken. When beans are tender, mix milk with masa (or cornmeal) and pour into the chili. Cook for an additional ten minutes to thicken. Check seasoning and adjust, adding cayenne pepper and paprika if desired. Add some Monterey Jack cheese to the pot and stir to melt. Serve chili in a bowl. Garnish with cilantro, sour cream, extra cheese---even pico de gallo and guacamole, if you have some on hand. Roll up warm corn tortillas and serve on the side of the bowl.
