ONE-PAN SIMPLE SUMMER CHICKEN
Throw potatoes, courgettes and a whole garlic bulb in with chicken thighs then oven bake for a simple all-in-one supper

Steps:
- Heat oven to 220C/200C fan/gas 7. Pop the chicken, skin-side up, in a large roasting tin with the potatoes. Lightly crush the garlic cloves and nestle among the chicken pieces. Drizzle over the olive oil and chicken stock, then season. Squeeze over the juice from the lemon and pop the empty halves in the tin.
- Bake for 45-50 mins, adding the courgettes and chilli 15 mins before the cooking time is up. Remove from the oven when the chicken is cooked through and golden, and the veg is tender. Stir through the basil leaves and serve.

SIMPLE SUMMER CHICKEN
This is best made with organic chicken....the only chicken I serve to my family. The ones I buy are usually on the small side and cook more quickly than those plump monsters that are bought sealed in plastic. This is my classic kind of recipe - simple and tasty....the chicken is marinated AFTER cooking, rather than before. This is good served with steamed new potatoes, cole slaw and ice cold beer. Steps:
- Mix lime juice, olive oil, ginger, sugar and garlic in a large bowl; set aside.
- Rinse chicken pieces and pat dry; season with salt and pepper.
- Grill the chicken directly over a medium-hot fire on a gas or charcoal grill for about five minutes on each side; shift to indirect heat and continue cooking until done but moist, about another 10 minutes per side.
- Remove chicken from grill and place into bowl of marinade; let the grilled chicken absorb the fragrant juice for about 5 minutes, then serve.

SIMPLE SUMMER MARINATED CHICKEN

- Prepare salad dressing as directed on envelope. Pour over chicken in shallow dish or resealable plastic bag; turn over chicken to evenly coat both sides. Cover dish or seal bag.
- Refrigerate several hours or overnight to marinate. Drain chicken; discard marinade.
- Preheat greased grill to medium-high heat. Place chicken on grate of grill; cover grill with lid. Grill 35 to 40 min. or until chicken is cooked through, turning occasionally.

SIMPLE SUMMER CHICKEN SALAD
Chicken lettuce, dressing. Chicken salad really doesn't get more simple than this! And it's quick, too-ready to serve in 30 minutes.

- Slice the chicken breasts lengthwise so they are about a half-inch thick.
- Heat a frying pan on a medium-high heat with a bit of olive oil in it.
- Once the oil is hot, lay the slices of chicken in the pan and sauté for about four minutes, until it is brown on one side. While the meat is cooking, squeeze lemon juice on top of it. Season to taste.
- Flip the breasts once they are brown, and cook through on the other side. Squeeze more lemon juice on the meat as it cooks.
- Once the meat is cooked, transfer it to a cutting board and slice crosswise, into strips. Let cool a bit.
- Dress the salad, and distribute it into four bowls.
- Divide the slices of chicken breast among the bowls, and place the strips atop the greens. Enjoy!
