So-Simple Tuna-Pasta Casserole image

Convenient ready-to-go ingredients like frozen vegetables in garlic sauce plus canned potato soup and tuna make this the no-stress choice for a midweek meal.

1 bag (24 oz) frozen pasta, carrots, broccoli, sugar snap peas & garlic sauce
2 cans (5 oz each) tuna in water, drained, flaked
1 can (10 3/4 oz) condensed cream of potato soup
1/4 cup milk
1 cup soft bread crumbs (about 2 slices white bread)
2 tablespoons butter or margarine, melted

Steps:

  • Heat oven to 350°F. Spray 2-quart casserole with cooking spray.
  • In large microwavable bowl, place pasta-vegetable mixture. Cover with plastic wrap; microwave on High 9 to 11 minutes, stirring halfway through microwave time, until sauce chips are melted and vegetables are cooked. Stir in tuna, soup and milk. Pour into casserole.
  • In small bowl, toss topping ingredients. Sprinkle over tuna mixture.
  • Bake 25 to 30 minutes or until hot and topping is golden brown.

This should be called leftovers from the refregerator...LOL I made Italian style hot dogs yesterday and had some left over..plus some sauce in the pantry;and of course cheese 2 packages with a little in each;so this was a really good casserole for dinner..with garlic toast, tossed salad and French vanilla ice cream with fresh...

1 lb pkg. rotini pasta or your favorite
5 johnsonville mild sausage or spicy;cooked,diced
3 stalk(s) celery, diced
1/4 c diced onion
juice of one lime
1/2 c pizza cheese
24 oz can of your favorite pasta sauce
1 1/2 Tbsp italian seasoning
1 tsp garlic powder
6 oz can tomato paste
1 c colby chedder jack cheese
to taste salt and pepper

Steps:

  • 1. Preheat oven to 375^. Grease a 9x13 inch baking dish.Set aside. This is how I cooked the sausage the day before: I placed the sausage in my iron skillet covered them with water and cooked for 10 minutes. Drained the water off and then browned them on all sides until golden all around.Remove from pan and dice. Set aside.
  • 2. Chop or dice up the celery and onion. Cook pasta aldente..drain and put back into the pot.
  • 3. In a large bowl combine the tomato sauce,tomato paste, Italian seasoning, garlic powder,lime juice and salt and pepper to taste. Stir in the lime juice,1 can of water using the tomato paste can.Stir well to blend. A note here:Did you know that if you have a lime that is as hard as a rock it is still very juicy? Just be super careful when cutting it before you put it in the juicer.
  • 4. Add the sausage,celery and onion to the sauce , mix well and add the pasta. Pour into the prepared baking dish. Sprinkle the Colby Jack cheese over top.Bake for 25 to 30 minutes.Let set 5 minutes before serving.

A friend originally gave me this recipe, and it has been a staple ever since. Especially good when you want to take a meal to someone.

Number Of Ingredients 5

16 ounces penne pasta
10 ounces frozen chopped spinach
12 ounces shredded mozzarella cheese (3 cups)
5 cups spaghetti sauce (amount is flexible depending on how much sauce you like)
1 lb sausage (optional, I never use it) or 1 lb beef, browned and seasoned (optional, I never use it)

Steps:

  • Cook noodles as directed on package.
  • Defrost spinach and drain (you don't need to drain it well).
  • Mix cooked noodles, spinach, cheese, and spaghetti sauce, and meat, if used.
  • Spoon into baking dish (9 x 13).
  • Bake, covered at 350F until hot and cheese is melted.
