The sugar from the fresh orange juice cooks down with miso to create a vibrant and umami packed glaze which adds a lot of flavor to the earthy beets.

2 pounds medium beets (about 7), trimmed
3/4 cup fresh orange juice (from 2 to 3 oranges)
2 tablespoons white miso paste
2 1/2 teaspoons sugar
2 1/2 teaspoons soy sauce
4 1/4-inch-thick slices ginger
3 cloves garlic, smashed
Kosher salt
Sliced scallions, for topping

Steps:

  • Preheat the oven to 400˚ F. Put the beets in a large baking dish and add 1/3 cup water; cover the dish with foil. Roast, adding more water to the pan if needed, until the beets are easily pierced with a knife, 50 to 60 minutes. Uncover and let cool. Rub off the beet skins and cut the beets into 1/2-inch-thick wedges; transfer to a medium bowl.
  • Combine the orange juice, miso paste, sugar, soy sauce, ginger and garlic in a medium skillet over medium-high heat. Bring to a simmer and cook, stirring occasionally, until thickened and reduced to about 1/4 cup, 8 to 10 minutes. Strain through a fine-mesh sieve and pour over the beets. Season with salt and toss. Sprinkle with scallions.

10 medium beets, trimmed
2 Tbsp ghee or butter
1 c orange juice, fresh
1 c water, cold
salt to taste

  • 1. Cut the beets into quarters
  • 2. Put all ingredients in saucepan and bring to gentle boil. Continue cooking until sauce has reduced to a glaze and beets are tender--about 15-20 minutes.

1/2 cup orange juice
1/4 cup cider vinegar
3 tablespoons honey
1 teaspoon salt
1 tablespoon cornstarch
1 tablespoon cold water

Steps:

  • Mix all ingredients except cornstarch and water in 3 1/2- to 4-quart slow cooker.
  • Cover and cook on low heat setting 11 to 12 hours or until beets are tender.
  • Mix cornstarch and water; stir into beets. Cook uncovered on high heat setting 5 to 10 minutes or until sauce has thickened.

8 medium beets
3 tablespoons unsalted butter
2 teaspoons sugar
1/2 cup freshly squeezed orange juice
2 tablespoons grated orange peel, blanched
6 fresh sage leaves, chopped
Coarse salt and freshly ground pepper to taste

Steps:

  • Preheat the oven to 375 degrees. Put the beets on a pan and roast them for about an hour or until they are tender when pierced with a fork or skewer. Cool them slightly and slip off their skins. Cut the beets into one-inch cubes.
  • Melt the butter with the sugar. Add the orange juice and cook until you have a light glaze (about five minutes). Add the orange peel and the sage leaves. Put the beets into a serving dish and toss them with the glaze. Season them to taste with salt and pepper and serve.

2 pounds medium beets (about 8), peeled and cut into 1½-inch wedges
1 orange
One 12-ounce can Canada Dry Ginger Ale
2 tablespoons unsalted butter
Kosher salt and freshly ground black pepper
2 tablespoons pistachios
2 tablespoons chopped fresh chives

Steps:

  • Preheat the oven to 300°F. Place the beets in an 11-inch straight-sided skillet with a lid. Using a peeler, zest half the orange into the skillet. Juice the whole orange and add it to the skillet, along with the Canada Dry Ginger Ale, butter, 1 teaspoon salt, a few cranks of pepper and enough water to cover the beets. Bring to a boil over high heat, cover, reduce the heat to low and cook until the beets are tender when pierced with a knife, about 35 minutes. Meanwhile, place the pistachios on a baking sheet and toast in the oven until fragrant, about 9 minutes. Let cool and coarsely chop. Set aside. Uncover the beets, increase the heat to high and cook, stirring occasionally, until the sauce is thick and syrupy, 10 to 12 minutes. Spoon the beets into a serving dish, pour the sauce on top and sprinkle with the pistachios and chives.

8 medium beets (2 pounds)
2 teaspoons grated orange peel
2/3 cup orange juice
1/4 cup packed brown sugar
1/4 cup plus 2 tablespoons chopped fresh parsley
1 teaspoon chopped crystallized ginger or 1/2 teaspoon ground ginger

Steps:

  • Place steamer basket in 1/2 inch water in Dutch oven (water should not touch bottom of basket). Place beets in steamer basket. Cover tightly and heat to boiling; reduce heat to low. Steam 45 to 50 minutes (add boiling water during steaming if necessary) or until tender; drain.
  • Place beets back in Dutch oven (without steamer basket). Stir in orange peel, orange juice and brown sugar. Cook uncovered over medium-high heat 5 to 8 minutes, stirring frequently, until sauce is reduced and beets are glazed. Stir in parsley and ginger.

3 large beets, scrubbed
3 tablespoons brown sugar
3 tablespoons orange juice
1 tablespoon butter
1/2 tablespoon orange zest
1/2 teaspoon hot paprika

Steps:

  • In a large skillet, place steaming basket and add enough water to reach the bottom of the basket. Place beets and bring to a boil; cook until tender, about 15 to 25 minutes depending on their size.
  • Remove from the heat and submerge beet in a cold water bath. When they cool down enough ro handle, peel off the skin. Remove stem and tails; cut into bite-size pieces.
  • In a large skillet over medium heat, add sugar, orange juice, butter, orange zest and hot paprika. When sugar and butter are melted and mixture starts simmering, add beets. Cook until liquid is evaporated and beets are nicely glazed, about 10 minutes.
