SUPER SIMPLE OATMEAL RAISIN COOKIES

Cookies are pretty much the easiest thing you could bake up in pinch, but what makes these cookies even easier? Vanilla cake mix. These cookies were soft, chewy and not overly sweet, surprisingly. The cinnamon really cuts into the sweetness of the cake mix and balances out all the flavors.

2 cups vanilla cake mix
1/2 teaspoon ground cinnamon
3/4 cup rolled oats
3/4 cup raisins
1/2 cup shredded coconut
2 eggs
1/2 teaspoon pure vanilla
1/2 cup vegetable oil
3 tablespoons whole milk

Steps:

  • 1. Preheat oven to 350 degrees F. In a large bowl, whisk together all the dry ingredients. Then add all the wet ingredients. Stir until a thick, sticky cookie dough forms. On an ungreased cookie sheet, drop a tablespoonful of dough leaving about an inch of space between each. Bake for about 12 minutes or until the edges are slightly golden. Transfer immediately to a cooling rack. Try to let cool completely and enjoy with some warm milk or tea!

These are some cookies that I made for my SIL when she was having issues with fibre in her diet. She was encouraged to have oatmeal and so I tried to find her a "good" oatmeal cookie. This was attempt number two. This recipe is adapted from The Fannie Farmer Cookbook. I have included two versions of a great cookie. When I make the cowboy cookies, I make them BIG.

Number Of Ingredients 13

1 1/2 cups flour
1/2 teaspoon baking soda
1 teaspoon cinnamon
1/2 teaspoon salt
1 egg, slightly beaten
1 cup sugar
1/2 cup shortening, melted (can use butter)
1 tablespoon molasses
1/4 cup milk
1 3/4 cups oatmeal, uncooked
1/2 cup raisins
3/4 cup sweetened coconut, flaked (reduce oatmeal by 1/4 cup) or 3/4 cup sweetened coconut, shredded (reduce oatmeal by 1/4 cup)
1/2 cup chocolate chips

Steps:

  • Preheat oven to 350°.
  • To make Simple Oatmeal Cookies: Mix the flour, baking soda, cinnamon and salt together in a large bowl.
  • Stir in the remaining ingredients.
  • Arrange by teaspoonfuls on unbuttered cookie sheets. Leave about 1 inch in between. They do spread a wee bit. Not too much though.
  • Bake until the edges are brown, about 10-12 minutes.
  • For Cowboy Cookies: Add in coconut and chocolate chips when you add in the rest of the ingredients (Step 3). Drop them by the FULL tablespoon on a cookie sheet. (Might have to "squish" them a bit) Bake for 14-17 minutes or until mostly brown.

3 cups packed brown sugar
3 cups all-purpose flour
1 tablespoon baking soda
6 cups quick-cooking oats
1/2 cup sugar

Steps:

  • In a large bowl, cream butter and brown sugar. Combine flour and baking soda; gradually add to creamed mixture. Transfer to a large bowl; knead in oats. , Shape into 1-1/2-in. balls, then roll in sugar. Place 2 in. apart on ungreased baking sheets. Flatten with a glass. Bake at 350° for 10-12 minutes or until golden brown. Remove to wire racks to cool.

A friend shared this recipe with me many years ago and we think they are simply good! My family has never tired of them. They are a thin soft cookie that stores well. Makes about 3 dozen.

2 eggs
1 cup brown sugar
1/2 cup white sugar
1 cup oil (canola or vegetable)
1 teaspoon vanilla
1 teaspoon baking soda
1 tablespoon hot water
2 cups rolled oats
1 3/4 cups all-purpose flour
1 teaspoon salt
1 teaspoon cinnamon

Steps:

  • Preheat oven to 350.
  • In a large bowl beat eggs until frothy, beat in sugars.
  • Add oil and vanilla.
  • Dissolve baking soda in hot water and stir into egg mixture.
  • In a seperate bowl mix oats, flour, salt and cinnamon.
  • Stir oats mixture into egg mixture, mix well.
  • Drop by teaspoons onto greased baking sheet.
  • Let cool for a few minutes before removing.
  • Bake for 8 minutes.
