1 (16 ounce) package macaroni
2 red bell peppers, chopped
1 green bell pepper, chopped
½ cup chopped green onions
1 stalk celery, chopped
1 tablespoon olive oil
1 cup mayonnaise
1 packet dry vegetable soup mix

Steps:

  • Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes, or until al dente. Drain, and rinse with cold water until no longer hot. Transfer noodles to a large bowl.
  • Stir in red bell peppers, green bell peppers, green onions, celery and olive oil. Mix in mayonnaise and soup mix. Refrigerate for a few hours before serving.

This is a very basic pasta salad, easily fixed up by adding extra vegetables or some chopped salami.

2 cups macaroni
2 eggs
2 tablespoons chopped dill pickles
¾ cup chopped celery
2 tablespoons thinly sliced green onion
¾ cup fat free Italian-style dressing
salt and pepper to taste

Steps:

  • In a pot of salted boiling water, cook pasta until al dente, rinse under cold water and drain.
  • Place eggs in a saucepan and cover with cold water. Bring water to a boil; cover, remove from heat, and let eggs stand in hot water for 10 to 12 minutes. Remove from hot water, cool, peel and chop.
  • In a large bowl, combine the pasta, eggs, pickles, celery and green onions. Pour dressing over salad and toss to coat. Season with salt and pepper to taste; serve chilled.

1 cup uncooked elbow macaroni
1 stalk celery, chopped
1 (2 1/4 ounce) can chopped green olives
1/4 cup mayonnaise
1/4 cup sour cream
2 tablespoons milk
1 (10 ounce) can chicken, drained
1 (1 ounce) package dry ranch dressing mix
2 teaspoons paprika

Steps:

  • Boil macaroni until tender, drain and pat dry.
  • In a med bowl, mix together the celery, olives,mayo, sour cream, milk, chicken and ranch dressing mix. Stir in the macaroni until well blended. Refrigerate for 24 hours. Stir and sprinkle paprika over the top before serving.

LITTLE MOMMA'S SIMPLE MACARONI SALAD

My little Momma doesn't cook to many things but there are a few items that she does that Dad & all of us like very much & pasta salad is one of them. Usually Dad is doing all the cooking at home. We all love my Mom's pasta salad and so I finally asked her for the recipe. Now, when she gets home I'm going to her house and watch her make this and take some pics as well. I'm trying to get a few recipes from her so that I have them and then I will work with Dad for his homemade recipes. I'll do better watching him because he is always putting in a shake of this and a shake of that.

1 pound(s) macaroni, dry
1 1/2 cup(s) carrots, chopped, matchstik or julienned
1 1/2 cup(s) celery, sliced fine
1 cup(s) green peppers, sliced fine
4 - 6 medium green onions, sliced very thin
1 cup(s) gherkins, diced or chopped
6-8 large eggs, hard boiled, sliced both ways
1 can(s) black olives, sliced (optional)
DRESSING IN A SHAKER
20 ounce(s) mayonnaise dressing
1 cup(s) milk, whole
2 - 3 tablespoon(s) mustard, yellow
1 - 2 tablespoon(s) sugar
- salt & pepper
1/2 DRESSING RECIPE
10 ounce(s) mayo
1/2 cup(s) whole milk
1 1/2 tablespoon(s) mustard
1 1/2 teaspoon(s) sugar
- salt & pepper

Steps:

  • Cook up your 6 to 8 large eggs. Peel, rinse and let cool.
  • Cook up your pasta as directed and make sure it's al dente or just a minute before...as the sauce soaks into the noodle it will finish getting to the texture you want. Then, rinse well in cold water, drain and then add to a large bowl to cool. Stir the noodles in bowl so they aren't sticking to one another.
  • Chop up all your veggies thinly sliced and set aside.
  • Slice your eggs side-ways and then long-ways so they are chopped evenly.
  • Now this is where my little Momma insists on being an important part of making her pasta salad or any salad that she puts dressing on. She always puts all these ingredients in a shaker and mixes them well. So, this will be your mayo, milk, sugar, salt & pepper. (IF YOU KNOW YOU LOVE YOUR MACARONI CREAMY MAKE THE WHOLE JAR.) --- It would be a 30 oz. jar of mayo, 1 1/2 cups of milk, 1 1/2 tbsp of sugar, salt & pepper to your taste.
  • Once you have your salad dressing made pour it on your noodles and toss them. Now it's time to add your carrots, celery, green pepper, green onion and pickle relish. Mix well. ---- (Now my Mom said at this point she refrigerates the salad for several hours or even overnight as it makes the salad better. Now, she also said she makes another smaller batch of dressing to add before serving so you can mix that up refrigerate.)
  • Take our your salad and toss, taste and decide if you are putting more dressing. Then, add more dressing and mix well. You can add a thinly sliced green onion to the top with a little shake of pepper or put a hard boiled sliced egg on top with some paprika to dress the salad. Either way looks great! Time to eat.

Mom would make this for our summer cookouts. We loved it! Dad would work the grill, flipping those hamburgers and hot dogs. We would sit in the shade of the oak tree, our picnic table set with a checkered cloth and bowls of assorted salads.

2 c elbow macaroni
1/4 c finely chopped onion
1/4 c diced bell pepper
1 c miracle whip dressing (not mayonnaise)
1/4 tsp celery seed
1 pinch salt and pepper

Steps:

  • 1. In a large pot bring 3 qts. of water to a boil. Add the macaroni and cook as directed. When done, drain and rinse with cool water. Drain again.
  • 2. Chop onion and bell pepper. Place in bottom of large bowl.
  • 3. Add cooked pasta to bowl. Add dressing. Stir to combine. Sprinkle with celery seed, salt and pepper and stir again. Chill at least one hour before serving.
