I use pre-made or prepared pesto. Pesto concentrate also works great. Very simple and really tasty sauce. Great over pasta, veggies, and chicken. Enjoy!

2 tablespoons butter
1 cup heavy whipping cream
1 tablespoon all-purpose flour
1 teaspoon salt
½ teaspoon ground black pepper
3 tablespoons sour cream
3 tablespoons pesto, or more to taste

Steps:

  • Melt butter in a saucepan over medium heat. Stir in heavy cream. Add flour and mix well to remove clumps. Season with salt and pepper.
  • Stir sour cream and pesto into the saucepan. Reduce heat to medium-low; simmer, stirring, until flavors combine, 2 to 3 minutes more.

½ (16 ounce) box dry fettuccine pasta
¼ cup butter, or to taste
3 tablespoons minced garlic
¼ cup pesto

Steps:

  • Bring a pot of lightly salted water to a rolling boil; cook the fettuccini at a boil until cooked through yet firm to the bite, about 8 minutes; drain. Transfer the fettuccini to a bowl.
  • Melt the butter in a saucepan over medium heat. Cook the garlic and pesto in the melted butter until warmed, 2 to 3 minutes; pour over the fettuccini and toss to coat.

2 tablespoons butter
100 g mushrooms, sliced
60 g prosciutto or 60 g ham, chopped
2 tablespoons pesto sauce
500 g penne pasta
2 tablespoons butter
2 garlic cloves, minced
2 tablespoons flour
3/4 cup chicken stock
3/4 cup milk
salt and pepper, to taste
1/3 cup grated cheese (cheddar, parmesan, whatever takes your fancy)

Steps:

  • Put pasta on to boil.
  • While the pasta is cooking, melt the first lot of butter and saute mushrooms, garlic and proscuitto (or ham). Remove from pan, keep warm.
  • Melt second lot of butter. Add flour and cook 1 minute, stirring constantly.
  • Stir in stock and milk and cook, stirring frequently, until sauce thickens.
  • Add the mushrooms, proscuitto and cheese.
  • Stir until cheese is melted.
  • Add the pesto, salt and pepper.
  • Toss hot pasta with sauce and serve immediately.

4 cups fresh basil
2 cloves garlic
½ cup pine nuts
¾ cup grated parmesan cheese, grated
¾ cup olive oil
¼ cup cold water
½ cup heavy cream
1 teaspoon salt
½ teaspoon pepper
12 oz fusilli pasta, al dente
1 cup cherry tomato, halved
1 cup grated parmesan cheese
8 oz mozzarella ball

Steps:

  • To make the pesto, mix basil, garlic, pine nuts, parmesan, cold water, heavy cream, salt, and pepper in a food processor for about 30 seconds. Add in olive oil. Process until combined, set aside.
  • Cook fusilli to very al dente, or about 3-4 minutes before the package instructs for cook time, then drain pasta.
  • Halve cherry tomatoes.
  • In a skillet or casserole pan, mix fusilli, cherry tomatoes, and pesto.
  • Top with grated parmesan and mozzarella balls.
  • Bake at 400° Fahrenheit for 10-15 minutes, or until mozzarella has melted.
  • Garnish with additional parmesan and fresh basil. Serve immediately.

5 garlic cloves, minced
1 teaspoon butter or 1 teaspoon olive oil
1 (8 ounce) package neufchatel cheese
3/4 cup chicken broth

1 cup fresh basil leaf, chopped

  • Cook pasta in about 3 quarts boiling water until just barely tender to bite, 7 to 9 minutes. Drain.
