  • mix all ingredients in a bowl with spoon or pastry blender.
  • roll dough into balls.

  • bake at 350 degrees for 10-12 minute.

1 cup Peanut butter
1 cup Sugar
1 egg

Steps:

  • Combine peanut butter, sugar and egg in a bowl.
  • Using a melon baller or small spoon, scoop small balls of dough onto non-stick baking sheet or parchment paper.
  • Flatten slightly with a fork and crosshatch pattern on top.
  • Bake at 325 F for 14 minutes or until slightly browned.
  • Cool on rack.

Very simple peanut butter cookies with added peanuts for extra peanutty flavor. No butter and the cookies are soft, not crispy.

1/2 cup raw peanuts, broken up and roasted in the oven
1 cup flour
1/2 teaspoon baking soda
1 egg
1 cup brown sugar
1/4 cup milk (or milk-like product of your choice e.g. soy beverage, etc.)
1 cup crunchy peanut butter

Steps:

  • preheat oven to 350 degrees.
  • Break-up peanuts (I use a rolling pin and a plastic bag) and roast them on a cookie sheet in the oven for 8 minutes or so, stirring a couple of times. Be careful, they are easy to burn. Set aside.
  • Mix with fork in a bowl:.
  • 1 cup flour and 1/2 teaspoon baking soda.
  • Mix in another bowl: 1 egg, 1 cup brown sugar, 1/4 cup milk (or whatever) then add 1 cup crunchy peanut butter and mix.
  • Add roasted peanuts and optionally 1/2 cup dark chocolate chips -- if you use these you might want to add another 1/8 cup sugar.
  • Mix the flour and egg mixtures together. Use a spoon to make balls and roll them between your palms to get them smooth and flatten them on a greased cookie sheet with a fork. Or, if you don't use chocolate chips you can push a large chocolate wafer-drop into the center of the ball to flatten it.
  • Bake 12 at a time as close to the center of the cookie sheet as you can, keeping away from the edges where the heat wraps around. Bake about 10 minutes (depending on your oven) and cool on a rack.

So simple to make and so yummy. The dough will quite happily sit in the fridge for a week, so you can bake off as much as you want when you want.

6 ounces unsalted butter (diced at room temp)
3 1/2 ounces caster sugar
9 ounces plain flour
demerara sugar, for coating

Steps:

  • Put butter and sugar together in a bowl and beat until light and fluffy. Add flour and using your hands, gradually work it until the mixture forms a smooth dough. Roll into a sausage shape about 30cm long. Pat the sides to form either a square or a triangular log.
  • Sprinkle a thick layer of demerara sugar on a piece of baking parchment. Press each side of the dough into the sugar to coat it.
  • Wrap in cling film and chill in the fridge for 30 minutes until firm.
  • When ready to bake, preheat oven to Gas 3. Remove dough from cling film and cut into thick slices. Place slightly apart on a non-stick baking tray. Bake for 20 minutes, until they are just starting to brown.
