1 teaspoon baking soda
½ teaspoon salt
½ teaspoon cinnamon
⅔ cup sugar
¼ cup butter
¼ cup shortening
2 eggs
1 cup mashed bananas (about 3 medium)
⅔ cup pecans (or walnuts, chopped)
1 tablespoon flour
2 tablespoons pecans
1 teaspoon sugar
1 teaspoon butter
⅛ teaspoon cinnamon

Steps:

  • Preheat oven to 350°F. Grease and flour (or line with parchment paper) an 8x4 loaf pan.
  • Combine flour, baking soda, salt, and cinnamon in a small bowl. Whisk to combine.
  • With a hand mixer on medium, combine sugar, butter and shortening in a medium bowl until fluffy. Add eggs and mix well. Stir in mashed bananas.
  • Add dry ingredients and mix just until combined. Toss nuts with remaining tablespoon of flour and fold into batter.
  • Pour into prepared loaf pan and top with topping. Combine topping ingredient and sprinkle over loaf.
  • Bake 55-65 minutes or until a toothpick comes out clean. Do not overbake.
  • Cool in the pan 5 minutes. Remove from pan and cool completely on a rack.

8 Tablespoons Unsalted Butter ((softened) - 115 grams)
2 Eggs ((large))
3 Bananas ((ripe & large sized) - 345 grams - Roughly 1 1/2 cups of mashed bananas)
2 Cups Flour ((all purpose flour) - 240 grams)
1 Cup White Granulated Sugar (- 200 grams)
1 Cup Chopped Walnuts (- 115 grams - 3/4 cup for inside the batter and 1/4 cup sprinkled on top of the batter)
1 Teaspoon Vanilla Extract (- 5 milliliters)
1 Teaspoon Baking Soda (- 5 milliliters)
1 Teaspoon Baking Powder ((aluminum free) - 5 milliliters)
1/2 Teaspoon Salt (- 2.5 milliliters)

Steps:

  • Preheat oven to 325 degrees F.
  • Mash bananas with a fork.
  • Soften butter in a microwave.
  • Stir eggs, bananas and butter together.
  • Mix in remaining ingredients (except the chopped walnuts). Stir until the batter is fully mixed.
  • Add 3/4 cup of chopped walnuts to the batter (and save the remaining 1/4 cup of chopped walnuts for later). Make sure the chopped walnuts are evenly spread throughout the batter.
  • Pour finished batter into a nonstick bread pan. Smooth out the top of the batter within the bread pan.
  • Sprinkle the remaining 1/4 cup of chopped walnuts on top of the batter before placing into the oven.
  • Bake in the oven for 65-70 minutes.
  • Take out of oven and let the banana bread cool down in the bread pan for 10 minutes. Do not remove the banana bread from the bread pan during this 10 minute cool down period. Use oven mitts as the bread pan will be very hot coming out of the oven.
  • After 10 minutes, remove the banana bread from the bread pan. Place the banana bread on a cooling rack in order to completely cool. This cool down may take 1-2 hours. Gently slide a silicon spatula between the banana bread and the bread pan walls if the banana bread is stuck in the pan.

  • Sift the flour, baking soda, and salt into a medium bowl, set aside. Whisk the eggs and vanilla together in a liquid measuring cup with a spout, set aside. Lightly brush a 9 by 5 by 3-inch loaf pan with butter. Preheat the oven to 350 degrees F.
  • In a standing mixer fitted with the paddle attachment or with an electric hand-held mixer, cream the butter and sugar until light and fluffy. I got this recipe when I was 12 and have used it for the past 33 years and haven't found one better! My son used it when he was 12 at the California State Fair and won a first place ribbon with it. It is just simply delicious & moist. I either make a loaf or put it into muffin cups & make muffins for my kids to grab in the morning on their way to school. Using margarine makes the muffins come out in a better form, but the butter has a better flavor, so I usually use 1/2 of each to get the best of both worlds.

  • *Note- I usually use a smaller bread pan to make the 2 loaves, or use a larger one and just make 1 big loaf, but it will need to bake longer. I adjusted the time because people had been saying it was over baking, now people are saying it's under baked. I would use the old fashion test of a tooth pick at 45 min, then at 1 hour -- up to 1 hour & 30 min if needed. Hope that helps!
