1 lb ground beef
1 onion, chopped
1 green bell pepper, chopped
1 (6 ounce) can tomato paste
1 (8 ounce) can tomato sauce
3/4 cup water
1/2 teaspoon dried Italian seasoning
2 cups elbow macaroni
8 ounces cream cheese, cubed
3/4 cup milk
1/3 cup sour cream
3/4 cup grated parmesan cheese, divided

Steps:

  • Preheat oven to 350 degrees. Brown ground beef, onion and pepper in saucepan. Cook until beef is done. Drain well.
  • Add tomato paste, tomato sauce, water, and dried Italian seasoning and stir well to blend.
  • Let simmer for 10 minutes.
  • Meanwhile, cook elbow macaroni as directed on package. While macaroni is cooking, combine cream cheese and milk in medium bowl. Cook in microwave on medium power for 2-3 minutes, stirring once halfway through cooking. Remove from microwave and stir with wire whisk until sauce is smooth.
  • Drain noodles and add to cream cheese sauce along with sour cream and 1/2 cup Parmesan cheese; stir.
  • In 2 quart casserole dish, place all of cream cheese mixture. Top with all of the ground beef mixture and sprinkle with remaining 1/4 cup Parmesan cheese.
  • Bake at 350 degrees for 20-30 minutes until casserole is bubbly.
  • To freeze, add 1 tablespoons cornstarch to the cream cheese sauce. Prepare casserole as directed, except instead of baking, chill in refrigerator. Wrap well and freeze up to 3 months.
  • To thaw and reheat, thaw casserole overnight in refrigerator.
  • Bake, covered, for 25-35 minutes 5 minutes longer until bubbly.

2 cups uncooked egg noodles
1 pound ground beef
1/2 cup chopped onion
1/4 cup chopped green pepper
1 can (6 ounces) tomato paste
3/4 cup water
1-1/2 teaspoons sugar, divided
1/2 teaspoon salt
1/2 teaspoon dried basil
1/4 teaspoon garlic powder
1/4 teaspoon chili powder
1/4 teaspoon pepper, divided
1 tablespoon finely chopped green onion
1 tablespoon olive oil
1 package (8 ounces) cream cheese, cubed
3/4 cup milk
1/3 cup plus 2 tablespoons grated Parmesan cheese, divided

Steps:

  • Preheat oven to 350°. Cook noodles according to package directions. , Meanwhile, in a large skillet, cook beef, onion and green pepper over medium heat until meat is no longer pink; drain. Stir in tomato paste, water, 1 teaspoon sugar, salt, basil, garlic powder, chili powder and 1/8 teaspoon pepper., In a large saucepan, saute green onion in oil until tender. Add cream cheese and milk; stir until blended. Stir in 1/3 cup cheese, and remaining sugar and pepper. Drain noodles; stir into cheese mixture., In a greased 8-in. square baking dish, arrange alternate rows of beef and noodle mixtures. Sprinkle with remaining cheese. Cover and bake 20-25 minutes or until bubbly.

This is the first OAMC meal that I attempted. I don't remember where I got the recipe from but it remains one of my favorites. It's simple and delicious.

1 lb ground beef
1 onion, chopped
2 garlic cloves, minced
15 ounces spaghetti sauce
2 cups elbow macaroni
8 ounces cream cheese, cubed
3/4 cup milk
1/2 cup sour cream
1 green bell pepper, chopped
1/2 cup parmesan cheese, grated
1/4 cup parmesan cheese, grated

Steps:

  • Brown ground beef and onion, drain.
  • Add spaghetti sauce and let simmer 10 minutes.
  • Cook elbow macaroni according to package.
  • Mix cream cheese and milk in medium bowl and microwave on medium for 2-3 minutes. After microwaving, stir with wire whisk until blended.
  • Drain noodles and add to cream cheese mixture. Stir in sour cream, green pepper and parmesan cheese.
  • Mix together meat and cream cheese mixture in 2 qt casserole dish or freezer bag and freeze up to 3 months.
  • To serve, thaw overnight in refrigerator. Bake, covered at 350 degrees for 25-30 minutes until hot. Uncover, sprinkle with Parmesan cheese and bake 5-10 more minutes.

1 (16 ounce) package mostaccioli pasta
1 1/2 lbs ground beef
1 1/4 cups chopped green peppers
1 cup chopped onion
1 (26 ounce) jar spaghetti sauce
1 (10 3/4 ounce) can condensed cheddar cheese soup, undiluted
1 1/2 teaspoons italian seasoning
3/4 teaspoon pepper
2 cups shredded part-skim mozzarella cheese, divided

Steps:

  • Cook mostaccioli according to package directions. Meanwhile, in a large skillet, cook the beef, green pepper and onion over medium heat until meat is no longer pink; drain. Stir in the spaghetti sauce, soup, Italian seasoning and pepper.
  • Drain mostaccioli. Add mostaccioli and 1 1/2 cups cheese to beef mixture. Transfer to two greased 11 x 7 inch baking dishes. Sprinkle with remaining cheese. Cover and freeze one casserole for up to 3 months. Cover and bake the remaining casserole at 350 degrees for 20 minutes. Uncover; bake 5-10 minutes longer or until bubbly and cheese is melted.
  • To use frozen casserole: Thaw in the refrigerator overnight. Remove from the refrigerator 30 minutes before baking. Cover and bake at 350 degrees for 50-60 minutes or until heated through and cheese is melted.
  • Each casserole serves 6.

WESTERN CASSEROLE (OAMC)

This is the easiest dish in the west to make! I buy my ground beef in bulk, then mix in seasonings before I freeze it- so I've always got seasoned ground beef ready to go for this recipe. This is great either with chips, as a casserole, or searved in tortillas. I always top mine with sour cream. Perfect for football parties. For my OAMC I just put all the ingredients expect the extra 1/2 cup cheese in a 1 gallon zip-loc bag, squish to mix, and freeze.

1/2 cup onion, chopped
3 stalks celery
1/2 teaspoon poultry seasoning
1/2 cup margarine
2 cups chicken, chopped
1 cup cashews
1 (10 3/4 ounce) can cream of mushroom soup
3 cups chow mein noodles

Steps:

  • Freezing: Saute onion, celery, and poultry seasoning in butter.
  • Mix in the chicken and cream of mushroom soup.
  • Bag the mixture in a gallon bag.
  • Bag the cashews.
  • Bag the chow mein noodles.
  • Put all in a produce bag.
  • Preparation: Thaw.
  • Spray the bottom of a casserole pan with a non-stick spray.
  • Next, mix the chicken mixture and cashews together, then spread in the bottom of the greased casserole pan.
  • Top with chow mein noodles.
  • Bake in a 350° oven for 30 minutes, or until bubbly.
