DOUBLE DOUBLE BACON CHEESE QUICHE



Double Double Bacon Cheese Quiche image

1 1/3 cups all-purpose flour
1/8 teaspoon salt
1/2 cup (1 stick) chilled butter, cut into small pieces
2 to 3 tablespoons cold water
10 strips bacon
4 large eggs
1 1/2 cups light cream
1/4 teaspoon dried thyme
1/8 teaspoon white pepper
1/2 cup shredded Gruyere cheese (about 2 ounces)
1/2 cup shredded white Cheddar cheese (about 2 ounces)

Steps:

  • Preheat oven to 375 degrees F.
  • To prepare the crust: In a large bowl, mix together the flour and the salt. Using 2 knives, cut in the butter until coarse crumbs form. Add water, 1 tablespoon at a time, tossing with a fork, until dough forms. Shape into a disk, wrap in plastic wrap and chill in refrigerator for 30 minutes. Lightly flour counter and rolling pin and roll into about a 10 or 11-inch circle. Fit into a 9-inch pie pan. Trim edge, leaving 1/4-inch overhang. Prick dough with a fork. Line with foil and fill with dried beans. Bake for 10 minutes. Remove the foil and dried beans. Bake until lightly golden, about 5 minutes more. Transfer to wire rack to cool.
  • To prepare the filling: In a medium skillet cook the bacon over medium heat until crisp, 8 to 10 minutes. Crumble bacon. Transfer to a paper towel to drain. In a small bowl whisk together the eggs, cream, thyme and pepper. Pour into the crust. Sprinkle egg mixture with bacon and cheeses. Bake until golden and custard is set, about 30 minutes.

DILL DIP IN A BREAD BOWL

1 cup mayonnaise
1 cup sour cream
1 garlic clove, minced
1 tablespoon dill weed
1 tablespoon shallot, minced
1 tablespoon minced fresh parsley leaves
1 tablespoon beau monde (seasoning salt), optional
2 round bread loaves (preferably a dill/onion bread)

Steps:

  • Mix all of the ingredients together in a medium bowl. Cut out the center of 1 bread round and mound dill dip into the interior cavity of the bread bowl. Cut up other bread round into 2-inch squares and dip bread into bowl.

4 slices of thick cut wheat bread
4 large eggs
4 vineripened tomatoes, sliced
1 medium red onion, sliced thin
12 slices smoked salmon
1 cup clarified butter
1-ounce olive oil
1-ounce red wine vinegar

Steps:

  • Take each slice of bread and remove a hole two inches in diameter from the center. A jelly jar lid works very well as a quick discard for the center. Using a pancake griddle or a large teflon pan, heat one ounce of clarified butter over medium heat. Toast each slice of bread on one side for three minutes. As you flip each slice of bread, carefully crack an egg through the hole and saute the egg inside. When the egg sets on one side, but the yolk is still soft, turn the toast over, careful not to crack the yolk. Saute for an additional two minutes. While the eggs are cooking, in a mixing bowl season tomato slices and shaved onions with olive oil, red wine vinegar, salt and pepper. For the presentation, stack tomatoes and onions in one corner of the plate. Lean the frog in the hole against the tomatoes and garnish with a rosette of three slices of smoked salmon.

Oil spray
1 large can refrigerator biscuits
2 cups Monterey jack cheese, shredded
2 green onions, chopped
1 cup mayonnaise
1 pound small shrimp, cooked
1 teaspoon fresh dill, chopped

Steps:

  • Heat oven to 350 degrees F. Spray miniature muffin tin with oil spray. Split each biscuit in half and place in muffin tin, pressing into the bottom.
  • Mix next 5 ingredients together in medium bowl and place 1 tablespoon of shrimp mixture in biscuit dough. Bake for 15 minutes or until golden and bubbling.
