1 (16 ounce) package linguine pasta
2 tablespoons butter
2 tablespoons extra-virgin olive oil
2 shallots, finely diced
2 cloves garlic, minced
1 pinch red pepper flakes
1 pound shrimp, peeled and deveined
1 pinch kosher salt and freshly ground pepper
½ cup dry white wine
1 lemon, juiced
2 tablespoons butter
2 tablespoons extra-virgin olive oil
¼ cup finely chopped fresh parsley leaves
1 teaspoon extra-virgin olive oil, or to taste

Steps:

  • Bring a large pot of salted water to a boil; cook linguine in boiling water until nearly tender, 6 to 8 minutes. Drain.
  • Melt 2 tablespoons butter with 2 tablespoons olive oil in a large skillet over medium heat. Cook and stir shallots, garlic, and red pepper flakes in the hot butter and oil until shallots are translucent, 3 to 4 minutes. Season shrimp with kosher salt and black pepper; add to the skillet and cook until pink, stirring occasionally, 2 to 3 minutes. Remove shrimp from skillet and keep warm.
  • Pour white wine and lemon juice into skillet and bring to a boil while scraping the browned bits of food off of the bottom of the skillet with a wooden spoon. Melt 2 tablespoons butter in skillet, stir 2 tablespoons olive oil into butter mixture, and bring to a simmer. Toss linguine, shrimp, and parsley in the butter mixture until coated; season with salt and black pepper. Drizzle with 1 teaspoon olive oil to serve.

6 tablespoons olive oil, divided
1 small spaghetti squash, halved and seeded
salt and ground black pepper to taste
4 cloves garlic, minced
1 pound uncooked medium shrimp, peeled and deveined
1 pinch red pepper flakes, or to taste
1 lemon, juiced
½ lemon, zested
2 tablespoons chopped fresh parsley

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a baking sheet with 2 tablespoons olive oil. Season spaghetti squash with salt and pepper and place cut side down on the baking sheet.
  • Bake in the preheated oven until easily pierced with a fork, about 40 minutes. Remove from oven and cool until easily handled. Scrape insides of squash into spaghetti strands with a fork.
  • Heat 4 tablespoons olive oil in a large skillet over medium-high heat and cook garlic until fragrant, about 2 minutes. Add shrimp and season with salt, black pepper, and red pepper flakes. Saute shrimp until pink, tossing often to prevent burning, about 5 minutes. Remove from heat and add spaghetti squash strands. Mix in lemon juice and zest. Serve sprinkled with parsley.

6 ounces multi-grain spaghetti
1/4 cup multi-grain croutons, crushed
1/4 cup chopped fresh flat-leaf parsley
1 1/2 tablespoons grated lemon zest
1 tablespoon olive oil
1 shallot, thinly sliced
1 garlic clove, minced
1/4 teaspoon crushed red pepper
3/4 pound large shrimp, shelled and deveined (about 16 large shrimp, 21 to 25 count)
1/4 teaspoon salt
1/4 cup low-sodium chicken broth
1/4 dry white wine
1 tablespoon lemon juice
6 black pitted and chopped olives such as Kalamata (about 1 tablespoon)

Steps:

  • Cook the spaghetti according to package directions. Drain; set aside.
  • Meanwhile, combine the croutons, 1/2 tablespoon of the parsley, and 1 tablespoon of the zest in a small bowl; set aside.
  • Heat the oil in a large nonstick skillet over medium heat. Add the shallot, garlic, and red pepper. Cook, stirring until the shallots are soft, about 1 minute. Add the shrimp and the salt, and cook, over medium-high heat, turning occasionally, until the shrimp are opaque, 1 to 2 minutes. Stir in the broth, wine, lemon juice, and olives. Bring to a boil and cook for 1 minute, then reduce the heat to medium. Stir in the spaghetti, the remaining 3 tablespoons parsley, and the remaining 1/2 tablespoon zest, tossing to coat well; remove from the heat.
  • Transfer to a large bowl. Sprinkle with the crouton mixture. Serve at once.

1 pound dry pasta (I'm using spaghetti)
1/4 cup olive oil
1 stick (8 tablespoons) unsalted butter
12 cloves garlic, sliced
2 pounds shrimp, peeled and deveined
1 cup liquid (I'm using white wine)
2 lemons, juiced
2 tablespoons chile flakes, optional
2 tablespoons chopped fresh parsley, optional

Steps:

  • Bring a pot of water to a boil and add 2 tablespoons salt . Add the spaghetti, give it a stir and cook until al dente according to the package instructions.
  • Meanwhile, heat a large saute pan over medium heat. Add the oil, butter, garlic and a pinch of salt and sweat the garlic for 2 minutes. Add the shrimp, season with salt and pepper and cook, stirring, 1 minute. Add the wine, lemon juice and chile flakes if using and cook until the shrimp are just cooked through, 3 to 5 minutes.
  • Reserve some of the pasta water, then drain the spaghetti. Add the spaghetti and a little of the reserved pasta water to the pan with the shrimp and toss to combine. Toss in the parsley if using and serve.

20 jumbo shrimp
5 tablespoons extra-virgin olive oil
1 carrot, chopped
1 celery stalk, chopped
1/4 medium white onion, chopped
4 garlic clove, sliced plus 1 clove, minced
1 1/2 cups dry white wine
Coarse salt
1 pound spaghetti
4 tablespoons (1/2 stick) unsalted butter
1 1/2 tablespoons chopped flat-leaf parsley

Steps:

  • Peel shrimp, reserving shells and tails. Cut shrimp crosswise into thirds; set aside. Place shells and tails in a medium saucepan. Add 1 tablespoon oil, carrots, celery, onion, and minced garlic. Cook over medium-high heat for 1 minute. Add 1 cup of wine, and cook until reduced to about 1/3 cup. Strain through a fine sieve; discarding solids.
  • Bring a large pot of water to a boil. Add salt and spaghetti, and cook until al dente, according to package directions.
  • In a large straight-sided skillet, heat remaining 1/4 cup oil over medium-high heat. Add sliced garlic, and cook, stirring occasionally, until just beginning to turn golden brown. Add shrimp, and remaining 1/2 cup wine. Cook, stirring, until almost cooked through. Add strained cooking liquid, and cook until shrimp are just firm. Stir in butter and parsley.
  • Drain spaghetti, and place on a serving platter. Top with shrimp mixture, and serve immediately.

This is a quick and easy shrimp dish. It takes less than 1/2 hour from start to finish! You can even eliminate the spaghetti and eat just with the shrimp. Be sure to have plenty of Italian bread to mop up the extra scampi sauce! You can even serve over plain white rice. This also freezes very well. Just defrost in a refrigerator, reheat and serve over freshly made pasta! This recipe serves about 4 people and can easily be doubled or tripled to make more. If you like more shrimp, add more...it will not affect the taste!

1 lb extra-large shrimp, peeled and deveined
3/4 cup extra virgin olive oil
3/4 cup unsalted butter
3/4 cup white wine
15 minced garlic cloves
1/2 cup fresh parsley, coarsely chopped

1 lb spaghetti, Cooked and Drained

Steps:

  • In a large saucepan add the Olive oil and butter together over a medium heat until all the butter is melted.
  • Add 1/2 the garlic to the saucepan and simmer for about 3 minutes till the garlic starts to get transparent. (make sure your heat is not too high, you don't want the garlic to brown at all, it will create a very bitter taste).
  • After 3 minutes add the white wine to the mixture. If using gas heat, make sure to remove the pan from heat before adding the wine to avoid fire. Stir mixture and allow to cook together for 4 minutes.
  • Add the shrimp and rest of garlic to mixture and stir together. after about 3 minutes, flip over the shrimp to make sure both sides cook evenly. Cook for another 3 or 4 minutes.
  • After all the shrimp are cooked and the mixture is mixed thoroughly remove from heat and add the parsley and cheese. Stir it all together and serve over cooked pasta. I allow people to add their own salt and pepper to taste as the italian cheese has a very salty taste! Enjoy!

Coarse salt
2 tablespoons extra-virgin olive oil, plus more for drizzling
2 pounds large shrimp, peeled and deveined
Freshly ground black pepper
5 garlic cloves, minced
1/2 teaspoon crushed red pepper flakes, plus more for garnish
1 1/2 tablespoons freshly grated lemon zest
1/4 cup white wine
Juice of 1 lemon
1/4 cup chopped fresh parsley leaves

Steps:

  • Bring a large pot of water to a boil over high heat. Add the pasta and a generous pinch of salt and cook until al dente. Drain the pasta, reserving 1/2 cup of the pasta water.
  • Meanwhile, heat a large saute pan over high heat. Add 1 1/2 tablespoons of the oil and swirl it to coat the pan. Add the shrimp in a single layer. Sprinkle with salt and pepper. After 2 minutes, turn the shrimp over; add the remaining 1 1/2 teaspoons of oil, the garlic, and the red pepper flakes. Stir constantly for 1 to 2 minutes, regulating the heat to avoid burning the garlic.
  • Add the lemon zest and white wine to the shrimp. Stir to reduce the wine slightly. Add the lemon juice, cooked pasta, and reserved pasta water to the pan. Toss to combine. Remove from the heat and sprinkle with the parsley. Serve with a drizzle of olive oil and extra red pepper flakes on each serving.

1 lb peeled and deveined large shrimp (raw, 20 to 25 per lb)

  • Bring a 6- to 8-quart pot of salted water to a boil.
