1 (16 ounce) package linguine
¼ cup olive oil
¼ cup butter
6 cloves garlic, minced
1 pound peeled and deveined medium shrimp
¾ cup white wine
½ cup lemon juice
¼ teaspoon crushed red pepper
1 tablespoon chopped fresh basil
½ teaspoon salt
½ pint grape tomatoes, halved
2 tablespoons grated Pecorino Romano cheese
1 tablespoon chopped fresh parsley

Steps:

  • Fill a large pot with lightly salted water and bring to a rolling boil over high heat. Once the water is boiling, stir in the linguine, and return to a boil. Cook the pasta uncovered, stirring occasionally, until the pasta has cooked through, but is still firm to the bite, about 11 minutes. Drain well in a colander set in the sink. Transfer the linguine to a large mixing bowl.
  • Heat the olive oil and butter together in large skillet over medium heat until the butter is melted. Cook and stir the garlic in the butter and oil for 2 to 3 minutes. Add shrimp and cook for 4 to 5 minutes, stirring frequently. Stir in the wine, lemon juice, red pepper, basil, and salt and cook another 1 minute. Mix in the tomatoes and cook 1 minute more; remove from heat and transfer mixture to the bowl with the linguine. Sprinkle the Pecorino Romano cheese and parsley over the pasta and sauce; toss until well mixed.

1 (16 ounce) package linguine pasta
2 tablespoons butter
2 tablespoons extra-virgin olive oil
2 shallots, finely diced
2 cloves garlic, minced
1 pinch red pepper flakes
1 pound shrimp, peeled and deveined
1 pinch kosher salt and freshly ground pepper
½ cup dry white wine
1 lemon, juiced
2 tablespoons butter
2 tablespoons extra-virgin olive oil
¼ cup finely chopped fresh parsley leaves
1 teaspoon extra-virgin olive oil, or to taste

Steps:

  • Bring a large pot of salted water to a boil; cook linguine in boiling water until nearly tender, 6 to 8 minutes. Drain.
  • Melt 2 tablespoons butter with 2 tablespoons olive oil in a large skillet over medium heat. Cook and stir shallots, garlic, and red pepper flakes in the hot butter and oil until shallots are translucent, 3 to 4 minutes. Season shrimp with kosher salt and black pepper; add to the skillet and cook until pink, stirring occasionally, 2 to 3 minutes. Remove shrimp from skillet and keep warm.
  • Pour white wine and lemon juice into skillet and bring to a boil while scraping the browned bits of food off of the bottom of the skillet with a wooden spoon. Melt 2 tablespoons butter in skillet, stir 2 tablespoons olive oil into butter mixture, and bring to a simmer. Toss linguine, shrimp, and parsley in the butter mixture until coated; season with salt and black pepper. Drizzle with 1 teaspoon olive oil to serve.

6 tablespoons good-quality olive oil
1 tablespoon coarse salt, plus more for boiling water and seasoning
1 1/2 pounds dry linguine
6 tablespoons (3/4 stick) unsalted butter
3 tablespoons (about 9 cloves) minced garlic
25 to 30 large shrimp (about 2 pounds), shelled and deveined
3/4 cup minced fresh flat-leaf parsley
1/2 teaspoon freshly ground pepper, plus more for seasoning
1/2 cup freshly squeezed lemon juice (about 4 lemons)
1/4 teaspoon crushed red-pepper flakes
1/2 lemon, sliced thinly into half-rounds, plus grated zest of 1 lemon

Steps:

  • Drizzle 1 tablespoon olive oil into boiling salted water. Add linguine, and cook according to the directions on the package, 7 to 10 minutes.
  • While the pasta is cooking, place the butter and the remaining 5 tablespoons olive oil in a large, heavy-bottomed pot set over medium heat. Once butter has melted, add the garlic and saute until lightly brown, about 2 minutes, being careful not to let it burn. Add the shrimp, parsley, salt, and pepper, and saute, stirring occasionally, until the shrimp have just turned pink, about 5 minutes. Turn off the heat.
  • When the pasta is done, drain the cooked linguine, and add immediately to the shrimp. Add the lemon juice, pepper flakes, lemon slices, and lemon zest. Toss well, season to taste, and serve immediately.

1 lb linguine
4 tablespoons butter
4 tablespoons extra virgin olive oil, plus more
extra virgin olive oil, for drizzling
1 large shallot, finely diced
5 garlic cloves, sliced
1 pinch red pepper flakes (optional)
20 large shrimp, about 1 pound, peeled and deveined, tail on
kosher salt & freshly ground black pepper
1/2 cup dry white wine
1 lemon, juice of
1/4 cup finely chopped fresh parsley leaves

Steps:

  • For the pasta, put a large pot of water on the stove to boil.
  • When it has come to the boil, add a couple of tablespoons of salt and the linguini.
  • Stir to make sure the pasta separates; cover.
  • When the water returns to a boil, cook for about 6 to 8 minutes or until the pasta is not quite done.
  • Drain the pasta reserving 1 cup of water.
  • Meanwhile, in a large skillet, melt 2 tablespoons butter in 2 tablespoons olive oil over medium-high heat.
  • Saute the shallots, garlic, and red pepper flakes (if using) until the shallots are translucent, about 3 to 4 minutes.
  • Season the shrimp with salt and pepper; add them to the pan and cook until they have turned pink, about 2 to 3 minutes.
  • Remove the shrimp from the pan; set aside and keep warm.
  • Add wine and lemon juice and bring to a boil.
  • Add 2 tablespoons butter and 2 tablespoons oil.
  • When the butter has melted, return the shrimp to the pan along with the parsley and cooked pasta and reserved pasta water.
  • Stir well and season with salt and pepper.
  • Drizzle over a bit more olive oil and serve immediately.

4 tablespoons butter, divided
5 tablespoons olive oil, divided
1 shallot, finely chopped

1 lb shrimp, peeled and deveined
1/2 cup dry white wine
1 lemon, juice of
3 tablespoons fresh parsley, finely chopped
1 teaspoon salt
1 teaspoon black pepper
1 teaspoon crushed red pepper flakes (optional)

Steps:

  • Saute garlic, shallots and red pepper flakes in 2 tablespoons butter and 2 tablespoons olive oil over medium heat in large skillet.
  • Add shrimp to skillet, cooking until pink about 2-3 minutes. Remove shrimp from pan.
  • Add wine and lemon juice to skillet. When mixture comes to a boil, add 2 tablespoons butter, 2 tablespoons olive oil. When butter melts, return shrimp to pan and add parsley, cooked pasta and 1 cup pasta cooking liquid. Toss to combine.

3 cloves garlic, minced
6 oz butter, melted

½ cup white wine
8 oz linguine
fresh parsley, to garnish
red chili flake, to garnish

Steps:

  • Preheat oven to 400˚F (200˚C).
  • In a medium-sized casserole pan, combine shrimp, salt, pepper, red chili flakes, garlic, butter, lemon juice, and white wine.
  • Bake for 10-13 minutes, or until shrimp turns pink and is fully cooked.
  • Bring 4 quarts of water to a boil, add salt to taste, and cook linguine pasta al dente according to package directions, stirring occasionally.
  • Strain linguine and combine with shrimp until pasta is fully coated in white wine scampi sauce.
  • Garnish with chopped Italian parsley.
