LOW-COUNTRY BOIL WITH SHRIMP, CORN, AND SAUSAGE



Low-Country Boil with Shrimp, Corn, and Sausage image

You'll need your favorite seafood seasoning and your biggest pot for this boil (also called Frogmore Stew, One-Pot, or Farmer's Seafood Boil) brimming with plump shrimp, sweet corn, smoky sausage, and tender potatoes. Call all your friends and spread out some newspaper for a fun, roll-up-your-sleeves meal that will feed a crowd.

For the shrimp boil:
2 lemons, quartered
2 bay leaves
3 tablespoons kosher salt
2 tablespoons whole black peppercorns
1/2-3/4 cup crab and shrimp boil seasoning, such as Old Bay, plus more, or 4 (3-ounce) bags Zatarain's Crawfish, Shrimp, and Crab Boil (See Cooks' Note)
4 pounds small new potatoes (about 1 1/2" in diameter)
2 pounds smoked pork sausage (about 4 links), such as kielbasa, cut into 2" pieces
2 sweet or yellow onions, peeled, quartered
8 ears of corn, shucked, cut in half
4 pounds fresh large shrimp (31-35 count; preferably wild-caught), unpeeled
For the cocktail sauce (optional):
1 cup ketchup
2 tablespoons plus 2 teaspoons prepared horseradish
2 tablespoons plus 2 teaspoons Worcestershire sauce
1 tablespoon fresh lemon juice
Louisiana-style hot sauce, such as Crystal (to taste; optional)
For the lemon butter sauce (optional):
1/4 cup (1/2 stick) unsalted butter, melted
2 tablespoons (or more) fresh lemon juice
Louisiana-style hot sauce, such as Crystal (to taste; optional)
Special Equipment
A large (at least 12-quart) stockpot, preferably with a perforated insert, or 2 large (at least 6-quart) pots

Steps:

  • Cook the shrimp boil:
  • Fill stockpot with 6 qt. water (if using 2 pots, divide ingredients and water between them). Add lemons, bay leaves, salt, peppercorns, and 1/2 cup seasoning, cover, and bring to a rolling boil. Add potatoes, return to a boil, and cook 7 minutes. Add sausage and onions, return to a boil, and cook 5 minutes. Add corn, return to a boil, and cook until corn is cooked and potatoes are tender when pierced with a knife, about 5 minutes more.
  • Add shrimp and cook (no need to return to a boil), stirring gently, until shrimp turn pink, about 3 minutes. Remove insert or drain through a very large colander.
  • Make the cocktail sauce:
  • Stir ketchup, horseradish, Worcestershire, lemon juice, and hot sauce, if using, in a medium bowl.
  • Make the lemon-butter sauce:
  • Melt butter in a small saucepan over medium-high heat. Transfer to a medium bowl and stir in lemon juice and hot sauce, if using. Taste and add more lemon juice, if needed. Cover and let sit in a warm place.
  • Serve the shrimp boil:
  • Serve shrimp boil on a newspaper-lined table or large platters. Dust with additional Old Bay, if using. Serve with sauces alongside, if desired.

  • Cocktail sauce can be made 1 week ahead. Transfer to an airtight container and chill.

3 tablespoons Old Bay Seasoning
3 lbs new potatoes
5 ears corn
2 lbs smoked link sausage
4 lbs large unpeeled shrimp
4 lemons
2 tablespoons refrigerated fat-free liquid egg product
1 tablespoon cider vinegar
1 tablespoon lemon juice
1 teaspoon kosher salt
1 teaspoon ground mustard
1 1/2 cups peanut oil
1 teaspoon garlic
1 tablespoon boiling water

Steps:

  • Husk corn and cut into 2-3 pieces each.
  • In a large 12-16 gallon pot, bring 2 gallons of water to boiling.
  • Add shrimp or crab boil and Old Bay seasoning, reduce heat.
  • simmer, uncovered 10 minutes.
  • Add potatoes, a few at a time, allowing water to continue to simmer.
  • Simmer 7-10 minutes.
  • Add corn, simmer another 5 minutes.
  • Cut sausage into 2-3" pieces; add sausage and shrimp.
  • Simmer 3-5 minutes until shrimp are opaque (do not overcook).
  • Transfer to a large platter.
  • Garnish with lemon halves and parsley, if desired.
  • Serve with garlic mayo.
  • For mayo:.
  • In medium bowl, combine egg product, lemon juice, salt, and mustard. Whisk until smooth.
  • Whisk in oil 1 T at a time; whisk constantly, about 7 minutes. When you feel that your arm might fall off, the mixture should be thickened.
  • Finely chop garlic. Add a pinch of salt and rub with the side of a knife until the garlic becomes a paste. Add paste to mayo.
  • Add 1 T boiling water to mayo; let stand 2 minutes; stir into the mayo.
  • Refrigerate, covered, up to 3 days.

2 bay leaves
1 cinnamon stick
1 tablespoon mustard seeds
1 teaspoon celery seed
1 teaspoon coriander seed
1 teaspoon black peppercorns
1/2 teaspoon paprika
1/2 teaspoon hot pepper flakes
1 lb hot Italian sausage or 1 lb smoked sausage
2 lbs extra large raw shrimp

Steps:

  • In a large saucepan, bring 12 cups water, cloves bay leaves, cinnamon, mustard and celery and coriander seeds, black peppercorns, paprika and hot pepper flakes to boil.
  • Reduce heat and simmer for 5 minutes.
  • If using smoked sausage, cut into bite size pieces.
  • Add smoked or Italian sausage to pot; simmer for 15 minutes.
  • Meanwhile, using scissors, cut through shell along back of each shrimp; remove vein.

2 celery stalks, halved
1 medium onion, quartered through stem end
2 garlic cloves, smashed
2 tablespoons seafood seasoning, plus more for serving
1 pound red new potatoes
2 ears corn, husks and silks removed, quartered
1 pound smoked andouille sausage, cut into 1-inch pieces
1 pound large shell-on shrimp
2 tablespoons melted butter
1 teaspoon hot-pepper sauce

Steps:

  • In a large pot, combine chile, celery, onion, garlic, 1 tablespoon seafood seasoning, and 10 cups water; bring to a boil. Add potatoes and reduce to a rapid simmer. Cook until potatoes are almost tender, about 10 minutes.
  • Add corn and sausage to pot. Cook until potatoes and corn are cooked through, 5 to 7 minutes. Remove pot from heat. 3 tablespoons Old Bay Seasoning

1 medium onion
1 -2 lb red potatoes
1 lemon
4 baby sweet corn cobs
1 lb kielbasa
1 lb uncooked shrimp
