2 tablespoons olive oil, divided
1 pound uncooked shrimp (31-40 per pound), peeled and deveined
3/4 to 1 teaspoon crushed red pepper flakes, divided
1/4 teaspoon salt
1 small onion, chopped
2 to 3 anchovy fillets, finely chopped
3 garlic cloves, minced
2 cups grape tomatoes or small cherry tomatoes
1/2 cup dry white wine or vegetable broth
1/3 cup pitted Greek olives, coarsely chopped
2 teaspoons drained capers
Sugar to taste
Chopped fresh Italian parsley
Hot cooked spaghetti, optional

Steps:

  • In a large skillet, heat 1 tablespoon oil; saute shrimp with 1/2 teaspoon pepper flakes until shrimp turn pink, 2-3 minutes. Stir in salt; remove from pan., In same pan, heat remaining oil over medium heat; saute onion until tender, about 2 minutes. Add anchovies, garlic and remaining pepper flakes; cook and stir until fragrant, about 1 minute. Stir in tomatoes, wine, olives and capers; bring to a boil. Reduce heat; simmer, uncovered, until tomatoes are softened and mixture is thickened, 8-10 minutes., Stir in shrimp. Add sugar to taste; sprinkle with parsley. If desired, serve with spaghetti.

1 red onion, cut into wedges
3 cups sourdough bread, cut into 1-inch cubes
1 pint (2 cups) cherry tomatoes
1/2 cup pitted Niçoise olives
Kosher salt and freshly ground black pepper
4 tablespoons olive oil
2 pounds jumbo (U15) shrimp, peeled and deveined and tails removed
2 tablespoons red wine vinegar
1 anchovy, minced
1 tablespoon capers, drained
1/3 cup fresh parsley leaves, plus 2 tablespoons, chopped
Parmesan shavings, for garnish

Steps:

  • Preheat the oven to 375 degrees F. Combine the onion, bread cubes, tomatoes and olives on a rimmed baking sheet Sprinkle with 1/2 teaspoon salt and black pepper to taste. Drizzle with 2 tablespoons of olive oil and toss everything together. Disperse evenly on the baking sheet and bake until the bread just starts to crisp, 12 to 15 minutes.
  • In a medium bowl, toss the shrimp with 1 tablespoon olive oil and 1/2 teaspoon of salt. Arrange on the baking sheet among the bread mixture. Bake until the shrimp are opaque and just cooked through, 8 to 10 minutes.
  • Meanwhile, whisk together the remaining 1 tablespoon olive oil, vinegar and anchovy in a small bowl. Stir in the capers and set aside.
  • Remove the baking sheet from the oven. Add the parsley leaves and dressing and toss to evenly coat. Transfer to a platter and garnish with the chopped parsley. Add Parmesan shavings. Serve immediately.

CREAMY PASTA PUTTANESCA WITH BACON AND SHRIMP



Creamy Pasta Puttanesca with Bacon and Shrimp image

Kosher salt and freshly ground black pepper
1 pound rigatoni
2 tablespoons extra-virgin olive oil, plus more for drizzling
3 slices bacon, diced
12 ounces medium to large shrimp, peeled and deveined
6 cloves garlic, sliced
5 anchovy fillets, chopped
10 pitted green olives, sliced
2 tablespoons fresh oregano leaves
1 teaspoon crushed red pepper flakes
1/2 cup dry red wine
One 26-ounce box or 28-ounce can crushed tomatoes
1/2 cup heavy cream
4 ounces pecorino or Parmesan cheese
1/4 bunch fresh basil, for garnish

Steps:

  • Bring a large pot of salted water to a boil. Drop the pasta into the water and cook for 8 to 9 minutes or as directed by the package. Once cooked, drain the pasta and place in a large baking dish or serving platter and drizzle with a little olive oil.
  • Heat the 2 tablespoons olive oil in a large saute pan over medium-high heat. Add the chopped bacon and cook, stirring occasionally, just until fully crisp. Remove the bacon with a slotted spoon and let drain on a paper towel-lined plate or tray. Leave the bacon grease in the pan.
  • Heat the pan with the bacon grease over medium-high heat. Add the shrimp, season with salt and black pepper and cook just until pink, 1 to 2 minutes per side. Remove the shrimp from the pan and let rest with the bacon.
  • Add the garlic, anchovy, olives, oregano and red pepper flakes to the pan and cook, stirring, just until the garlic begins to toast, 3 to 4 minutes. Add the red wine and cook, scraping up any browned bits from the bottom of the pan, until the liquid reduces by half, 1 to 2 minutes.
  • Add the crushed tomatoes to the pan, reduce the heat to a simmer and cook the sauce for about 5 minutes, stirring occasionally.
  • Add the cream, bacon and shrimp to the sauce and simmer for 1 minute to bring everything together. Taste the sauce and season with salt and black pepper.
  • Pour the sauce over the pasta to completely cover it. Or you can toss the pasta into the sauce if your pan is large enough.
  • To finish the dish, grate the cheese over the top and garnish with the basil and a drizzle of olive oil.

8-10 whoe anchovy fillets

3-4 tbls capers, drained & coarsely chopped
14 oz can crushed tomatoes
14 oz can diced tomatoes
1 lb. (24 count) shrimp - peeled & deveined & tails removed
2 handfuls of fresh flat-leaf parsley

Steps:

  • 1. Boil water for pasta, add salt & pasta 2. in a large deep skillet, over medium heat, add olive oil, garlic, crushed red peppers and anchovies. Break the fish with the back of a wodden spoon until they melt into the oil. 3. Add olives, capers and tomatoes. 4. Bring sasuce to a boil and add shrimp in a single layer - cover pan and cook shrimp 3-4 minutes. 5. Uncover pan and add parsley. 6. Toss and adjust seasonings to taste. 7. When pasta is done, drain pasta and add to sause. Toss to combine.

1 (14 ounce) can crushed tomatoes
1 (14 ounce) can diced tomatoes

1/4-1/2 cup fresh flat-leaf parsley, finely chopped

Steps:

  • Place a big pot of water on to boil; add in penne and salt; cook to al dente; drain.
  • While the pasta cooks, heat a large skillet over medium heat.
  • Add in olive oil, garlic, crushed red pepper flakes, and anchovies; break up the fish with the back of a wooden spoon until the melt into the oil.
  • Add in the olives, capers, and tomatoes; bring the sauce to a bubble and add in the shrimp, scattering them in a single layer.
  • Cover the pan to cook the shrimp, 3-4 minutes.
  • Uncover the pan and add in the parsley; toss and adjust the seasonings to taste.

3/4 lb. angel hair pasta, uncooked
2 Tbsp. KRAFT Tuscan House Italian Dressing
1 lb. uncooked deveined peeled medium shrimp
3 cloves garlic, minced
2 cups CLASSICO Tomato and Basil Pasta Sauce
1/2 cup pitted Kalamata olives, quartered
2 Tbsp. capers
1/2 tsp. crushed red pepper
1/4 cup chopped Italian parsley

Steps:

  • Cook pasta as directed on package, omitting salt.
  • Meanwhile, heat dressing in large nonstick skillet on medium heat. Add shrimp and garlic; cook and stir 3 to 5 min. or until shrimp turn pink. Add all remaining ingredients except parsley; stir. Simmer on medium-low heat 3 to 5 min. or until heated through, stirring occasionally.

2 garlic cloves, chopped
1 medium yellow onion, diced
1/2 teaspoon oregano
1/3 cup fresh basil, chopped
1/4 teaspoon red pepper flakes (optional)
1/2 cup dry white wine
28 ounces plum tomatoes, chopped coursely
1/3 cup kalamata olive, chopped coursely
3 tablespoons capers, drained
1/2 cup low-fat pepperoni, chopped
4 anchovies, minced
1 lb shrimp
4 tablespoons parmesan cheese, for topping
14 1/2 ounces Barilla angel hair pasta, cooked and drained (I use Barilla Plus)

Steps:

  • Heat oil in skillet over medium heat.
  • Add garlic, red pepper flakes and onion. Saute until onion is translucent.
  • Add wine and simmer until almost evaporated.
  • Stir in tomatoes with their juice, basil, oregano, olives, capers, anchovies (optional) and pepperoni (optional). Bring to a boil then reduce to a simmer. Simmer for 20 minutes or until sauce has thickened.
  • Cook pasta according to directions. Strain and set aside.
  • Add shrimp to sauce and cook on medium-high 3-4 minutes or until shrimp are pink and cooked through.
  • Add pasta to sauce and incorporate.

This is a very easy way to make an elegant shrimp dish. The plating is right in style, in that it is layered/piled in a vertical fashion. Select a fairly large plate for best presentation. The success of this dish will depend on thinking ahead. If you are to serve on mashed potatoes, make them ahead and keep in a double boiler...

1 1/4 lb raw shrimp, tail on, peeled, deveined
2 Tbsp olive oil
2-3 pinch red pepper flakes
3-4 pinch kosher salt
1/3 c italian parsley, chopped
1/3 c fresh basil, chpped
2 Tbsp olive oil
1 small lemon, juice and zest
1/4 c capers, drained, chopped
1/4 c sun dried tomatoes in oil, chopped
1/3 c kalamata (greek) olives, chopped
5 large anchovy fillets, chopped
9 clove garlic, chopped
1/4 c dry vermouth
1/4 c vegetable stock

Steps:

  • 1. In a small bowl, toss the parsley and basil with 2 Tbsp olive oil and the lemon zest and juice. Measure the remaining ingredients in little bowls.
  • 2. In a large fry/saute pan, heat 2 Tbsp olive oil with the red pepper flakes over med hi heat. Add the shrimp and Kosher salt and saute several minutes , just until the shrimp turn pink. Remove shrimp from pan with a slotted spoon and set aside in a medium bowl.
  • 3. Add the garlic to the pan and saute 1 - 2 minutes. Add the parsley basil mix, the capers, the sun dried tomatoes, the olives and the anchovies. Stir to saute a couple of minutes.
  • 4. Add the vermouth and vegetable stock and reduce a couple of minutes.
  • 5. Add the shrimp back to the pan and stir to coat well with all the other ingredients a couple of minutes more.
  • 6. Serve immediately on top of mashed potatoes, rice, or polenta. Scatter some green peas for garnish.

1 lb shrimp, peeled and tails left on
2 teaspoons Old Bay Seasoning
1 teaspoon lemon peel, grated
1/4 cup extra virgin olive oil
6 canned anchovy fillets
4 large garlic cloves, finely chopped
1 teaspoon crushed red pepper flakes
2 pints grape tomatoes
1/2 cup oil-cured olives, chopped
3 tablespoons brined capers
1/3 cup dry vermouth
1/2 cup fresh basil leaf, shredded
1/2 cup flat leaf parsley, chopped

Steps:

  • Bring a large pot of water to a boil, salt it, add the pasta and cook until al dente. Drain, reserving a ladleful of pasta cooking water.
  • While the pasta is working, in a bowl, toss the shrimp with the old bay and lemon peel.
  • In a large, deep skillet, heat 3 tbs olive oil, 3 turns of the pan, over medium heat. Add the anchovies and cook until melted, then add the garlic and crushed red pepper. Stir for 2 minutes. Add the tomatoes, olives and capers, cover the skillet, lower the heat and cook, stirring once halfway through, until the tomatoes burst, about 12 minutes. Using a potato masher, squash any unburst tomatoes.
  • In a medium skillet, heat the remaining 1 tbs olive oil, 1 turn of the pan, over medium-high heat. Add the shrimp and cook until firm and pink, 3 to 4 minutes. Pour in the vermouth and cook until the alcohol is cooked off, 1 minute.
  • In a large bowl, toss the pasta with the reserved cooking water, tomato sauce, basil and parsley; stir in the shrimp and pan drippings.

2 tablespoons olive oil
2 cloves garlic, minced
1 small yellow onion, chopped
1 can (24 ounces) diced tomatoes
2 cups shredded kale
1 cup artichoke hearts, grilled or canned
1/2 cup kalamata olives, pitted
2 tablespoons capers
1 teaspoon red pepper flakes, crushed
1 pound shrimp
4 cups spiralized zucchini noodles
Crumbled feta cheese

Steps:

  • Heat olive oil in a large skillet over medium heat. Add garlic and cook 2 to 3 minutes until fragrant. Add onion and stir until browned, about 5 to 7 minutes. Stir in tomatoes, kale, artichokes, olives, capers, and red pepper flakes. Bring to a boil, then reduce heat to a simmer and cook for 15 minutes.
  • Add shrimp and zucchini noodles and cook for 3 to 5 minutes or until shrimp is cooked through. Serve topped with feta.
