Since Rhode Island is known as the Ocean State, I think this recipe represents my state well. Shrimp add a new twist to traditional potato salad.

1 pound cooked medium shrimp, peeled and deveined
2 tablespoons lemon juice
4 cups cubed peeled potatoes, cooked and cooled
1/4 cup sliced green onions
1/4 cup minced fresh parsley
1 cup sour cream
1 teaspoon salt
1/4 teaspoon white pepper
1/4 teaspoon dried tarragon
1/4 teaspoon ground mustard
1/8 teaspoon celery seed
1 garlic clove, minced, optional

Steps:

  • In a large bowl, toss shrimp with lemon juice; refrigerate. Add potatoes, onions and parsley. In a small bowl, combine the sour cream, salt, pepper, tarragon, mustard, celery seed and garlic if desired; pour over potato mixture and toss. Cover and refrigerate until serving.

1 1/2 pounds baby red-skinned or Yukon Gold potatoes, halved or quartered if large
Kosher salt
1/4 cup white wine vinegar
Freshly ground pepper
2/3 cup plain Greek yogurt
1/4 cup mayonnaise
1 shallot, very thinly sliced
1 1/4 pounds peeled and deveined large shrimp
2 teaspoons paprika
5 tablespoons extra-virgin olive oil
4 cloves garlic, thinly sliced
3 Persian cucumbers, sliced
1/2 cup roughly chopped fresh mint (or 1/4 cup each chopped fresh parsley and mint)

Steps:

  • Put the potatoes in a medium saucepan and cover with cold water by 1 inch. Season generously with salt and bring to a boil; reduce the heat to a steady simmer and cook until tender, 12 to 15 minutes. Drain and transfer to a bowl. Toss with 1 tablespoon vinegar and season with salt and pepper. Refrigerate until cooled.
  • Meanwhile, whisk together the yogurt, mayonnaise, shallot, remaining 3 tablespoons vinegar and 2 tablespoons water in a small bowl. Season with salt and pepper and set aside.
  • Season the shrimp with salt, pepper and the paprika. Heat the olive oil in a large nonstick skillet over medium-high heat. Add the shrimp and cook until browned on the bottom, about 2 minutes. Flip the shrimp and add the garlic to the pan; cook until the shrimp are just cooked through and the garlic is golden, 1 to 2 minutes. Remove from the heat.
  • Add the cucumbers, yogurt mixture and about half of the mint to the potatoes. Toss well and season with salt and pepper. Divide among plates. Add the shrimp and any juices from the skillet to the plates. Top with the remaining mint.

5 medium red potatoes
6 cups water
3 tablespoons seafood seasoning
1 tablespoon salt
1 pound medium uncooked shrimp
1/4 cup chopped green onions
1 jar (2 ounces) diced pimientos, drained
1/2 cup mayonnaise
1 teaspoon cider vinegar
1/2 teaspoon sugar
Additional salt to taste

Steps:

  • Place the potatoes in a large saucepan; add the water, seafood seasoning and salt. Bring to a boil. Reduce heat; cover and simmer for 25 minutes., Add the shrimp; cover and cook for 5 minutes or until shrimp turn pink and potatoes are tender. Drain. Peel and dice potatoes. Peel and devein shrimp; cut into pieces., In a large bowl, combine the potatoes, shrimp, onions and pimientos. In a small bowl, combine the mayonnaise, vinegar and sugar. Add to potato mixture; gently toss to coat. Season with additional salt. Cover and refrigerate for at least 1 hour before serving.

2 pounds small red potatoes, quartered
2 teaspoons salt,divided and 1/2 teaspoon freshly ground black pepper
2 tablespoons olive oil
1 pound medium raw shrimp, peeled and deveined
2 cloves garlic, finely chopped
1/2 cup extravirgin olive oil
3 shallots, finely chopped
1 small bunch oregano, leaves only, finely chopped
3 tablespoons capers
2 tablespoons lemon juice

Steps:

  • Place the potatoes in a bowl and rinse them with slowly running cold water until the water runs clear. Place the potatoes in a saucepan and cover with fresh water. Add 1 teaspoon salt and bring up to the boil. Reduce the heat and simmer for 10 to 12 minutes, or until the potatoes are almost tender but not flaking. Drain in a colander.
  • In a heavy skillet, heat the olive oil over medium heat. Add the shrimp and saute for 2 minutes, tossing every 30 seconds or so. Add the garlic and cook for 2 minutes more, or until shrimps are pink. Do not overcook.
  • Transfer the shrimp to a large bowl and add the potatoes. Add the olive oil, shallots, oregano, capers, lemon juice, salt, and pepper and toss together until evenly mixed. Serve on tiny plates or in small ramekins.

This recipe breaks the taboo of combining seafood and cheese. This salad of blanched shrimp, new potatoes and crisp disks of sugar-snap peas is perfectly adequate. It is vibrant from fresh mint, tangy from red-wine vinegar and mustard in the vinaigrette, sweet from the shrimp and earthy from the potatoes, but a few shards of young pecorino add the saline funk that brings this dish together. The cheese will practically melt into the salad, adding a glossy complexity. (Another young, semifirm sheep's milk cheese would work. So would aged pecorino, but use less since it's saltier. )

Steps:

  • Trim and string the peas, then thinly slice them crosswise. Place them in a large bowl. In a small bowl, whisk together the mustard, vinegar, 1/4 teaspoon salt, and pepper to taste. Slowly whisk in the oil.
  • Bring a large pot of salted water to a boil. Cook the potatoes until tender, about 15 minutes. Transfer with a slotted spoon to a cutting board. Add the shrimp to the pot and cook until opaque, 2 minutes. Transfer with a slotted spoon to the bowl of peas.
  • While the potatoes are warm, slice them into 1/2-inch rounds, and place them in a small bowl. Gently toss them with 1/2 cup of the vinaigrette, 1 teaspoon salt, and 3/4 teaspoon pepper. Spread them on a large platter to cool.

12 ounces green beans, trimmed
1 cup assorted cherry tomatoes, halved
5 ounces baby arugula (about 6 cups)

2 tablespoons pine nuts
2 tablespoons grated Parmesan cheese
2 cloves garlic, chopped
1 teaspoon grated lemon zest, plus the juice of 1 lemon

1 pound large shrimp, peeled, deveined and patted dry

Steps:

  • Put the potatoes in a large saucepan, cover with cold water and season with salt. Bring to a boil, then reduce the heat to a gentle boil and cook until fork-tender, 8 to 10 minutes. Remove the potatoes with a slotted spoon to a large bowl, leaving the water in the pot.
  • Fill a separate large bowl with ice water. Return the pot of water to a boil, add the green beans and cook until crisp-tender, 5 to 7 minutes. Drain and transfer to the ice water. Drain the beans again and add to the potatoes. Add the cherry tomatoes.

  • Heat 1 tablespoon olive oil in a large skillet over medium-high heat; add the red pepper flakes and remaining garlic and cook 30 seconds. Add the shrimp, sprinkle with the lemon zest and season with salt and pepper. Cook, turning once, until pink, 3 to 4 minutes. Remove from the heat.

10 large potatoes
2 cups mayonnaise (Do NOT use fat free or low fat)
1 (6 ounce) can shrimp, drained well and flaked
2 celery ribs, minced fine
1/2 green pepper, minced fine
1 medium carrot, minced fine
20 green olives, minced fine
salt and pepper, to taste
lettuce leaf

Steps:

  • Rinse off potatoes to clean, and boil in salted water, until fork inserted goes in easily.
  • Do not over-cook potatoes, or potato salad will be mushy.
  • When potatoes are done drain right away, peel and let cool.
  • Put in refrigerator to chill.
  • When chilled completely, cut them up into med.
  • sized cubes and put in a lg bowl.
  • Put back into fridge to keep chilled.
  • Meanwhile, cut up celery, green pepper, carrots and olives into finely minced pieces.
  • Add to potato mixture.
  • Open can of shrimp and drain well.
  • Rinse off shrimp in the can, and squeeze dry with can cover before removing from can.
  • Flake shrimp well between fingers and add to potato and veggie mixture.
  • Mix mayonnaise into salad and add salt and pepper to taste.
  • Refrigerate until ready to eat.
  • When ready to serve, place potato salad on a few leaves of lettuce.
  • Serve with cucumber wedges.
  • Variations:.
  • Try adding 1/2 of a lg sweet onion, minced finely.
  • Try adding 6 hard boiled eggs, mashed finely.
  • Serve in a lg cucumber, sliced lengthwise and seeds removed.
  • Serve in a hollowed out fresh tomato.
  • Serve in a hollowed out green bell pepper.

1 pound large shrimp, cooked, peeled, and deveined, cut into 3/4" pieces
3 plum tomatoes (about 2/3 pounds), quartered lengthwise, then crosswise
5 tablespoons extra-virgin olive oil
6 fresh basil leaves, thinly sliced

Steps:

  • Place sliced onion in a strainer and rinse under cold water for 20 seconds; drain. transfer onion to a large bowl; add vinegar and toss to coat. Set aside.

1 tablespoon spicy brown mustard
1 tablespoon chopped parsley leaves
Reserved 2 pieces of bacon from Crispy Baby Potato Bites with Sour Cream and Bacon recipe, chopped
Kosher salt and freshly ground black pepper
Reserved potatoes from Crispy Baby Potato Bites with Sour Cream and Bacon recipe
Reserved shrimp from Shrimp Stuffed Cucumber Cups, chopped
1 stalk celery, diced
1 1/2 pounds baby potatoes
Kosher salt
1/4 cup canola oil
2 tablespoons chopped rosemary leaves
Freshly ground black pepper
8 strips bacon
1 cup sour cream
1 tablespoon spicy brown mustard
2 tablespoons chopped chives, divided
2 standard cucumbers
3/4 pound medium shrimp, thawed, deveined and shells on
1 tablespoon prepared horseradish
1 teaspoon lemon juice
Kosher salt
Freshly ground black pepper
1 (15-ounce) can chopped tomatoes, drained
2 tablespoons chopped parsley, divided

Steps:

  • In a serving bowl, whisk together the sour cream, mustard, parsley, bacon, and salt and pepper, to taste. Add the potato, shrimp, and celery. Toss everything together until it is all coated with the dressing and serve.
  • Put the potatoes into a large pot and cover with cold water. Bring to a boil over medium heat and add a generous pinch of salt. Cook for 8 minutes so they are tender but still slightly firm. Strain and let them cool. When they are cool, cut them in half and carefully scoop out the insides using a teaspoon or melon baller to form a cup.
  • Preheat the oven to 400 degrees F.
  • Put the potato cups into a large bowl, add the oil, rosemary and season with salt and pepper, to taste. Carefully toss the potato cups to coat them with the oil. Arrange the potatoes, cut side up, on a baking sheet and bake until the cups are browned and crisp, about 15 to 20 minutes.
  • While the potatoes are baking, put the bacon into a cold skillet and cook over medium heat until crisp. Drain the bacon well on a baking sheet lined with a brown paper bag. (Reserve 2 pieces of bacon for Round 2 Recipe Shrimp and Potato Salad with Sour Cream and Bacon Dressing.) Chop the remaining 6 pieces.
  • In a bowl stir together the sour cream, mustard, 1 tablespoon chives, the chopped bacon, and salt and pepper, to taste. Arrange the potatoes onto a serving plate and fill each with a spoonful of the sour cream and bacon mixture. Garnish with the remaining chives and serve immediately.
  • Peel the length of each cucumber to form alternating stripes of unpeeled and peeled. Cut the cucumbers into 12 (3/4-inch) pieces. Scoop out the center using a teaspoon or a melon baller, leaving the bottom and sides intact to form a cup. (Reserve the centers for the Round 2 Recipe Chicken Tacos with Cucumber Salsa.) Turn them upside down onto a towel and let them drain while you make the filling.
  • Bring a medium pot of salted water to a boil over medium heat. Add the shrimp and cook until bright pink, about 3 to 4 minutes. Strain and rinse in cold water. Remove the shells and discard. (Reserve 12 shrimp for the Round 2 Recipe Shrimp and Potato Salad with Sour Cream and Bacon Dressing.)
  • Chop the shrimp into small pieces and put them into a bowl. Add the horseradish, lemon juice, salt and pepper to taste, half the can of tomatoes (reserve the remaining half for the Round 2 Recipe Chicken Tacos with Cucumber Salsa) and 1 tablespoon of parsley. Evenly divide the shrimp mixture between the cucumber cups. Arrange them on a serving platter and garnish with remaining parsley.

2 cups boiled shrimp, chopped
3 cups cooked potatoes, cubed
1 cup celery, diced
1/2 cup sweet pickle relish
2 hardboiled egg, chopped
1 teaspoon salt
1/2 cup sour cream
2 tablespoons mayonnaise
1/2 ounce Italian salad dressing mix (half of a 1 oz. package)

Steps:

  • Mix together the potatoes, celery, relish, eggs, and salt.
  • Mix together sour cream, mayo, and dry Italian dressing mix.
  • Combine the potatoe mixture with sour cream mixture; refrigerate.
  • To serve, add the shrimp and serve in a salad bowl lined with lettuce.

2 pounds very large shrimp
1/2 teaspoon salt
2 tablespoons olive oil for frying
1 grated carrot
1 tablespoon grated ginger
1 thinly sliced celery rib
1 cup sugar snap pea pods chopped
1 scallion sliced thinly
1/8 cup rice wine vinegar
1/4 cup olive oil for dressing
1 teaspoon soy sauce
1/8 teaspoon freshly grated pepper
Pancakes:
6 medium Yukon Gold Potatoes (hand grated)
1 beaten egg
1 teaspoon salt
1 teaspoon baking soda
2 tablespoons olive oil

Steps:

  • Add olive oil to 12 inch fry pan, salt shrimp and saute a few minutes on each side until white. Cool shrimp to touch and cut into large pieces. In a large mixing bowl wisk 1/4 cup olive oil, 1/8 cup rice wine viengar, soy sauce & pepper. Add grated ginger, grated carrot, thinly sliced celery, scallion and chopped sugar snap peas. Stir in sliced shrimp with remaining oil from saute pan. Hand grate 6 medium Yukon Gold Potatoes. Drain in Colander. Place into mixing bowl and stir in egg, salt, pepper and baking soda. Place 2 tablespoons of olive oil in 12 inch fry pan, heat oil. Saute pancakes 3-4 minutes on each side. Drain pancakes on paper towels. Place potato pancakes on a platter and spoon asian shrimp salad on top.

1 pound uncooked large shrimp, peeled, deveined
3 tablespoons olive oil (preferably extra-virgin)
1 teaspoon minced fresh thyme or 1/2 teaspoon dried
1 teaspoon grated lemon peel
2 garlic cloves, pressed
2 pounds small red-skinned potatoes, unpeeled, quartered
1/2 cup dry white wine
3 tablespoons fresh lemon juice
6 cups (packed) baby salad greens
1 cup quartered cherry tomatoes
Lemon wedges

Steps:

  • Mix shrimp, 1 tablespoon oil, thyme, lemon peel and garlic in medium bowl. Season with salt and pepper. Let stand at room temperature 15 minutes or refrigerate up to 2 hours.
  • Cook potatoes in boiling salted water just until tender, about 15 minutes. Drain. Transfer potatoes to bowl; cover and keep warm.
  • Meanwhile, heat large nonstick skillet over high heat. Add shrimp mixture and cook just until shrimp are cooked through, about 2 minutes per side. Transfer shrimp to plate. Add wine to skillet and boil until reduced by half, about 1 minute. Remove from heat; add 1 tablespoon oil and 2 tablespoons lemon juice to wine in skillet and stir to blend. Pour dressing over potatoes. Season with salt and pepper.
  • Mix greens, remaining 1 tablespoon oil and 1 tablespoon lemon juice in large bowl. Divide greens among 4 plates. Place potatoes in center of greens. Top with shrimp. Garnish with cherry tomatoes and lemon wedges and serve.

Shrimp is an unusual and great addition to this potato salad recipe. Onion and pepper not only add a little crunch, they give the dish nice flavor. What we really loved, though, was the parsley. It adds that something you just can't put your finger on. Very simple and easy, this recipe is a great twist on an old favorite.

6 potatoes; boiled, peeled & cubed
1/2 small red onion; chopped small
3 eggs; chopped
1/2 red bell pepper
1 clove garlic; minced
3/4 c Best Foods mayonnaise
1/4 lb shrimp (I use large & cut them in thirds) or use bay shrimp
1 Tbsp whole grain mustard
1/2 c celery, chopped
2 Tbsp parsley flakes

Steps:

  • 1. Combine all ingredients except for the mayonnaise, mustard, and parsley.
  • 2. Toss gently then add mayo a little at a time. I add the mustard and mix it into the first scoop of mayo so it's well blended). Add parsley flakes.
  • 3. Finish adding mayo to get the right consistency.
  • 4. Salt and pepper to taste.
  • 5. Chill.

1 cup sliced celery

1/3 cup KRAFT Real Mayo Mayonnaise

1/4 tsp. pepper
1 small head Bibb or Boston lettuce, separated into leaves, washed

Steps:

  • Chop shrimp into bite-sized pieces; place in medium bowl. Add potatoes, celery and onion; mix lightly.
  • Mix mayo, horseradish, ketchup, salt and pepper until well blended. Add to shrimp mixture; mix lightly. Cover; refrigerate at least 1 hour or until chilled.
  • Arrange lettuce leaves on chilled platter. Top with shrimp salad.
