A chili that is best when prepared with fresh vegetables, but still delicious with canned or frozen. Serve by itself or over rice.

1 tablespoon olive oil
1 onion, chopped
2 red bell pepper, seeded and chopped
1 jalapeno pepper, seeded and minced
10 fresh mushrooms, quartered
6 roma (plum) tomatoes, diced
1 cup fresh corn kernels
1 teaspoon ground black pepper
1 teaspoon ground cumin
1 tablespoon chili powder
2 (15 ounce) cans black beans, drained and rinsed
1 ½ cups chicken broth or vegetable broth
1 teaspoon salt

Steps:

  • Heat oil in a large saucepan over medium-high heat. Saute the onion, red bell peppers, jalapeno, mushrooms, tomatoes and corn for 10 minutes or until the onions are translucent. Season with black pepper, cumin, and chili powder. Stir in the black beans, chicken or vegetable broth, and salt. Bring to a boil.
  • Reduce heat to medium low. Remove 1 1/2 cups of the soup to food processor or blender; puree and stir the bean mixture back into the soup. Serve hot by itself or over rice.

1 pound lean ground turkey
1 large green pepper, chopped
1 medium onion, chopped
2 tablespoons chili powder
1/2 teaspoon salt
1/4 teaspoon pepper
1/8 to 1/4 teaspoon cayenne pepper
1 can (15 ounces) no-salt-added tomato sauce
1 can (15 ounces) black beans, rinsed and drained
1-1/2 cups frozen corn (about 8 ounces), thawed
1 large tomato, chopped
1/2 cup water
Shredded cheddar cheese, optional

Steps:

  • In a 6-qt. stockpot, cook and crumble turkey with green pepper and onion over medium-high heat until no longer pink, 5-7 minutes. Stir in seasonings; cook 1 minute., Stir in tomato sauce, beans, corn, tomato and water; bring to a boil. Reduce heat; simmer, uncovered, to allow flavors to blend, about 10 minutes, stirring occasionally. If desired, serve with cheese. Freeze option: Freeze cooled chili in freezer containers. To use, partially thaw in refrigerator overnight. Heat through in a saucepan, stirring occasionally; add a little water if necessary.

1 tablespoon canola oil
1 (15 ounce) can black beans, rinsed and drained

I never knew what I was missing until my mother-in-law made this! Everyone begged her for the recipe. A nice and easy way to feed a crowd. Thanks to my mother-in-law this has become a favorite dish! Can be frozen very well and doubled for a larger crowd. Top with your favorite shredded cheese.

1 onion, diced
2 cloves garlic, minced
1 pound ground turkey

Black rice has a slightly sweet and nutty flavor that is so delicious with heat and spice, so I decided to pair it with some Thai flavors in this dish. L.A. has an incredible Thai Town that I've been exploring for years. I love Thai cuisine for its balance of all the flavor experiences at once: spicy, salty, sweet, savory, sour and bright.

1 cup black rice
4 tomatoes, roughly chopped
2 red bell peppers, seeded and chopped
2 stalks lemongrass, outer layers peeled, cut into 2-inch segments
1 tablespoon grated peeled ginger
2 cloves garlic, minced
1/2 teaspoon ground cumin
2 tablespoons fish sauce
2 tablespoons freshly squeezed lime juice
1/2 teaspoon chili garlic sauce or Sriracha
1/2 pound medium shrimp, peeled and deveined
1/4 cup fresh cilantro, roughly chopped
2 tablespoons fresh basil, chopped

Steps:

  • Cook the black rice as the label directs.
  • Meanwhile, combine the tomatoes, bell peppers, lemongrass, ginger, garlic, cumin, fish sauce, lime juice and chili paste in a small pot over medium-low heat and cook, stirring occasionally, 10 minutes.
  • Add the shrimp to the pot and cook, stirring, until the shrimp are just pink, about 3 minutes. Stir in the cilantro and basil and serve over the black rice. While the lemongrass adds amazing flavor, it's very fibrous so make sure to either remove it before serving or just eat around it.

This came from a chili cookbook. If you want it hotter, leave in some of the chile seeds. It calls for some dried herbs, but I prefer to use double the amount of fresh.

3/4 lb dried great northern beans
6 tablespoons olive oil
4 fresh green anaheim chilies, stemmed, coarsely chopped, with seeds
2 fresh red serrano chilies, stemmed, seeded & coarsely chopped
1 fresh jalapeno chile, stemmed, seeded & coarsely chopped
2 medium garlic cloves, finely chopped
1 medium onion, finely chopped
4 cups chicken broth
1 -2 tomatillo, coarsely chopped
1 tablespoon dried oregano
1/2 tablespoon dried basil
1 teaspoon dried thyme
1 bay leaf
1/2 tablespoon salt
1 teaspoon white pepper
1/4 cup unsalted butter, melted
1 tablespoon medium hot pure chile powder
1 tablespoon sweet paprika
1 1/2 lbs medium shrimp, shelled and deveined

Steps:

  • In a large saucepan cover beans with cold water. Bring to a boil over high heat. Boil briskly 5 minutes then remove from heat and let soak 1 hour.
  • Drain and rinse under cold running water. Set beans aside.
  • In saucepan, heat 4 Tbsp of olive oil over medium heat.
  • Add chiles, garlic and onion and saute until onion is transparent 5-6 minutes.
  • Add drained beans, broth, tomatillos, oregano, basil, thyme, bay leaf, salt & pepper, bring to a boil.
  • Reduce heat and simmer, covered until beans are tender about 1 1/2 hours adding a little water if necessary to keep beans barely covered.
  • About 1/2 hour before beans are done, stir together 1/2 of butter with chili powder and paprika.
  • Rub butter mixture evenly over shrimp.
  • When beans are done, heat remaining oil & butter over medium high heat (I actually heat this in a cast iron skillet on my outdoor grill).
  • When mixture just begins to smoke, add shrimp & saute until done & slightly blackened 1 1/2 to 2 minutes.
  • Discard bay leaf from chili and serve in bowls with shrimp and any remaining fresh herbs as a garnish.
