1 lb uncooked jumbo shrimp
1/2 fresh pineapple
6 tablespoons orange marmalade, divided
1/2 cup water
1 tablespoon soy sauce
couple dashes hot sauce (optional)
1 (6 ounce) box long grain and wild rice blend, prepared according to package directions
1/4 cup snipped fresh cilantro

Steps:

  • In a small saucepan combine 4 tablespoons of the marmalade, water, soy sauce and optional hot sauce; set aside.
  • If skewers are wooden, pre-soak approximately 30 minutes.
  • Cut pineapple into 4 crosswise slices; core and cut each slice in quarters to make 16 small wedges.
  • Peel and devein shrimp.
  • Thread on 4 skewers the shrimp alternating with pineapple wedges. Brush some of the marmalade-soy sauce mixture on shrimp and pineapple.
  • Place skewers on rack of an uncovered grill directly over medium heat. Grill 8 to 10 minutes, turning once, until shrimp are opaque and pineapple is heated through. Remove from heat; cover to keep warm.
  • Heat remaining marmalade-soy sauce mixture and bring to a full boil; remove from heat source.
  • Transfer prepared rice mixture to a serving bowl; stir in remaining 2 tablespoons marmalade and cilantro.
  • Serve kabobs with rice and boiled marmalade-soy sauce mixture.

2 tablespoons butter
2 tablespoons raw honey
1 tablespoon fresh lemon juice
1 tablespoon pineapple juice
1 large clove garlic, minced
2 teaspoons low-sodium soy sauce (such as Bragg®)
1 pinch red pepper flakes
4 ounces large shrimp, peeled and deveined
8 (1 inch) cubes fresh pineapple
8 (1 inch) pieces red bell pepper
2 each bamboo skewers, soaked in water for 20 minutes
1 serving cooking spray

Steps:

  • Combine butter, honey, lemon juice, pineapple juice, garlic, soy sauce, and red pepper flakes in a small saucepan over medium-low heat. Simmer until sauce begins to thicken, 3 to 4 minutes. Set aside 1/2 of the sauce for dipping.
  • Thread pineapple, shrimp, and bell pepper alternately onto both skewers and baste with the remaining sauce.
  • Preheat an outdoor grill for high heat (400 degrees F (200 degrees C)) and lightly oil the grate.
  • Grill until shrimp are cooked through and opaque in color, turning halfway, 5 to 7 minutes. Serve with dipping sauce.

1/2 cup thick teriyaki sauce
1 tablespoon minced fresh ginger
1 tablespoon sugar
1/2 teaspoon crushed red pepper flakes
1 dash kosher salt
3 cloves garlic, minced
2 green onions, sliced
Juice of 1/2 lemon
1 fresh pineapple
2 pounds jumbo shrimp, peeled and deveined
1 pound bacon, package sliced in half

Steps:

  • Preheat the oven to 400 degrees F. Set a roasting rack in a large baking pan.
  • To make the marinade, pour the teriyaki sauce in a bowl and then throw in the ginger, sugar, crushed red pepper, salt, garlic, green onions and lemon juice. Stir it around and set it aside.
  • Next, cut the pineapple into chunks by lopping off the top, slicing off the rind, cutting the pineapple into wedges, slicing off the hard inner core and then cutting the slices into chunks. Store half the chunks in the fridge for snacking.
  • Place a chunk of pineapple on top of a shrimp and then wrap the whole thing in one of the half-slices of bacon. Stick a skewer through the whole thing so that it holds the pineapple, shrimp and bacon securely, and lay it on the rack in the pan. Continue with the remaining ingredients. Brush each skewer generously with some of the marinade.
  • Roast the skewers for 10 minutes. Remove them from the oven and brush with a second coat of marinade. Return the pan to the oven and roast until the bacon is sizzling and the shrimp is cooked, about 15 minutes.
  • Serve them hot or at room temperature. Divine!
