This is a to die for dish that is really quick to make. Use only the freshest tomatoes you can find as well as fresh herbs. Serve over linguini or angel hair pasta.

2 lbs shrimp, peeled and deveined
2 tablespoons olive oil
4 cloves garlic, minced
1 tablespoon chopped fresh basil
1 tablespoon chopped fresh parsley
4 -6 fresh ripe tomatoes, peeled and diced
salt and black pepper

Steps:

  • On medium high heat in skillet, add olive oil and when hot, add shrimp and saute quickly for 3 minutes.
  • Add garlic and saute for 1 minute.
  • Add basil and parsley and saute for another minute.
  • Remove shrimp from pan and add tomatoes, salt and pepper and cook for 10 to 15 minutes on low.
  • Return shrimp to pan for approximately 1 minute to heat through.
  • Stir in additional fresh basil, if desired.

1 tablespoon extra virgin olive oil
20 ounces large shrimp, peeled and deveined
2 garlic cloves, minced
1 cup canned tomato, diced, drained
8 ounces dry white wine
2 tablespoons flat leaf parsley, minced
2 tablespoons tomato paste (no salt added)
1 tablespoon fresh oregano, minced or 1/2 teaspoon dried oregano
1/4 teaspoon salt (do not add if tomato paste has salt)
1/4 teaspoon crushed red pepper flakes

Steps:

  • Place a large nonstick skillet over medium heat 30 seconds. Add oil and heat 30 seconds more. Add the shrimp and garlic; cook, stirring constantly, 2 minutes, until just pink.
  • Stir in the remaining ingredients. Bring to a boil; cook stirring frequently, 8 minutes, until the sauce is thickened. Serve immediately.

This is a great, quick to make, dish for when time is short. I usually have all these ingredients on hand and have also used 1 lb. of bay scallops in place of the shrimp. This is an old Good Housekeeping recipe.

1 tablespoon olive oil
1 garlic clove, minced
1 (15 ounce) can tomato sauce
1 (6 ounce) can tomato paste
2 tablespoons chopped fresh parsley
1 tablespoon sugar
3/4 teaspoon salt
1/2 teaspoon oregano
1/4 teaspoon pepper
1 lb frozen shrimp, shelled and deveined

Steps:

  • In a skillet over medium-high heat, in hot olive oil, lightly brown the garlic.
  • Add tomato sauce, tomato paste, parsley, sugar, salt, oregano and pepper and heat to boiling. Reduce heat to low, cover and simmer sauce mixture for about 10 minutes.
  • Add frozen shrimp and cook until shrimp are tender, about 8 minutes, stirring occasionally.
  • Serve over cooked pasta of your choice.

This is such a wonderful and fast Meal to prepare. I tend to have all in my pantry or freezer at all times. Glad that we retired to a place where seafood is abundant. I thaw the shrimp under running water and make the fast sauce while they do that. :-0

- 1 lb. large shrimp, peeled
- 1/4 cup extra virgin olive oil
- 4 garlic cloves, thinly sliced
- 1 tsp. (or less) crushed red pepper flakes
- salt to taste (i only use kosher salt)
- 1 recipe 3 ingredient marinara sauce
- 28 once can plum tomatoes
- 1/4 cup extra virgin olive oil
- 4 cloves garlic, minced
- salt and pepper (free ingredients)

Steps:

  • Season the shrimp with salt (Old Bay Seas. is good too)
  • In a large skillet over med-high, heat 2 TBSP. olive oil. Cook the shrimp in 2 batches until pink/ golden. Give them room and don't over cook. 2-3 minutes per batch. Remove from skillet.
  • Add the remaining oil, garlic and pepper flakes to pan and cook until fragrant, about 1 minute. Add Marinara sauce and bring to a simmer. Return shrimp and heat through. 1-2 minutes. Serve over pasta or rice.
  • 3 Ingredient Marinara Sauce! Makes 2 cups: 1- 28 once can whole plum tomatoes 2 T olive oil 4 cloves garlic, minced Salt, pepper
  • In a food processor or blender puree tomatoes until smooth. In a large skillet heat oil over med. heat, add garlic and cook until fragrant, stirring. Add tomatoes, 1/4 to 1/2 tsp. salt and fresh ground pepper (1/2 tsp.) Bring to a simmer and cook until thickened, about 15 minute. NOTE: some tomatoes are quite acidic, so I taste and add a little sugar or a "glug" of red/sweet Vermouth while simmering. Also during the summer I go to my herb pots outside get 4-5 basil leaves and through them in towards the end. Serve over rice or pasta. My husband has to have fresh grated parmesan on top. :-)
