- 1. Put disposable gloves on. Cut tops off jalapeno peppers and remove seeds. Rinse peppers and you can take gloves off now. Stuff peppers first with a small amount of cheese, then one shrimp and fill remainder with more cheese. Wrap pepper with a strip of bacon, using a tooth pick to secure in place. Place each "kiss" on a broiler pan. Broil until bacon is crispy. Drain on a paper towel and serve on a plate with sour cream for the dipping

My best friend and I used to borrow my Mom's Mazda Miata and cruise the Galveston sea wall during the summer months. We would stop at Fish Tails, along with several other sea wall restaurants, and order these and a drink....

Steps:
- 1. Heat vegetable oil to 350 degrees.
- 2. Clean and devain 1 pound of jumbo shrimp. Slice each shrimp down the center using the sand vein as your guide, careful not to cut all the way through. Also known as butterflying.
- 3. Slice cheese in approx. 1/4 inches thick so that you have one piece of cheese for each shrimp. Place one slice of cheese into each shrimp where you butterflied it.
- 4. Wrap each stuffed shrimp with a slice of bacon, securing it with a toothpick.
- 5. Fry the finished shrimp for approximately 3-5 minutes or until bacon is crispy and shrimp is pink. Drain on paper towels. Enjoy! :o)
SHRIMP KISSES WITH FETA CHEESE
You can never go wrong with shrimp and bacon, but add a little feta and jalapeno and you will be getting kisses from everybody!

Steps:
- Preheat an outdoor grill for medium-low heat, and lightly oil the grate.
- Use a sharp paring knife to cut down the backs of the shrimp nearly all the way through, so you can spread apart the two halves. Open up the shrimp and lay them out onto your work surface. Spoon some crumbled feta cheese onto each shrimp, then top with slivers of jalapeno pepper. Close up the shrimp and wrap each with a strip of bacon; secure with a toothpick.
- Cook on the preheated grill until the bacon has begun to crisp and the shrimp is no longer translucent in the center, 10 to 15 minutes.
