For the shrimp:
Coconut or avocado oil cooking spray
1 cup unsweetened shredded coconut
½ teaspoon paprika
Sea salt and freshly ground black pepper
1 egg
1 pound medium wild shrimp, peeled, deveined, and tails removed
For the salsa:
1 cup diced mango or pineapple
½ cup diced red bell pepper
¼ cup diced red onion
Zest and juice of 1 medium lime
2 tablespoons chopped fresh cilantro or mint
For the sauce:
1 cup loosely packed fresh cilantro
1 medium avocado
Juice of 1 medium lime
1 garlic clove
½ teaspoon ground cumin
Pinch of cayenne
Sea salt and freshly ground black pepper
For serving:
Small (gluten-free) corn tortillas or lettuce cups, finely shredded purple cabbage, avocado slices

Steps:

  • Preheat the oven to 400°F. Place a wire rack on top of a large baking sheet, coat with cooking spray, and set aside.
  • In a medium bowl, mix together the coconut and paprika and season with salt and pepper. In a small bowl, whisk the egg with 1 tablespoon water.
  • Make an assembly line with the shrimp, egg wash, coconut mixture, and prepared baking sheet. Dip the shrimp in the egg wash, then dredge in the coconut, lightly shaking off any excess, then place the coated shrimp on the baking rack. Repeat with the remaining shrimp, spacing them out evenly on the baking rack so they will get crispy instead of steaming.
  • Bake for 12 to 14 minutes, until the shrimp are cooked through and the coconut has started to brown.
  • While the shrimp are cooking, make the salsa and sauce. In a medium bowl, toss together the salsa ingredients and set aside.
  • In a food processor or high-powered blender, add the sauce ingredients and ⅓ cup water. Pulse until smooth, adjusting the seasonings to your taste. If desired, spoon the sauce into a small zip-top bag and cut the tip off of one of the bottom corners (like you would to make a piping bag for icing), just enough to make a small hole. This will make it easier to drizzle your sauce more evenly, but you could also just use a spoon.
  • To assemble the tacos, place 3 to 4 shrimp on a tortilla or lettuce cup, top with shredded cabbage, a spoonful of salsa, and an avocado slice. Pipe or drizzle the sauce over the top.

4 garlic cloves
1 teaspoon coarse salt
2 teaspoons ground cumin
1 teaspoon dried oregano
2 teaspoons sweet paprika
Freshly ground black pepper
Pinch cayenne pepper (or more if you're brave!)
1 cup freshly squeezed grapefruit juice
2 limes, juiced
2 tablespoons extra-virgin olive oil
2 pounds jumbo shrimp, peeled and deveined, tails left intact
2 large ripe and firm mangos, peeled, sliced, and cut into long wedges
4 ears corn, husks and corn silk discarded
3 tablespoons extra-virgin olive oil
Kosher salt and freshly ground black pepper
2 ripe Hass avocados, peeled, pitted, and cubed
1 lime, juiced
1 small red onion, finely chopped
1 red bell pepper, seeded and finely chopped
1 jalapeno pepper, seeded and finely minced
3 tablespoons chopped fresh cilantro or basil, plus more for garnish
2 tablespoons red wine vinegar
6 cups mixed salad greens or baby spinach

Steps:

  • Put wooden skewers in a pan of water for 30 minutes, so they don't burn on the grill.
  • To make the marinade:
  • Put the garlic on a cutting board and coarsely chop. Sprinkle with coarse salt and mash the garlic into a paste with the side of the knife. Put the garlic paste in a bowl. Add the cumin, oregano, paprika, black pepper, and cayenne. Mix to combine. Stir in the grapefruit juice, lime juice, and oil. Pour out about 1/3 of the marinade and put into a small bowl. Reserve for dressing the salad.
  • Thread the shrimp and mango onto separate skewers and put side-by-side in a baking dish. Pour the remaining marinade over the shrimp and mango; cover with plastic wrap. Put in the refrigerator and allow to marinate for about 30 minutes, flipping the skewers occasionally.
  • To make the salsa:
  • Preheat an outdoor grill or grill pan to medium-high (you may also preheat the oven broiler.)
  • Rub the corn with 2 tablespoons of the oil and season with salt and pepper. Put the corn directly on the grill grates (or put in a baking pan if using oven method) and cook until the kernels are slightly charred on all sides, turning every couple of minutes. Remove from the heat. Using a sharp knife, carefully cut the kernels off of the cobs and put in a mixing bowl. Add the avocado, lime juice, onions, bell peppers, jalapeno, cilantro, vinegar, and remaining 1 tablespoon of oil. Season with salt and pepper.
  • Grill (or broil) the shrimp until curled, pink and slightly charred on both sides, about 2 to 3 minutes total cooking time. Cook the mangos until grill marks appear, about 1 minute on each side.
  • Divide the mixed greens evenly among 4 plates. Drizzle the reserved mango marinade over the greens. Top with shrimp and mango skewers and a couple of spoonfuls of the roasted corn and avocado salsa. Garnish with some chopped cilantro serve with remaining salsa on the side.

1 clove garlic, minced
1/2 onion, diced
2 teaspoons ground toasted cumin seeds
1/2 teaspoon hot red pepper flakes

Steps:

  • For the shrimp: In a medium saucepot, heat 1 tablespoon olive oil. Add the garlic and shallots and cook until translucent. Then add the black peppercorns, lemon slices, thyme and the rest of the olive oil.
  • Bring to a boil, and then take off the heat. Let stand for 15 minutes to infuse the flavors.
  • Return the oil to medium heat. Add the shrimp and poach until the shrimp is cooked, 3 to 4 minutes. Remove from the oil to cool.
  • For the salad: Combine the arugula, radishes, watercress and olives in a large bowl. Toss with the olive oil and rice vinegar. Season with salt and pepper.
  • To serve, place a warm Olive Tortilla on a plate and top with a tablespoon of the Cumin Scented Black Beans. Top with 3 pieces poached shrimp, then a small mound of the salad. Top with the Tomatillo Avocado Salsa and some cheese. Drizzle some Lime Sour Cream on top and garnish with cilantro sprigs and lime. Repeat with the remaining ingredients.
  • In the bowl of a heavy duty mixer, place the flour, shortening, olives and salt. Beat with the paddle until crumbly, 3 to 5 minutes. With the mixer running, gradually add the warm water and continue mixing until the dough is smooth, about 3 minutes.
  • Divide the dough into 6 pieces. Roll each piece into a ball and place on a baking sheet or board. Cover with a towel and let rest at room temperature at least 15 minutes or up to 1 hour.
  • Cut out six 12-inch squares of waxed or parchment paper for stacking the tortillas. On a lightly floured board, roll each ball into a 10-inch circle and transfer to a paper square. Stack on a baking sheet or platter and refrigerate until cooking time. Uncooked tortillas can be kept in the refrigerator, well wrapped with paper squares between the layers, up to 2 days.
  • To cook, heat a dry griddle or 12-inch skillet over medium heat. Carefully peel off the paper and cook the tortillas, one at a time, until puffy and slightly brown, 30 to 45 seconds per side. Set aside to cool slightly on a towel-lined platter.
  • In a large skillet over medium heat, add the olive oil, garlic and onions and cook until translucent. Add the cumin and pepper flakes and cook for another minute. Add the beans, 1/4 cup water and season with salt and pepper. Stir together and cook over low heat for 15 minutes to infuse the flavors.
  • To finish, blend about 1/3 of the beans with a touch of water to make a thick paste. Stir this paste back into the whole beans. Just before serving, stir in the cilantro.
  • Combine the tomatillos, avocados, scallions, jalapeno, cilantro, olive oil and lime juice and mix well. Season with salt and pepper.
  • Combine the sour cream, lime zest and juice and season with salt and pepper. Refrigerate until ready to use.

Steps:

  • Place shrimp in a food processor; pulse 10 times or until finely chopped. Set aside.
  • Heat olive oil in a large nonstick skillet over medium heat. Add bell pepper to pan, saute 3 minutes. Add garlic to pan, saute for one minute. Remove from heat. Steps:

  • For the shrimp and pork filling: In a cast iron pan, heat the vegetable oil over medium heat. Place the pork in the pan and saute until brown and caramelized.
  • Once the pork has browned, add the shallots, garlic, and chiles, cook for 1 to 2 minutes.
  • Add the cumin and smoked paprika and stir. Add the shrimp and stir. Once the shrimp has turned pink, add the water chestnuts and stir. Add the sugar, cilantro stems, lime zest and juice, remove from heat.
  • For the tomato salsa: Put the tomatoes and green onions in a small bowl. Add the lime juice, cilantro leaves and stems and mix. Season the salsa with sugar and salt.
  • For the creamed avocado: Put the avocados in a bowl, add the lime juice and chopped green onion. Add the sugar and sour cream. Mash until the mixture is incorporated. Season with salt.
  • To assemble the shrimp and pork tacos: Place the tortilla shells on a plate. Divide the pork and shrimp filling among the tortilla shells. Spoon the filling in the center of the taco.
  • Spoon the creamed avocado and tomato salsa over the tortilla shells. Garnish with cilantro.

1/2 lb. uncooked shrimp
1 boil-in-bag Minute Jasmine Rice
1/2 stick butter
1 avocado
1 lime (or bottled lime juice)
1 ear corn
1 tbsp. olive oil
4 tbsp. grapeseed oil

Steps:

  • Set the oven to 400F. Peel shrimp if necessary. Place ear of corn in oven. Just on the rack is fine, but make sure none of the husk is hanging off. Slice potato into thin slices horizontally, like making potato chips. You'll need about 6. Heat grapeseed oil in pan, then place the potato slices in. Flip when browned, about 4 minutes. Cook 4 minutes on other side. Remove and place on paper towel. Sprinkle with salt and garlic powder to taste. Follow instructions on Minute Rice box for cooking rice. Cover the bottom of a 1-quart pan with water and heat it on the stove. When it starts to steam, begin whisking in the butter 1 tbsp. at a time. Then turn the heat down pretty much as low as it will go. Add the shrimp to the butter. They need to cook about 4-5 minutes on each side. Make sure you watch the liquid carefully. If it starts to bubble either turn down the heat, or remove the pan from the burner if the heat won't go any lower. Once the shrimp have cooked (you'll be able to tell because they'll be pink), take them out of the butter. Take corn out of oven. The husk should be browned from roasting. Remove the husk and cut the corn off the cob. Cut avocado into small cubes. Combine corn, avocado, olive oil, and 1 tbsp. lime juice and toss together. Add salt to taste. (This is how I like to plate it, but you can do whatever obviously) Place a cup of rice on a plate. A dry cup measure also works nicely for a mold. Add about 3-4 shrimp on top of the rice. Spoon some of the butter mixture on top of the shrimp. Place the potato chip on top of shrimp. Top the chip with the avocado corn salsa. This recipe is a lot more filling then it seems (lots of butter, yum). Hope you enjoy it!

1 ear of corn, husked
6 green onions, white and light green parts only (about 5 inches)
1 poblano chile
1 cup cherry tomatoes, halved
2 small Hass avocadoes
1 small bunch cilantro, minced
juice of two small lime
1 garlic clove, minced
1/2 salt
1 tablespoon olive oil
1 lb shrimp, deviened and seasoned with salt & pepper
corn or whole wheat tortilla, warmed

Steps:

  • Heat grill up to medium high.
  • Brush corn, green onions and poblano chile with olive oil and place on grill. Grill until nicely charred. The poblano should be black. This will take about five minutes, flipping occasionally with tongs.
  • When done, remove veggies from grill and let cool on a plate. When cool, peel the now black skin off the pepper, remove the seeds and chop into small dice. Run your knife down the corn to remove the kernels from the cob and place into a bowl with the pepper. Chop onion and place into bowl as well.
  • Add chopped avocado, cherry tomatoes and cilantro to the bowl and add lime juice and salt. Season to taste and set aside.
  • Grill the seasoned shrimp for only a few minutes until pink, being careful because shrimp cook extremely fast. When done, place shrimp into tortillas, top with salsa and eat immediately.

This boiled shrimp and avocado salsa inspired from the Saltgrass Steakhouse is an easy recipe to prepare that is perfect for a light appetizer.

3 cups chopped tomatoes
2/3 cup red onion, chopped fine
1/2 cup yellow sweet onion, chopped fine
2/3 cup Heinz Chili Sauce
2/3 cup fresh cilantro, loosely chopped
2 tablespoons lime juice, freshly squeezed
2 teaspoons jalapeno peppers, finely diced
1 teaspoon salt
1 avocado, diced
1/4 lb shrimp, peeled and deveined

Steps:

  • Boil shrimp in water just until shrimp turns pink. Remove from boiling water and allow shrimp to cool. Chop half of the shrimp into small pieces. In a medium sized bowl combine tomatoes, red onions, yellow onions, chili sauce, cilantro, lime juice, jalapeno pepper, avocado and salt. Stir to combine. Add half of the shrimp to the vegetable mixture. If desired you can place the remaining shrimp on top for decoration or you can simply stir all of the shrimp into the salsa. Serve with chips.
  • Heinz chili sauce is sold in most grocery stores. It is sold near the cocktail sauce. Personally I like to add extra cooked shrimp and avocado to this salsa.

Love this!!! Another of my attempts to make a restaurant dish. We have a 21 month old and we make it a point now not to be seen in public! Just use the serrano pepper seeds to adjust the heat to your liking.

3 large ripe avocados, diced
3 roma tomatoes, diced
1 lb baby shrimp
4 -5 spring onions, chopped
2 large minced garlic cloves
1/4-1/3 cup chili sauce
1 serrano pepper (only use what you need)
1 lime
1/4 cup chopped cilantro
salt and pepper, to taste

Steps:

  • Mix all ingredients except for avocados.
  • Blend well to incorporate flavors.
  • Finally mix in avocados.
  • Chill till serving.
  • We serve with flour tortillas cut into triangles and deep fried till lightly browned.

1/2 cup chopped seeded peeled cucumber
3 tablespoons lime juice
1 jalapeno pepper, seeded and chopped
1 teaspoon salt
1/4 teaspoon pepper
tortilla chips

Steps:

  • In a large bowl, combine the first 11 ingredients. Serve with tortilla chips.
