1 large yellow onion, sliced into thin rings
1 (3 pound) boneless beef chuck roast, trimmed
2 (14.5 ounce) cans chili-seasoned diced tomatoes
1 (14 ounce) can beef broth

Steps:

  • Layer half the onion rings into the bottom of a slow cooker. Place chuck roast on top of onions.

1/2 cup cider vinegar
2 ounces dried ancho chiles (4 to 6 chiles) stemmed, seeded, and torn into 1-inch pieces
2 tablespoons tomato paste
6 cloves garlic, lightly crushed
3 bay leaves
2 teaspoons ground cumin
2 teaspoons dried oregano
Salt and pepper, to taste
1/2 teaspoon ground cloves
1/2 teaspoon ground cinnamon
1 large onion, sliced into 1/2-inch-thick rounds
3 pounds boneless beef short ribs, trimmed and cut into 2-inch cubes
CABBAGE CARROT SLAW:
1 cup cider vinegar
1/2 cup water
1 teaspoon sugar
1 1/2 teaspoons salt
1/2 head green cabbage, cored and sliced thin, about 6 cups
1 onion, sliced thin
1 large carrot, peeled and shredded
1 jalapeño chile, stemmed, seeded, and minced
1 teaspoon dried oregano
1 cup fresh cilantro, chopped
18 (6-inch) corn tortillas, warmed
4 ounces queso fresco, crumbled, about 1 cup

  • Position your oven rack to the lower-middle position and heat the oven to 325°F. Meanwhile while the oven heats, combine the beer, vinegar, anchos, tomato paste, garlic, bay leaves, cumin, oregano, 2 teaspoons salt, 1/2 teaspoon pepper, cloves and cinnamon in a Dutch oven. Arrange the onion rounds in a single layer on bottom of the pot. Place the beef on top of onion rounds, in a single layer. Cover and cook until the meat is well browned and tender, 2 1/2 to 3 hours. While your beef mixture is cooking whisk the vinegar, water, sugar and salt in a large mixing bowl until the sugar is dissolved. Add the cabbage, onion, carrot, jalapeño, and oregano and toss to combine. Cover and then refrigerate for at least 1 hour or up to 24 hours. Drain this slaw mixture and stir in the cilantro right before serving. Using a slotted spoon, transfer your beef mixture to a large bowl, cover loosely with aluminum foil, and set aside. Strain the meat mixture's left over liquid through a fine-mesh strainer into a 2-cup liquid measuring cup (mind to not wash the pot). Discard the onion rounds and the bay leaves. Transfer the remaining solids to a blender. Let the strained liquid settle for 5 minutes, then skim any fat off surface. Add the water as needed to equal 1 cup. Pour this liquid in blender with reserved solids and blend until smooth, about 2 minutes. Transfer sauce to the now-empty pot. Using two forks, shed beef into bite-size pieces. Bring the sauce to simmer over medium heat. Add the shredded beef and stir and coat. Season with salt to taste. (Can be refrigerated for up to 2 days; gently reheat before serving.) 2 -3 lbs beef roast (the pot roast cut)
1 onion (peeled quartered)
1 green pepper (seeded quartered)
5 -6 chipotle peppers, they are SPICY so adjust down if you dont like too much spice (canned in adobo)
1 cup fresh cilantro, rough chopped
5 -6 garlic cloves, smashed with edge of knife to peel
2 -3 teaspoons cumin, to your taste
2 -3 teaspoons oregano, to your taste
1 cup water
2 -3 teaspoons salt
2 -3 teaspoons pepper
2 -3 tablespoons olive oil

Steps:

  • Liberally salt and pepper roast then brown on all sides 5-8 minutes using olive oil in the bottom of the pressure cooker pan.
  • While the meat is browning chop onions, green peppers, cilantro, and get garlic peeled/smashed.
  • Remove roast onto platter. Drain excess fat/oil from pan. Put grate in bottom of the pressure cooker (don't worry if you dont have a grate), add meat, onions, green peppers, garlic, cilantro and chipotles. Season all with cumin and oregano to taste, add 1 cup of water. ** If no Pressure cooker don't worry, cover meat with water and simmer for 1 1/2 - 2 hours till tender.**.
  • Close pressure cooker, bring to pressure, then reduce heat and cook at 15psi for 1 hour, let cooker cool down naturally.
  • Remove meat from cooker to rest for 5 minutes, discard veggies (or if you prefer extra SPICY shred them up with the meat). Reserve a small amount of the liquid in pan.
  • Shred meat with two forks (discard any fat/gristle), return to reserved liquid and keep warm on low heat until ready to use in burritos or tacos with your favorite fillings.

1 -2 tablespoon olive oil
2 lbs boneless beef chuck
1 teaspoon chili powder (chipotle or ancho works well)
1/2 teaspoon cumin
1/2 teaspoon smoked paprika

1 cup beef stock
1 tablespoon tomato paste
1 chipotle chile in adobo, minced (adding a little of the sauce)
1/2 large onion, diced
3 garlic cloves, minced

Steps:

  • Heat the olive oil in a large, heavy skillet over medium-high heat. Meanwhile, combine the chili powder, cumin. smoked paprika and salt in a small bowl.
  • Rub the spice mix into the beef, covering each side evenly. Once the oil is hot, place the beef in the skillet and sear on each side. Do NOT MOVE the meat while it cooks for 2-3 minutes on each side.
  • Remove the beef from the skillet and place in the bottom of a slow cooker. Leave the pan on the heat and add in the beef stock to deglaze, scraping up any browned bits from the bottom of the pan. Add the tomato paste and minced chipotle and whisk into the pan sauce. Bring the sauce to a boil, reduce the heat, and simmer for a few minutes until the sauce has reduced and thickened slightly.
  • Add the diced onion and minced garlic on top of the seared beef in the slow cooker. Pour the pan sauce over the onions, garlic and beef. Cover and cook on low for 6-8 hours or high for 3-4 hours until fork tender.
  • Remove the beef from the slow cooker and shred with two forks. Use a slotted spoon to remove the onions from the slow cooker and mix into the shredded beef.

  • For the Short Ribs: Lightly crush your 6 garlic cloves and peel. Remove and discard the stem and seeds from your dried ancho chiles and tear into 1″ pieces. Slice your onion into 1/2″-thick rounds. Trim away any excess fat from your beef and cut into 2″ cubes. Set a rack to the lower-middle of your oven and pre-heat to 325-degrees. In a Dutch oven, add bottle of beer, 1/2-cup vinegar, ancho peppers, tomato paste, crushed garlic, 3 bay leaves, 2 teaspoons cumin, 2 teaspoons oregano, 2 teaspoons salt, 1/2 teaspoon pepper, cloves, and cinnamon. Set out onion rounds into a single layer on bottom of pot, which will keep the meat elevated. Arrange the beef on top of onion in single layer. In a large bowl, add 1 cup vinegar, 1/2 cup water, 1 tablespoon sugar and 1-1/2 teaspoons salt. Whisk until dissolved. Prepare your vegetables adding to the vinegar mixture as you go. 2 fluid ounces dry red wine (regular or nonalcoholic)
4 ounces reduced sodium ketchup
2 tablespoons cider vinegar
6 garlic cloves, minced or 1 tablespoon instant minced garlic
2 teaspoons low-sodium beef bouillon cubes
2 bay leaves
3/4 teaspoon liquid smoke
1 teaspoon ground cumin, divided
1/2 teaspoon red hot pepper sauce
1/4 teaspoon pepper

  • Put meat in slow cooker.

  • 1. Place chuck roast in crockpot, add garlic, onion soup mix and pepper. Cover with water and cook on high overnight. You could even add a can of green chilli or jalapeño depending on your taste.
  • 2. Take roast out, shred and place in colander to drain. Get as much liquid put of the meat as possible.
  • 3. Heat a small amount of oil in a pan and dip the corn tortillas in to soften. If you are using flour tortillas you can skip this step. Don't cook too long. Take out tortilla, blot off excess oil and roll meat inside. Set aside and do remaining tortillas and meat until gone.
  • 4. Heat 3 Inchest of oil in a frying pan to 375°. Taking tongs pick up tacos holding them closed with the tongs and hold under oil until they are hard enough to stay closed. Let cook a couple more minutes until crisp. Place on paper towel to drain .
  • 5. Place a bed of shredded lettuce on a plate, top with tacos, guacamole, sour cream and hot sauce if desired. Enjoy!

3 large jalapenos (fresh or pickled)

chopped tomatoes

  • 1. Place beef and onion in slow cooker.
  • 2. Combine water, Pace and seasoning mix in small bowl.

This is to easy and delicious. I use a pressure cooker for this, so it is very fast to prepare. The preparation and cooking time does not include about 15 minues of waiting time for meat to cool off. Do not use bottled or fresh salsa for this recipe. It requires the 8 oz canned salsa casera found in the Mexican food section of the market. I use Embassa brand. Herdez brand is almost as good. We usually use this for taquitos. This makes enough for 36 taquitos.

3 lbs flank steaks or 3 lbs chuck roast
2 onions, peeled and cut in half
4 garlic cloves, peeled and left whole
4 cups water
1 tablespoon beef bouillon (I use Knorr)
2 (8 ounce) cans salsa, casera
1 onion, finely diced
1 bunch cilantro, leaves only, chopped finely

Steps:

  • Place meat in pressure cooker.
  • Add water, 2 onions cut in half, garlic cloves and beef bouillon.
  • Cover and cook for 25 minutes after it reaches full pressure.
  • Take off flame and let cool. Open pot when pressure has gone down.
  • Remove meat to cutting board to cool off (reserve broth for other uses).
  • While meat is still warm, slice meat across the grain in narrow slices. Meat will shred easily.
  • Put meat in large bowl or pot. Add the salsa casera, 1 finely diced onion, and cilantro. Mix well.
  • (If you can't find salsa casera, you can use salsa mexicana in the 8 oz can, made by Embasa or Herdez brands).

My family just loves this recipe and so do I because it's so easy!! The true "secret" to this recipe is the garnish (which sounds crazy- but is so good) so don't be afraid to try it. I have also made this with boneless skinless chicken breasts and that is fantastic too.

4 lbs boneless beef roast
2 (1 ounce) packages taco seasoning
1 small onion, diced
2 cups water
5 green onions, finely chopped
1 bunch cilantro, finely chopped
5 radishes, finely chopped
24 corn tortillas
3/4 cup oil
1 dash salt

Steps:

  • In the crockpot, mix taco seasoning, onion and enough water to cover your roast- then add your roast and cook on high for 6 hours or low for 8 to 10 hours. Once the meat is done, use a fork to shred it and place back into the crockpot.
  • For the garnish mix the radishes, green onions and cilantro in a container with lid and shake to mix thoroughly. You can mix this up right before meal time or make it early and just chill until you are ready to serve.
  • The tortillas should be done close to meal time. Using a small fry pan, heat oil on a medium high heat until hot. Fry the tortillas one at a time because they cook quickly. Using tongs place tortilla in the oil on one side for 1 to 2 seconds then flip it over and fold in half- use the tongs to gently spread the shell open. Fry that side for about 15 seconds and then flip the shell over and fry for about 15 seconds. Place the shell on a plate with a couple of paper towels and salt lightly while still hot.
  • Use a slotted spoon to put meat into the shells and then top with the garnish and other toppings to your taste- cheese, tomato, salsa, jalepenos, etc. Enjoy!

2 pounds beef brisket
2 tsp. chili powder
1 tsp. cumin
1/2 tsp. smoked paprika
1 cup beef stock
2 Tbsp. tomato paste
1 chipotle pepper in adobo sauce
1/2 large sweet onion, diced
1 can of roasted tomatoes with chilis (from TJ's)
4 cloves garlic, minced

Steps:

  • salt beef - apply spices & sear. Put in crock pot. Meanwhile brown onions & garlic, deglaze with liquid and add everything to crock pot. Cook on low for 6-8 hours. Remove meat shred, strain liquid, remove fat, reduce slightly. Can sweeten with brown sugar/maple syrup or leave as is (spicy) and squeeze some lime juice in.

1 1/2 lbs eye of chuck (which is NOT beef chuck roast)
4 tbsp vegetable oil
2 tbsps vinegar
2 tbsps fresh lime juice
1 1/2 tsps ground cumin
1 1/2 tsps chili powder
3 garlic cloves, minced
1 cup beef stock
salt to taste
~ 24 corn tortillas
lettuce, queso fresco, salsa, guacamole, etc. (for toppings)

Steps:

  • Trim the fat and cut the beef into 1 inch thick slices. In a ziploc bag, combine the oil, vinegar, lime juice, cumin, chili powder, and garlic. Place the meat slices in the bag, seal, mix it around and refrigerate for at least 4 hours or overnight. Bring the meat to room temperature. Place all contents from the bag in a baking dish with the beef stock. Cover the dish and bake for 1 1/4 hours (I baked it for 2 1/2 hours) at 350°F. Let the meat rest for 10 minutes and then shred it with forks or process it quickly in a food processor with the plastic dough blade (I prefer the forks method). Salt the meat to your liking. Fry the tortillas lightly in a little hot oil. I like to double the tortillas and stuff them with shredded beef, lettuce, cheese, guacamole, and salsa.

SHREDDED BEEF AND SWEET POTATO TACOS

1 1/2 pounds boneless chuck roast
1 (14.5 ounce) low sodium beef broth
2 sweet potatoes (peeled and cubed)
1 onion (diced)
1 (1 ounce) packet low sodium taco seasoning (divided)
1/2 cup water
2 Tablespoons olive oil
1/3 cup light sour cream
2 teaspoons hot sauce (we used Frank's)
2 Tablespoons Cilantro (chopped)
6 flour tortillas

Steps:

  • Place roast in slow cooker. Pour low sodium beef broth over top and cook on low for 6 hours.
  • During the last 30 minutes of cooking time, cook the sweet potatoes by placing them in a skillet with the onion and taco seasoning (reserve 1/2 teaspoon taco seasoning for the dipping sauce).
  • Pour water over all. Cover and cook for about 10 minutes over medium heat.
  • Add olive oil and cook for a few minutes longer or until potatoes are fork tender and start to brown.
  • In another bowl make the dipping sauce by mixing the sour cream, hot sauce, and 1/2 teaspoon taco seasoning until smooth and creamy. Set aside for dipping.
  • When beef is done cooking, shred with a fork.
  • Add beef to the potato mixture and stir together.
  • Spoon onto tortillas and garnish with chopped cilantro.
  • Serve with dipping sauce made above.

¼ cup vegetable oil
2 tablespoons vinegar
2 tablespoons lime juice
1 ½ teaspoons ground cumin
1 ½ teaspoons chili powder
3 cloves garlic, minced
1 ½ pounds beef chuck roast, trimmed and cut into 1-inch thick slices
1 cup beef stock
salt to taste

Steps:

  • Whisk together vegetable oil, vinegar, lime juice, cumin, chili powder, and garlic in a bowl and pour into a resealable plastic bag. Add the sliced beef, coat with the marinade, squeeze out excess air, and seal the bag. Marinate in the refrigerator for 4 hours or overnight.
  • Bring beef to room temperature, about 20 minutes.
