Each bite bursts with flavor as it practically melts in your mouth! The tasty burrito filling can also be used for tacos, enchiladas, or nachos. Leftovers, that is IF you're lucky enough to have any, freeze well.

Steps:
- Fry bacon until crisp; remove bacon from pan and brown chicken thighs in the hot bacon fat; add onions and season thighs, adjusting amounts according to your preference.
- With a large slotted spoon, transfer browned thighs and onions into crockpot then pour beans and rotel over the top; cover and cook on low for about 8 hours.
- Before serving, remove skin and bones from the now falling-apart-tender chicken and shred the meat (be careful it will shred fast) then gently stir in the cream cheese.
- To serve: Place hot meat mixture and your choice of optional garnishes onto a softened tortilla then roll into a burrito and Treat Yourself! to a wonderful easy meal!

- In a large cast-iron or other heavy skillet, cook beef over medium heat until no longer pink; drain. Stir in taco seasoning; remove from skillet and set aside. Wipe skillet clean. , In a small saucepan, cook refried beans over medium-low heat until heated through, 2-3 minutes. , Spoon about 1/3 cup of beans off-center on each tortilla; top with 1/4 cup beef mixture. Sprinkle with cheese. Fold sides and ends of tortillas over filling and roll up., In same skillet over medium-high heat, brown burritos in oil on all sides. Serve with sour cream and salsa. Freeze option: Individually wrap cooled burritos in paper towels and foil; freeze in a freezer container. To use, remove foil; place paper towel-wrapped burrito on a microwave-safe plate. Microwave on high until heated through, turning once, 3-4 minutes. Let stand 20 seconds.

This is the easiest meal I have ever made! Assemble in the crockpot the night before and plug in before you leave for work.

Steps:
- Place onion rings in bottom of crockpot. Place meat on top. Add water. Sprinkle ONE package of seasoning on top.
- Cook on low for 8 hours.
- Shred roast with forks. Add second package of seasoning and stir well. Turn on high for 1/2 hour.
- Assemble burritos using tortillas, cheese, tomatoes, lettuce, and sour cream.
