Steps:
- Combine feta and yogurt in a large bowl and whisk until well blended. Add lemon zest and juice, olive oil, 1 1/2 teaspoons dill and 1 1/2 teaspoons mint. Season to taste with salt and pepper. Mix until well blended. If not serving immediately, cover and chill until ready to serve.
- Transfer to a serving bowl and garnish with the remaining herbs, a drizzle of olive oil and a sprinkling of sesame seeds. Serve with watermelon spears.

CREAMY PHYLLO CHEESE STRAWS IN PESTO
Steps:
- Preheat oven to 375 degrees F.
- In a small bowl, combine the cream cheese, lightly beaten egg, Parmesan, and salt. Stir to combine. Spoon mixture into a plastic zip-top bag. Set aside. To use as a pastry bag, cut corner off bag to make a 1/4-inch diameter opening.
- Lay out thawed phyllo dough. Working quickly to keep dough from drying out: brush top sheet with melted butter, pipe cheese filling along long edge of phyllo 1/2-inch from each end. Fold over ends to seal in filling and roll up straw. Repeat with remaining sheets of phyllo and place on a baking sheet. Bake until golden, about 10 minutes.
- Serve warm with pesto for dipping.
SHELLY'S CILANTRO FETA DIP
This is another adoption from Shelly's recipes. Shelly had suggested it to me while I was planning for a party, and I prepared it to receive rave reviews from my guests. (I guess that they liked cilantro and feta. LOL) The immeasurably cute Shelly's comments from the time of posting are as follows: From Southern Living. I made this once for a co-worker's birthday only to find out later she hates cilantro AND feta! Oops! If you like those ingredients, you'll like this simple dip. Did not include optional soaking of feta in milk in prep or cook time. Cook time is the chilling time.

- OPTIONAL: Place feta and milk in bowl.
- Cover and refrigerate overnight (8 hours).
- This removes sodium content.
- Drain and discard milk.
- Process feta, cream cheese, sauce, cilantro and garlic in food processor until smooth.
- Cover and refrigerate at least 30 minutes.
- Serve with crackers, chips or veggies.

HERBY FETA AND YOGURT DIP WITH SUMAC
This tangy and creamy dip is the perfect appetizer for a warm summer evening outside, and it makes a nice condiment for grilled meats and veggies, too. Fresh green herbs brighten up the salty feta, and sumac gives it another layer of flavor and a gorgeous pop of color. Choose a feta in brine over vacuum-packed, if you've got the option. Feta varies a lot in salt content, so you won't see a measured amount of salt here; just taste the dip and add a bit if you think it needs it.

Steps:
- Add the yogurt, feta and lemon juice to the bowl of a food processor. Purée the mixture until smooth, about 2 minutes. Add the parsley, mint, scallions and sumac, and pulse a few times just to combine.
- Transfer the dip to a bowl, cover and refrigerate for at least 1 hour before serving.
- Just before serving, give the dip a good stir and add salt to taste, if necessary. Top the dip with a drizzle of olive oil and sprinkle with additional parsley, mint, scallions and sumac. Serve with pita chips or crudités. Store leftovers, covered, in the fridge for up to 3 days.
