Kids love this, and we always get rave reviews and requests for the recipe. You can add additional vegetables as desired (broccoli, snow peas, etc.), though you may then need to increase the amount of peanut sauce if you add significant amounts of veggies.

7 ounces Chinese-style chow mein stir-fry noodles
¼ cup soy sauce
3 tablespoons creamy peanut butter
3 tablespoons vegetable oil
2 tablespoons white sugar
4 teaspoons rice wine vinegar
4 teaspoons sesame oil
vegetable oil, divided
2 teaspoons sesame oil, divided
3 skinless, boneless chicken breast halves, cut into cubes
1 tablespoon minced garlic
1 tablespoon minced fresh ginger root
2 cups thinly sliced cremini mushrooms
2 cups bean sprouts
½ cup chopped green onion
¼ cup chopped cilantro

Steps:

  • Bring 2 quarts lightly salted water to a boil. Cook chow mein in the boiling water, stirring occasionally, until cooked through but firm to the bite, about 12 minutes; drain.
  • Whisk soy sauce, peanut butter, 4 teaspoons vegetable oil, sugar, vinegar, and 4 teaspoons sesame oil together in a bowl until smooth.
  • Heat 2 teaspoons vegetable oil and 1 teaspoon sesame oil in a large skillet over medium-high heat. Saute chicken, garlic, and ginger in hot oil until chicken is no longer pink in the center, 5 to 10 minutes. Remove chicken mixture with a slotted spoon to a bowl, retaining drippings in the skillet.
  • Heat an additional 1 tablespoon vegetable oil and 1 teaspoon sesame oil in the skillet with the drippings; saute mushrooms until fragrant, 15 to 30 seconds.
  • Return the chicken to the skillet; add drained chow mein noodles, bean sprouts, and green onion. Toss mixture to distribute chicken and vegetables throughout the noodles. Drizzle peanut sauce over the noodles and toss to coat; cook until sauce is warmed, about 1 minute. Remove skillet from heat and garnish with cilantro.

1 (16 ounce) package angel hair pasta
3 tablespoons peanut oil, divided
4 boneless, skinless chicken breast, cut into 1/2 inch pieces
2 cups shredded carrots
2 cups sliced celery
6 green onions, chopped
3 tablespoons Chinese black bean and garlic sauce
1 ½ cups chicken broth
1 teaspoon soy sauce
1 tablespoon cornstarch
1 tablespoon sesame oil

Steps:

  • Fill a large pot with lightly salted water and bring to a rolling boil over high heat. Once the water is boiling, stir in the angel hair pasta, and return to a boil. Cook the pasta uncovered, stirring occasionally, until the pasta has cooked through, but is still firm to the bite, 4 to 5 minutes. Drain well in a colander set in the sink.
  • Heat 1 tablespoon of peanut oil in a skillet over medium-high heat, then add chicken breast. Cook and stir chicken until no longer pink inside, about 10 minutes; set aside.
  • In the same skillet, heat the remaining 2 tablespoons of peanut oil over medium-high heat and mix in carrots, celery, and green onion. Cook and stir until tender yet still crisp, 5 to 6 minutes. Mix in Chinese black bean and garlic sauce; cook and stir for another minute. In a separate bowl, mix chicken broth, soy sauce, and cornstarch; add sesame oil. Pour mixture over vegetables and simmer until thickened. Toss in drained pasta, stirring until well-coated and heated through.

8 ounces thin spaghetti
1 large carrot, chopped
1 large onion, chopped
water
salt
2 tablespoons peanut butter
2 tablespoons hot water
3 tablespoons light soy sauce
1/2 teaspoon sesame oil
1/2 teaspoon ginger powder
1/4 teaspoon garlic powder

Steps:

  • Boil pasta in water with salt. Add carrot and onion. Cook until pasta is al dente and drain.
  • Place peanut butter in a small bowl. Using hot tap water, stir into peanut butter. (May adjust by using more water if desired thinner sauce).
  • Add remaining ingredients and stir into noodles. Serve warm or cold.

An every day lo mein recipe. I eat a lot of Chinese food but I've never been to china. (Thin spaghetti noodles can be subbed for price/convenience). If no oyster sauce available use 1/4 cup teriaki sauce

1 1/2 lbs chicken breasts
1 small white onion, diced
2 large carrots, diced
2 stalks celery, chopped
1/2 large green bell pepper, diced
12 ounces chinese wheat flour noodles
2 eggs (optional)
salt and pepper
1/4 cup soy sauce
1/2 tablespoon sesame oil (optional)
4 tablespoons oyster sauce
5 tablespoons vegetable oil
1 (12 ounce) bottle sesame and ginger marinade

Steps:

  • Chop all veggies and set aside seperately. Boil water in a large pot. Add carrots and celery first and cook for 7 minutes, drain set aside in large bowl. Add noodles to water and cook for time directed stirring occasionally. When noodles are cooked drain and rinse with cold water and set aside in the veggie bowl. Rinse the pot as we will be using it again.
  • Heat 2 tablespoons oil in large frying pan over med-high heat. Cut chicken in 2 inch cubes and lightly season with salt and pepper. When pan is hot (not too hot and shouldn't be smoking) add chicken and cook 4-5 minutes for chicken to brown a little on the bottom and turn all pieces then add onion. Reduce heat to medium and cover set timer for 7 minutes.
  • Now heat 3 tbsp oil in bottom of pot at medium heat. When oil is hot add eggs. Let whites cook most of the way through (about 60-90 seconds). Then take a spatula and break yolks and begin chopping and stirring until they are in very small pieces. Add green pepper, stir, remove from heat, add sesame oil.
  • About now the chicken should be close to done. Check a larger piece for doneness. If done remove from heat, if not stir and move on to next step.
  • Add noodles/veggies to oil/egg, then add soy/oyster/teriaki sauce, and stir very well. The pasta should have a very light oil coating (light is key). When pasta is hot again add chicken to the top. Slowly add sesame ginger marinade to taste. Stir well and enjoy.
