BROWN RICE WITH SESAME SEEDS
I have been making this for years as a variation on the way my folks taught me how to make white rice.

Steps:
- Saute rice in butter just until translucent and very lightly browned.
- Add onion and sesame seeds, and continue browning until onion is translucent, stirring frequently to prevent onion from burning.
- Drain any excess butter or olive oil.
- Add stock or water carefully to prevent steam burns; it WILL blow steam!
- Adjust heat for a slow simmer, cover, and cook about 45-50 minutes, stirring gently every 15 minutes.
- If all liquid is not absorbed, remove cover and continue cooking for up to another 15 minutes.
- Fluff with a fork before serving.
BROWN RICE, SESAME, SPINACH AND SCALLION PANCAKES

- 1. Sift together the flour, baking powder, baking soda, salt and turmeric. Stir in the sesame seeds. 2. In a separate bowl, beat the eggs and whisk in the buttermilk, milk and canola oil. Quickly whisk in the flour mixture and fold in the brown rice and scallions. 3. Steam the spinach over 1 inch of boiling water for 2 minutes, or just until wilted. Rinse with cold water, squeeze out excess water and chop. Stir into the pancake batter, along with the feta. 4. Heat a griddle or a large skillet, either nonstick or seasoned cast iron, over medium-high heat. Brush with butter or oil. Use a 1/4-cup ladle or cup measure to drop 3 to 4 tablespoons of batter per pancake onto your heated pan or griddle. Cook until they are brown on the edges and bubbles break through, 3 to 4 minutes, then carefully slide a spatula underneath and flip them over. Cook on the other side until pancakes are nicely browned. Serve hot.

Steps:
- Place tofu in a colander and drain 10 minutes.
- Pat dry with paper towels.
- Place soy sauce in a shallow dish, add tofu, cover, refrigerate, and marinate 15 minutes, or up to 1 hour, turning once.
- In medium covered saucepan, bring 2 cups vegetable broth or water to a boil.
- Slowly stir in rice, cover, and reduce heat to low.
- Simmer 40 minutes, or until all the water is absorbed.
- Meanwhile, heat the oil in a wok, large skillet, or heavy saucepan over medium-high flame.
- Add garlic and onion and sauté until onions are wilted, 1-2 minutes .
- Add broccoli and red peppers, the remaining 1 1/4 cup broth or water, and cook, stirring frequently, 5 minutes.
- Add mushrooms, water chestnuts, basil, oregano, and black pepper and continue to cook 2 more minutes, or until mushrooms are soft.
- Addsesame seeds and the marinated tofu with soy sauce, and cook, stirring gently, until tofu is heated through, about 5 minutes.
- Serve over the cooked rice.

SESAME BROWN RICE SALAD W/ SHREDDED CHICKEN AND PEANUTS

- 1. Cook rice according to package directions. Transfer rice to large bowl;fluff with a fork.Cool. Add chicken, carrot, onions, peanuts, cilantro and salt to rice. toss to combine. 2. Combine juice and oil and remaining ingredients in a small bowl. Drizzle over rice mixture. Sprinkle each serving with peanuts and cilantro for garnish.

- Heat oil in a 4-quart saucepan with a tight-fitting lid over medium. Add cabbage, ginger, and garlic; cook (uncovered), stirring often, until cabbage is wilted, about 2 minutes. Spoon cabbage mixture onto plate.

BURMESE BROWN RICE WITH SESAME FRIED VEGETABLES

Steps:
- Wash rice thoroughly, then boil in 5 cups of water with the sea salt. Simmer until the rice is tender (about 45 minutes with brown rice.).
- Slice onion finely. Cut radish in 4 pieces. Cut carrot on the diagonal in slices, then cut the slices in strips. Quarter the cucumber lengthwise, then slice. You don't have to peel it.
- Heat oil in a saute pan and stir fry the garlic until it turns brown. Some fresh minced ginger may also be added. Add all the vegetables and stir fry for about 3 minutes. Add sesame seeds and stir fry for two more minutes. Turn off the heat and set aside.
- Add veggies to the rice. Add soy sauce and lemon juice. Serve with tahini poured over all.

- Combine the onion and oil in a large shallow saucepan (with a tight fitting lid).
- Cook over low heat, stirring frequently, for 10 minutes or until onion is golden.
- Stir in the rice and cook 1 minute.
- Add in the garlic; cook, stirring, for 1 minute.
- Add the water; bring to a boil; add in the salt, stir thoroughly, cover and cook 35-40 minutes or until almost all the liquid is absorbed (do not stir).
- Uncover the pot and while it is still on the heat, sprinkle the broccoli, green beans, squash, carrot, and red bell pepper evenly over the surface of the rice.

IZAKAYA SAKURA SESAME-AVOCADO BROWN RICE
A lot of this recipe can be made in advance and pulled together fairly quickly. This recipe is from a restaurant in San Francisco, California.

- Cook the rice in a pot or rice cooker, per directions on the package. Remove from rice cooker and layer on flat baking sheet. Cover and allow to cool completely. Refrigerate until needed.
- Remove rice from refrigerator and scoop into large bowl. Set aside to return to room temperature. Keep covered.
- Mix together the soy sauce, rice vinegar, and 1 tbsp sesame oil. Set aside.
- In a large bowl, fill with ice and water. Set aside. Drain the tofu.
- In a hot skillet, toast the sesame seeds and set aside. Start a large saucepan filled with heavily salted water to a rolling boil.
- Trim the bottoms of the mushrooms clusters and separate. Saute the mushrooms in 2 tbsp of sesame oil, salt to taste. Stir occasionally until mushrooms are well browned. Remove from heat.
- While mushrooms are sauteing, cut broccoli into bite sized pieces and blanch in the hot salted water. Shock broccoli in ice water. Gently wring to dry, then mix with 1 tsp sesame oil and salt to taste. Set aside.
- Cut the tofu into 4 large triangles or cubes as desired. Roll the tofu in the cornstarch or flour.
- Heat large pan and add oil for deep frying. When the oil is heated to at least 350 degrees F, carefully add 2 tofu pieces into the pan.
- Fry, stirring occasionally, until the tofu is golden on both sides. Remove with a slotted spoon and drain on paper towels. Keep warm while frying the remaining tofu.
- Shake the dressing vigorously and mix about half into the rice. Add more to taste. The rice should be well-coated but not sopping wet. Fold in the toasted sesame seeds.
- Spoon out the avocados and cut into 1/2 inch chunks. Season with salt.
- Fold the diced avocados into the rice and transfer the rice into serving bowls. Top with broccoli rabe, beech mushrooms and deep fried tofu. Garnish with additional untoasted sesame seeds.

Set aside. Drizzle sesame oil onto rice evenly and add sprinkle half the sesame seeds. Fluff the rice, then serve. Top with remaining sesame seeds and green onions.
