SERBIAN BAKED BEANS (PREBRANAC)



Serbian Baked Beans (Prebranac) image

Serbian baked beans (prebranac) is a traditional dish that can be made with or without meat, ours being the latter. It's full of flavour using simple ingredients.

Number Of Ingredients 11

5 large / around 800g brown onions, diced*
⅓ cup olive oil
4 cans (400g / 14.10 ounces each) lima beans, drained and washed* (aka butter beans)
2 whole heads (around 80g / 2.82 ounces) of garlic, minced*
1 tablespoon smoked paprika*
1 tablespoon sweet paprika*
1½ teaspoons salt (or to taste)
¼ - ½ teaspoon pepper
1 bay leaf (optional)
Bread of choice
Sauerkraut salad - sauerkraut, olive oil and pepper

Steps:

  • Preheat the oven to 200 degrees Celcius (390 degrees Fahrenheit).
  • Add the onions to a saucepan on high heat with the lid closed. Saute the onions until they become translucent, leaving the lid on between each stir. This will take about 10 minutes.
  • Add in the olive oil and put the lid back on. Saute until the onions begin to brown, then remove from heat.
  • Once the onions are done, add in the rest of the ingredients (besides the bay leaf). Give it a good stir.
  • Add the bean mixture to a ceramic baking dish, and flatten it out with the back of a spatula.
  • Once finished, pour boiled water (around 1½ cups / 330ml) to cover the beans completely. Making sure you are adding just enough to cover them.
  • Place the bay leaf in the middle of the dish.
  • Put the dish carefully in the oven and bake for around 60 minutes or until it starts to brown a little on the top.
  • At this point, change the oven setting to grill and grill the top for 10-15 minutes. Keep an eye on it so that it doesn't burn.
  • Remove from the oven and let sit for 10-15 minutes before serving.

I have seen a lot of different versions of this recipe, but this is the one I make most often. This has appeared in my Church's various cookbooks many times.

3 (16 ounce) cans green beans (You can also use white beans)
3 large potatoes, chopped
2 carrots, chopped
1/4 cup tomatoes, chopped
1/2 cup celery, chopped
4 cups water
1 onion, chopped
3 1/2 tablespoons oil
3 tablespoons flour
salt, to taste
pepper, to taste

Steps:

  • Combine beans, potatoes, carrots, celery, tomatoes, and water in saucepan.
  • Cook until vegetables are tender.
  • Saute onion in oil in skillet.
  • Stir in flour; Cook until brown and add to soup.
  • Simmer for 5 minutes longer.
  • Season with salt and pepper.

Serbian Green Beans image

I first tried this recipe in a 24-hour diner in San Jose, CA. The diner was quite eclectic in its' menu options - a little Mexican - a little Italian, etc., - but mainly American and Greek. I don't know how many of their options were "authentic", but they were all good, including this one. This is great for those who aren't that crazy about green beans; they may very well find they like them prepared this way!

1 package(s) frozen green beans, 9 oz.
1/3 cup(s) butter
2 tablespoon(s) bread crumbs
1/4 cup(s) minced parsley
1/2 teaspoon(s) garlic powder
3/4 cup(s) sour cream
1/4 teaspoon(s) coarsely ground black pepper

Steps:

  • Pre-heat oven to 450º.
  • Cook green beans according to package directions. Meanwhile, place a skillet over medium-high heat. Add butter. Whem melted add bread crumbs. Stir until lightly browned. Remove from heat.
  • Drain green beans in a colander. Put green beans, parsley, breadcrumbs, garlic and black peppper into a small baking dish. Stir to mix. Spread sour cream evenly over green beans.
  • Bake for two minutes. Serve immediately.
