This Marinated Tomato Salad recipe is quick and easy to make. Tomatoes are tossed with basil, herb dressing, and fresh mozzarella cheese!

6 cups diced tomatoes (such as roma or cherry tomatoes)
4 Tbsp. olive oil
2 Tbsp. red wine vinegar
2 tsp. Dijon mustard
2 cloves garlic
1/2 tsp. Italian seasoning
1/4 tsp. kosher salt (plus more for garnish)
1/4 tsp. pepper (plus more for garnish)
1 8 oz. package marinated mozzarella balls (or fresh mozzarella)
1/3 cup fresh basil

Steps:

  • Dice tomatoes until you have enough for 6 cups (the amount of tomatoes used will vary depending on the variety of tomato used). You can dice the tomatoes as large or small as you like.
  • Place the diced tomatoes in a large serving bowl.

Turn a classic caprese salad into a filling meal with fusilli and a white wine vinaigrette.

Kosher salt and freshly ground black pepper
1/3 cup olive oil
2 tablespoons white wine vinegar
1 small shallot, minced
8 ounces dried fusilli
2 cups halved grape tomatoes
2 cups diced fresh mozzarella
1 cup torn fresh basil leaves

Steps:

  • Bring a large pot of salted water to a boil.
  • Whisk together the olive oil, vinegar, shallot, 1/2 teaspoon salt and a few grinds of pepper in a large bowl.
  • Add the pasta to the boiling water and cook according to the package directions. Drain and rinse under cold water to cool; add to the bowl with the dressing.
  • Add the tomatoes, mozzarella and basil to the bowl and toss to combine. Season with salt and pepper. The pasta salad is best if served right away.

3 medium tomatoes, chopped
1 English cucumber, quartered and cut into 1/4-inch slices
1 small green pepper, chopped
1/4 cup thinly sliced onions
12 pitted Greek olives, sliced
2 tablespoons minced fresh parsley
1 tablespoon minced fresh basil
1/3 cup olive oil
2 tablespoons red wine vinegar
2 tablespoons balsamic vinegar
1 teaspoon sugar
1/2 teaspoon salt
1/2 teaspoon dried oregano
1/4 teaspoon pepper
4 ounces fresh mozzarella cheese, cubed

Steps:

  • In a large bowl, combine tomatoes, cucumber, green pepper, onions, olives, parsley and basil. In a small bowl, whisk oil, vinegars, sugar, salt, oregano and pepper. Pour over salad; toss to coat. Cover and refrigerate for at least 15 minutes. Just before serving, toss in cheese. Serve with a slotted spoon.

2 vine-ripened tomatoes
1 package of mozzarella (about 8 ounces)
Fresh basil leaves
1 teaspoon store-bought balsamic glaze
Salt

Steps:

  • Slice the tomatoes and mozzarella into 1/2-inch slices. Set aside.
  • Pick 9 leaves off of the basil stems. Set aside.
  • Get a serving plate and begin to arrange the salad. Alternate the tomatoes and mozzarella slices to form a circle spiraling inwards.
  • Place a basil leaf after each mozzarella slice on the plate.
  • Drizzle the balsamic glaze, salt, and pepper over the salad. It is now ready to serve.

Semi-Dry Tomatoes and Mozzarella Salad image

In the _Today's Gourmet_ series, I wanted to create dishes that were elegant, modern, original, light, and reasonably quick to prepare. TV demanded that the dishes be visually attractive, too.... Partially drying the tomatoes in the oven concentrates their taste, giving them a wonderfully deep flavor and great chewiness. The red of the tomatoes, the white of the cheese, and the green of the basil make this dramatically colorful salad especially enticing. Serve with good crunchy bread.

Number Of Ingredients 9

1 1/2 pounds plum tomatoes (about 6), cut lengthwise into halves (12 pieces)
3/4 teaspoon salt
10 ounces fresh mozzarella cheese, cut into 1/2-inch slices
2 tablespoons drained and rinsed capers
1/2 teaspoon freshly ground black pepper
1 teaspoon chopped garlic
3 tablespoons extra-virgin olive oil
1/2 teaspoon grated lemon rind
About 1 cup (loose) basil leaves

Steps:

  • Preheat the oven to 250 °F. Line a cookie sheet with aluminum foil. Arrange the tomato halves cut side up on the sheet, and sprinkle 1/2 teaspoon of the salt on top. Bake for 4 hours.
  • Remove the tomatoes from the oven (they will still be soft), and put them in a serving bowl. Let them cool, then add the mozzarella, capers, remaining 1/4 teaspoon salt, pepper, garlic, olive oil, and lemon rind, and mix to combine.
  • Drop the basil leaves into 2 cups of boiling water, and cook for about 10 seconds. Drain, and cool under cold running water. Press the basil between your palms to extrude most of the water, then chop finely. Add to the salad, toss well, and serve.

100g lamb's lettuce or baby spinach leaves, or a mixture of both
½ cucumber , cut into ribbons using a vegetable peeler
100g semi-dried tomatoes in oil from a jar (reserve 1 tbsp oil for drizzling)
1 yellow pepper , deseeded and cut into thin strips
125g ball light buffalo mozzarella , cut into slices
2 tsp pumpkin seed
2 tsp balsamic vinegar

Steps:

  • Put the salad leaves, cucumber, semi-dried tomatoes and pepper in a large bowl and toss together. Divide the salad between 2 serving plates.
  • Divide the mozzarella equally between the plates, scatter with pumpkin seeds, and drizzle with balsamic vinegar and oil from the tomatoes.
