Beef Casserole With Semi Sun-Dried Tomatoes image

Adapted from the Sunbeam Slow Cooker Instruction Booklet. A tasty beef casserole with tomato and red wine flavours.

1 kg chuck steaks or 1 kg round steak, cut into 2cm cubes
1/2 cup flour
2 tablespoons olive oil
1 onion, sliced
2 small carrots, diced
2 celery ribs, sliced
1/4 cup tomato paste
1/4 cup red wine
1/2 cup semi sun-dried tomato
2 tablespoons fresh thyme, chopped
2 bay leaves
salt and pepper

Steps:

  • Dust beef in flour, shaking off excess flour.
  • Heat oil in a large frying pan and cook beef in batches until brown. Transfer to slow cooker.
  • To the same frying pan, add onion and garlic, cook stirring for 1-2 minutes or until onion is softened.
  • Add carrots and celery and cook for a further 3 minutes.
  • Stir tomato paste into the vegetables, cook 1 minute.
  • Add wine and allow alcohol to evaporate and liquid to reduce slightly. About 2 minutes.
  • Place vegetables and remaining ingredients in slow cooker. (Go easy on the thyme if you don't like it too herby.)Cover and cook on HIGH 3-4 hours or LOW 5-6 hours.
  • Season to taste and serve hot with mashed potatoes.

500 g pasta shells
2 tablespoons olive oil (preferably extra virgin, as it has a better flavour)
1 (185 g) can tuna, drained and flaked
1/2 cup canned artichoke heart
1/2 cup black olives
1/4 cup sun-dried tomato
1 teaspoon chili, chopped
1 tablespoon fresh basil, chopped
parmesan cheese, to taste.

Steps:

  • Cook pasta.
  • Drain, and return to pan with oil.
  • Toss for 1 minute, then add tuna, artichokes, olives, tomatoes, chilli and pepper.
  • Toss on low heat for 3-4 minutes.
  • Mix in the parmesan and basil, and serve immediately.

Use as many or as few tomatoes as you like, roast for a couple of hours then pack into jars with herbs and olive oil

batch tomatoes (any quantity and any size, from cherry to plum)
olive oil , for brushing and covering
basil or oregano, for topping

Steps:

  • Heat oven to 140C/120C fan/gas 1. Halve tomatoes and arrange over a baking sheet, cut-sides up. Brush lightly with olive oil and put a small piece of shredded basil or oregano on each. Sprinkle with seasoning and bake for 2-3 hrs, depending on size, until semi-dried.
  • Pack into jars and pour over olive oil. Use for salads, sauces, pizza and pasta. Store in the fridge for up to a week.
