2 cups mixed greens
1/4 cup baby arugula
1 cup fresh pineapple, cut into 1/2 inchspears
1/4 red bell pepper, seeds removed,finely diced
1 tablespoon toasted sesame seeds (optional)
2 tablespoons sesame oil
1 tablespoon olive oil (optional)
1 -2 tablespoon raspberry vinegar
1 teaspoon chopped garlic sprouts
1 teaspoon thyme
salt and pepper

Steps:

  • Combine the salad greens and arugula in a colorful bowl or directly on serving plates.
  • Sprinkle the pineapple chunks over the greens and top with sprinklings of red bell pepper and sesame seeds.
  • For the vinaigrette, combine the sesame oil, one tablespoon of the raspberry vinegar, and herbs.
  • Whisk or stir, and taste.
  • Sesame oils vary in quality and flavor—we prefer dark oils with a nutty, toasted flavor.
  • Raspberry vinegars also vary in acetic quality—some taste slightly sweet, while others are more acidic but have stronger raspberry flavor.
  • Adjust all quantities to your preference, and serve in a small vinaigrette carafe.
  • A tiny drizzle on your salad will deliver a cargo of flavor.
  • Wine suggestion: The tropical flavors of a chilled viognier or roussanne would complement spicy dishes like Prawns in Ginger-Peanut Sauce, and would be excellent served with this fruity, yet spicy, salad.

This was served at our wedding and it was really delicious. I thought all spinach salads were pretty much the same until I tried this dressing.

6 cups spinach
1 cup raspberries
1/2 red onion, sliced very thinly
1 cup pecans, candied if you have them
2 tablespoons poppy seeds
2 tablespoons Dijon mustard
2 tablespoons honey
1 cup canola oil or 1 cup safflower oil
1/3 cup raspberry vinegar

Steps:

  • Mix the oil into the poppyseeds, dijon and honey.
  • Add vinegar.
  • Shake well-- this dressing stays emulsified very well.
  • You can toss with the rest of the salad ingredients or toss with just the spinach and then garnish the top with the other ingredients, or plate each serving and pour dressing over, whatever you choose.

4 cups torn red leaf lettuce
1 package (5 ounces) spring mix salad greens
1 cup fresh raspberries
1 cup sliced fresh mushrooms
1/2 cup julienned red onion
1/4 cup crumbled feta cheese
1/4 cup pecan halves, toasted
2 tablespoons 100% raspberry fruit spread, melted
2 tablespoons raspberry vinegar
2 tablespoons canola oil
1/8 teaspoon salt
Dash pepper

Steps:

  • In a large salad bowl, combine the first seven ingredients. In a small bowl, whisk the fruit spread, vinegar, oil, salt and pepper. Pour over salad and toss gently to coat.
