NEELY'S BBQ SAUCE AND DRY RUB SEASONING
This is very good sauce and dry rub to use on just about any kind of meat for BBQ. The Neely's are famous for their BBQ restaurants.

Steps:
- 1. Combine all of the sauce ingredients a large saucepan or dutch oven.
- 2. Over high heat, bring ingredients to a boil, stirring frequently to prevent sticking. Once sauce has come to a boil, reduce heat to a simmer for 2 hours.
- 3. This will save a long time in an air tight bottle or container in the refrigerator.
- 4. NEELY'S SEASONING DRY RUB:
- 5. 1 cup paprika ----3 1/2 tablespoons sugar---1/2 teaspoon onion powder ------Mix all ingredients together in a small bowl. If you make extra you can save it in a airtight container or a freezer ziploc baggie for a long time.
SPAGHETTI SAUCE SEASONING
Steps:
- Grind basil and marjoram in a small food processor or coffee grinder until fine. Combine all ingredients in a small bowl. Store in tightly capped container.

- 1. Combine basil, marjoram, rosemary and oregano in a spice grinder and grind to a powder.
- 2. Combine with remaining ingredients in a small bowl.
- 3. Store in a jar with a tight fitting lid.

- 1. Place vinegar in a medium bowl. Slowly drizzle oil into the vinegar over 5 minutes using an immersion blender. Create a semi-emulsion. 2. Combine black pepper, white pepper, cayenne, onion powder, garlic powder and salt. Combine and rub generously over both sides of Tri-tip roast. Let sit for at least 30 minutes or more. 3. Set grill to sear. Sear meat, turn off sear, and grill to desired doneness. 8 minutes a side for rare, to med. rare. Take off the grill, and let rest at least 10 minutes. 4. Slice against the grain, and serve immediately,
