6 medium baking potatoes
2 tablespoons butter, melted
2 tablespoons canola oil
1 teaspoon seasoned salt

Steps:

  • Cut each potato lengthwise into thirds; cut each portion into thirds. In a large resealable plastic bag, combine the butter, oil and seasoned salt. Add potatoes; shake to coat. , Place in a single layer on a greased baking sheet. Bake, uncovered, at 450° for 10-12 minutes on each side or until tender.

6 medium (about 2 pounds) russet potatoes, cleaned
2 tablespoons grapeseed oil
2 tablespoons freshly chopped rosemary
1 tablespoon freshly chopped thyme leaves
3 tablespoons chopped garlic
2 tablespoons Big Daddy Seasoning, recipe follows
Freshly chopped parsley leaves, for garnish
1/2 cup smokey paprika
1/4 cup granulated onion powder
1/4 cup granulated garlic powder
3 tablespoons seasoned salt
1/4 cup fresh cracked pepper
1/2 cup kosher salt

Steps:

  • Preheat oven to 400 degrees F.
  • Cut potatoes with a mandoline.
  • In a large bowl, combine cut potatoes and grapeseed oil. Add rosemary, thyme, garlic and Big Daddy Seasoning. Toss to coat.
  • Place in a single layer on a greased baking sheet. Bake uncovered for 20 to 25 minutes or until tender, turning once. Remove from oven and toss with chopped parsley.
  • In a large bowl, mix ingredients together.

Perfectly zesty sweet potato fries to accompany veggie burgers and a ton of other dishes-- you'll love them even if you're not as big a fan of sweet potatoes!

2 large sweet potatoes
2 tablespoons olive oil
1 teaspoon paprika
1/2 teaspoon cinnamon
1/4 teaspoon kosher salt
1 dash white pepper

Steps:

  • Scrub the sweet potatoes and leave the skin on (best part.).
  • I like using a french fry cutter (it works sort of like those apple corer/slicer things) for this but if you don't have one, just use a knife to cut the potatoes into shoestrings.
  • Put the raw fries into a mixing bowl, and pour in the olive oil. Toss well to coat.
  • Add the seasonings and toss well again.
  • Arrange the fries on a baking sheet and bake at 400F for 10 minutes.
  • Turn the fries with a spatula and bake for another 10 minutes.
  • Blot any excess oil with paper towels, serve, and enjoy!

2 large baking potatoes, cut into thin strips (skin on)
1 tablespoon grated parmesan cheese
1/4 teaspoon black pepper
1/2 teaspoon paprika
1/4 teaspoon salt
1/2 teaspoon garlic powder
1 -2 tablespoon olive oil

Steps:

  • Preheat oven to 450 degees.
  • Line a baking sheet with foil and spray with non-stick spray.
  • In a large bowl mix the cheese, pepper, paprika, salt and garlic powder.
  • Add the potatoes and toss until well coated.
  • Drizzle the olive oil over the potatoes and toss until coated.
  • Spread the potatoes in a single layer on the baking sheet.
  • Bake for 15 minutes and turn the fries over.
