SEAFOOD SALAD ROLLS

1 pound large shrimp, peeled and deveined, shells reserved
1 tablespoon seafood seasoning, such as Old Bay
10 fresh parsley stems with leaves
10 black peppercorns
1 rib celery, roughly chopped
1 lemon, halved and juiced
1/2 yellow onion
1/2 cup mayonnaise
2 tablespoons Dijon mustard
1 tablespoon chopped fresh parsley
1 teaspoon seafood seasoning, such as Old Bay
1 teaspoon diced pimentos
1 rib celery, thinly sliced
1/2 red onion, finely diced
8 ounces lump crab meat
4 hot dog buns, buttered and toasted, for serving
Lemon wedges, for serving
Clarified butter, for serving

Steps:

  • For the boiled shrimp: Add the shrimp shells, seafood seasoning, parsley, peppercorns, celery, lemon and onion to a large stock pot and fill three-quarters of the way with water. Bring to a boil and cook until the vegetables soften slightly, 5 to 10 minutes (see Cook's Note).
  • Prepare an ice bath in a large bowl. Add the shrimp to the stock pot and boil, stirring constantly, until pink and opaque, 1 to 2 minutes. Remove the shrimp and add to the ice bath until completely cooled.
  • For the salad rolls: In a large bowl, combine the mayonnaise, mustard, parsley, seafood seasoning, pimentos, celery and onion. Fold in the shrimp and crab meat. Cover and chill for at least 30 minutes and up to 2 days.
  • When ready to serve, fill the buns with the seafood mixture and serve with a lemon wedge and some clarified butter.

1/4 pound uncooked bay scallops
1/4 pound uncooked medium shrimp, peeled and deveined
1 teaspoon minced garlic, divided
2 tablespoons olive oil, divided
1 large tomato, peeled, seeded and chopped
1/4 cup finely chopped onion
3 tablespoons minced fresh parsley
3 tablespoons minced fresh cilantro
3/4 teaspoon ground cumin
1/2 teaspoon paprika
1/4 teaspoon salt
1/8 teaspoon pepper
Dash cayenne pepper
Dash ground turmeric
1/4 cup soft bread crumbs
12 sheets phyllo dough, (14 inches x 9 inches)
1/2 cup butter, melted

Steps:

  • In a large skillet, saute scallops, shrimp and 1/2 teaspoon garlic in 1 tablespoon oil for 2 minutes or until seafood is opaque. With a slotted spoon, remove from the pan and coarsely chop; set aside. , In the same skillet, combine the tomato, onion and remaining garlic and oil; simmer for 5 minutes. Stir in parsley, cilantro, cumin, paprika, salt, pepper, cayenne and turmeric. Simmer, uncovered, until liquid is evaporated, about 5 minutes. Stir in seafood mixture and bread crumbs., Cut the phyllo dough into 14x4-1/2-in. strips. Cover with a damp towel until ready to use. Lightly brush one strip with butter. Top with another strip; brush with butter. Place a tablespoonful of seafood mixture near one short side; fold in the long sides and roll up. Brush lightly with butter. , Place on a greased baking sheet. Repeat with remaining phyllo and filling. Bake at 375° for 12-15 minutes or until golden brown.

SEAFOOD SPRING ROLLS 'STICKS' WITH A CITRUS DIPPING SAUCE



Seafood Spring Rolls 'Sticks' with a Citrus Dipping Sauce image

2 cups master seafood mixture (see seafood Shumai recipe)
1 package lumpia wrappers
1 egg with 2 ounces of water
1 lemon, juiced
1 lime, juiced
1/4 cup thin soy sauce
1/8 cup mint leaves, chiffonade
1 pound rock shrimp, diced
1 pound Chilean sea bass, diced
1 pound bay scallops, diced
1 egg
1 tablespoon minced ginger
1 teaspoon sesame oil
1/2 cup chopped scallions
1/4 cup chopped cilantro
Salt and white pepper

Steps:

  • Lay out a lumpia wrapper with corner facing you. Place a small mound of the seafood mixture at the bottom, moisten edges with egg wash, and roll bottom corner towards the middle. Roll very long and thin spring roll 'sticks.' Fold in both sides and continue rolling. Finish roll and let rest. Deep fry at 350 degrees F until golden brown, about 5 minutes. Drain on paper towels. Mix together citrus juices, soy sauce and mint.
  • Slice spring rolls in half on the bias and place on a lined plate with mint sprigs. Serve with small bowl of dipping sauce.
  • In a food processor, add shrimp, bass, scallops, egg, ginger, and sesame oil. Pulse only a little bit to bring ingredients together. Transfer to a large bowl and fold in scallions and cilantro. Season with salt and pepper.

2 cups cooked leftover fish, lobster, shrimp, crabmeat or mussels, or a mixture
1/3 cup mayonnaise, preferably nonfat
2 tablespoons finely chopped scallions
2 tablespoons finely chopped celery
1 tablespoon ketchup
Salt and freshly ground black pepper
4 hot dog buns or other rolls Bread-and-butter pickles

Steps:

  • Finely dice the seafood and put it in a bowl, taking care to pick out any bits of bone, cartilage or shell.
  • Mix the mayonnaise, scallions, celery and ketchup together and season to taste with salt and pepper. Fold this mixture in with the seafood.
  • Lightly toast or grill the buns and pile the seafood mixture on each. Serve with bread-and-butter pickles.

From spanakopita to baklava, the Greeks know how to use phyllo! Here the flaky dough encloses a mixture of spinach, cheese and shrimp, lightly seasoned with lemon. The rolls are easy to make and delicious to eat, particularly with a Greek salad of tomatoes, feta, olives and bell peppers alongside.

1 (10 ounce) package frozen spinach, chopped, thawed
3/4 cup part-skim ricotta cheese
1/3 cup feta cheese, crumbled
1 large lemon, zest
1 teaspoon dried dill weed or 1 tablespoon fresh dill weed, minced
1/4 teaspoon pepper, freshly ground
2 teaspoons olive oil
1 cup onion, diced
4 garlic cloves, minced or 4 garlic cloves, pressed
6 ounces large shrimp, cooked, chopped (or 3 ounces cooked shrimp and cooked crabmeat)
16 sheets phyllo dough, thawed
1/4 cup butter, melted, more if needed

Steps:

  • Squeeze the spinach with your hands to remove excess liquid.
  • Put the spinach in a large bowl with ricotta, feta, lemon zest, dill weed and pepper.
  • Stir to mix well.
  • Heat the olive oil in a medium frying pan over medium heat.
  • Add the onion and cook, stirring occasionally, until the onion is tender, 3 to 4 minutes.
  • Add the garlic and stir 20 to 30 seconds.
  • Add the onion-garlic mixture to the bowl with the spinach; stir until well mixed.
  • Stir in the shrimp and set aside.
  • Preheat the oven to 375 degrees Fahrenheit.
  • Separate 1 sheet of the phyllo dough; lay it on the work surface with the long side toward you.
  • (Keep the stack of remaining dough covered with plastic wrap to prevent it from drying.).
  • Lightly brush the sheet with a little of the melted butter; lay another sheet evenly on top.
  • Lightly brush half of the top sheet with more butter; fold the other half over to make a rectangle 8 x 11 inches.
  • Lightly brush with a little more melted butter.
  • Spoon a generous 1/4 cup of the filling along the bottom edge, leaving 1 inch of phyllo clear on all sides.
  • Lift the bottom end of the sheet and fold it over the filling.
  • Fold the sides over and press lightly; gently roll up.
  • Set the roll seam-side down on a lightly greased baking sheet (you will need 2 baking sheets).
  • Repeat to use the remaining filling and phyllo.
  • Brush the tops of the rolls with melted butter.
  • Bake until golden, 25 to 30 minutes.
  • Serve hot or warm.
