SEAFOOD MARINARA PASTA

A little more elaborate then a basic marinara but still simple, quick and relatively cheap! This recipe will feed 4 people who like to eat or 5-6 light eaters.

1 (16 ounce) package linguine pasta
1 tablespoon olive oil
4 cloves garlic, minced
1 small red onion, minced
1 tablespoon olive oil
2 tomatoes, seeded and diced
3 green onions, chopped
1 (8 ounce) can crushed tomatoes
1 tablespoon tomato paste
1 teaspoon dried oregano
1 teaspoon ground thyme
2 pounds mussels, cleaned and debearded
1 pound uncooked medium shrimp, peeled and deveined
1 cup dry white wine
2 teaspoons lemon juice
1 lemon - cut into wedges, for garnish

Steps:

  • Fill a large pot with lightly salted water and bring to a rolling boil over high heat. Once the water is boiling, stir in the linguine, and return to a boil. Cook the pasta uncovered, stirring occasionally, until the pasta has cooked through, but is still firm to the bite, about 11 minutes. Drain well in a colander set in the sink.
  • Heat 1 tablespoon of olive oil in a skillet over medium heat. Stir in the garlic and onion; cook and stir until the onion has softened and turned translucent, about 5 minutes. Heat another tablespoon of olive oil in a large skillet over medium-low heat. Stir in diced tomatoes and green onion; cook and stir until the tomatoes have softened. Stir onion mixture into the tomatoes, then add crushed tomatoes, tomato paste, oregano, and thyme. Simmer for 5 minutes. Stir in mussels and shrimp, then pour in the wine and lemon juice. Cover and increase heat to high. Cook until shrimp have turned pink and mussels have opened, discarding any that have not opened. Serve over pasta and garnish with lemon wedges.

1 tablespoon olive oil
1/2 onion, finely chopped
2 cloves garlic, finely chopped
1/2 cup white wine
3 cups good quality tomato sauce
1/4 teaspoon red pepper flakes
10 large shrimp, peeled and deveined
10 scallops, rinsed
1/4 cup chopped parsley
12 ounces Angel hair pasta (Vermicelli), cooked and drained

Steps:

  • In a large skillet heat oil over medium high heat. Stir in onion and cook for 2 minutes. Add garlic and cook for 30 seconds. Add white wine and simmer for 2 minutes. Stir in tomato sauce and red pepper flakes. Bring sauce to a simmer and stir in the shrimp. Cook for 1 minute and stir in scallops. Simmer for 2 minutes. Stir in parsley and toss with pasta. Serve immediately.

I like linguine with this recipe, although I think traditionally it's spaghetti. I love seafood, but I've had so many dodgy versions of this that I had to start making it myself. I hate the seafood overcooked so make sure it's only added at the end.

750 g seafood, marinara mix
1 tablespoon olive oil
1 medium onion, finely chopped
2 cloves of minced garlic
200 ml dry white wine
1 (400 g) can diced tomatoes
400 ml tomato passata
2 tablespoons tomato paste
salt and pepper
1/3 cup chopped parsley
500 g pasta eg linguine

Steps:

  • Heat oil in a large saute pan, cook onion and garlic until soft.
  • Add wine and boil briefly before adding tomatoes, passata and paste. Simmer for 15 minutes or until sauce thickens.
  • Meanwhile, cook pasta in a large pan of salted water until just tender, drain.
  • Add marinara mix to the sauce and cook for 5 minutes or until prawns are pink.
  • Stir parsley into sauce, salt and pepper to taste.
  • Serve sauce over hot pasta.

CREAMY GARLICY SEAFOOD MARINARA

Something that the DH and I put together. I have not included the time to cook the pasta (this can be done while you are cooking the seafood). Have had the FIL and MIl cooking this for some cousins (niece on the MIL'd side) but he nieces DH is severe celiac (using gluten free cream and sour cream and so his serve his portion is with rice (but have to up the sauce as the rice sucks it up, where it is coated over the pasta). Also please feel free to change the seafood mix to what you like or for that matter the vegetables, this recipe is not set in stone. Also times are based on prawns being deviened and peeled. fish filleted and just have to cube (sorry but we quite often make this from total scratch, filleting fish, peeling deviening prawns and cleaning squid - add another 1 hour if you are doing this too

500 g prawns (raw, peeled and deviened)
300 g fish (firm, cubed)
1 squid (tube, sliced into rings)
200 g scallops (meat)
6 garlic cloves (crushed or minced)
2 teaspoons ginger (grated)
1 -2 chile (to taste, deseeded and finely sliced)
1 spring onion (scallion, finely sliced)
3 tablespoons cream (thickened)
3 tablespoons sour cream (light)
1 cup broccoli floret
1 cup cauliflower floret
1 cup carrot (juliened)
350 g fettuccine pasta
4 -6 tablespoons peanut oil (to fry seafood)

Steps:

  • Cook pasta as per packet directions (time to have ready for step 10, it needs to be warm, if it goes cold it will stick together and the sauce won't coat it well).
  • Lightly steam vegetables (I normally do in the microwave for a 30 to 60 seconds).
  • Add 2 tablespoons of oil and heat over a medium to high heat in a large frypan or wok, cook fish till just done, remove to a plate.
  • Add more oil, if required and cook the prawns till just cooked through, remove to a plate.
  • Add more oil, if required and cook the scallops till just done, remove to plate.
  • Wipe out the frypan and add more oil and heat up over medium to high heat and quickly cook the squid rings to just done and remove to plate.
  • Wipe frypan clean and heat 1 teaspoon of oil over low heat and add the garlic, ginger and chillies and cook till fragrant.
  • Add the cream and sour cream and lightly simmer for 2 to 3 minutes.
  • Add the cooked seafood and lightly steamed vegetables and stir to coat, lightly simmering for 2 to 5 minutes till heated through.
  • Add cooked pasta and spring onions, stirring to coat the pasta with the sauce.
  • Serve and enjoy.

Delicious seafood sauce. The original recipe was in the Australian Women's Weekly with not too many changes by me. I didn't specify how much pasta as we all like it differently, some saucy, some not so saucy.

1 lb prawns, cleaned, cut up if large
8 ounces scallops, cut in half (depending on the size)
8 oysters
1 (2 ounce) can anchovy fillet, drained and chopped
5 large tomatoes, peeled and chopped
1/2 cup dry white wine
1/2 cup water
2 tablespoons olive oil
3 garlic cloves, crushed
1 tablespoon tomato paste
1 tablespoon parsley, chopped
1 tablespoon mint, chopped
salt and pepper

Steps:

  • Cook and prepare enough pasta,for 4 people, your choice of pasta.
  • Put Wine and water in a skillet, heat to simmer point.
  • Add scallops and cook 1 minute, remove and drain.
  • Heat oil in the skillet.
  • Add tomatoes, garlic and tomato paste, stir until combined, cook 2 minutes.
  • Add all the seafood to the pan and cook 1-2 minutes.
  • Add parsley, mint and season with salt and pepper.

4 lbs mussels (or a combination of both) or 4 lbs clams, cleaned (or a combination of both)
4 tablespoons dry white wine
1 lb spaghetti
4 tablespoons olive oil
2 garlic cloves, very finely chopped
1 red chili pepper, deseeded and finely chopped
8 ounces peeled raw shrimp
1 1/4 cups tomato sauce
2 ounces basil leaves, torn into pieces
1 ounce parsley, leaves only, chopped
salt and pepper

Steps:

  • Place the mussels and/or clams in a saucepan and pour in the wine. Cover tightly and cook over a high heat for a few minutes, shaking the pan occasionally until all the shellfish have opened - discard any that do not.
  • Strain through a sieve reserving 2/3 cup of the cooking water - not the bottom part where the grit is. Remove the meat from the shells and reserve.
  • Meanwhile cook the spaghetti according to pack instructions until al dente.
  • While the spaghetti is cooking heat the oil in a heavy based frying pan, add the garlic and chili and saute for 20 secs. Tip in the shrimp and saute for a further minute.
  • Pour in the tomato sauce and the reserved cooking liquor. Bring to a gentle simmer, then stir in the cooked shellfish, basil and parsley. Season to taste and allow to just warm through.
  • When the pasta is cooked, drain and return to the pan. Pour in the seafood sauce and fold together until well combined. Serve at once.
