This rich satisfying dish, adapted from a recipe given to me by a friend, is my husband's favorite. I usually serve it on his birthday. It's loaded with scallops, shrimp and crab in a creamy sauce. I consider this the "crown jewel" in my repertoire of recipes. -Elena Hansen, Ruidoso, New Mexico

- In a large skillet, saute onion in oil and 2 tablespoons butter until tender. Stir in broth and clam juice; bring to a boil. Add scallops, shrimp, crab and 1/8 teaspoon pepper; return to a boil. Reduce heat; simmer, uncovered, for 4-5 minutes or until shrimp turn pink and scallops are firm and opaque, stirring gently. Drain, reserving cooking liquid; set seafood mixture aside., In a large saucepan, melt the remaining butter; stir in flour until smooth. Combine milk and reserved cooking liquid; gradually add to the saucepan. Add salt and remaining pepper. Bring to a boil; cook and stir for 2 minutes or until thickened. , Remove from the heat; stir in cream and 1/4 cup cheese. Stir 3/4 cup white sauce into the seafood mixture., Preheat oven to 350°. Spread 1/2 cup white sauce in a greased 13x9-in. baking dish. Top with three noodles; spread with half of the seafood mixture and 1-1/4 cups sauce. Repeat layers. Top with remaining noodles, sauce and cheese. , Bake, uncovered, at for 35-40 minutes or until golden brown. Let stand for 15 minutes before cutting.

- Drain noodles. In ungreased 13x9-inch (3-quart) glass baking dish, spread 3/4 cup of the sauce. Top with 3 noodles. Spread half of the crabmeat and half of the shrimp over noodles; spread with 3/4 cup of the sauce. Sprinkle with 1 cup of the mozzarella cheese; top with 3 noodles. Spread ricotta mixture over noodles; spread with 3/4 cup of the sauce. Sprinkle with 1 cup of the mozzarella cheese; top with 3 noodles. Spread with remaining crabmeat, shrimp and sauce. Sprinkle with remaining 1 cup mozzarella cheese.
- Bake 40 to 45 minutes or until cheese is light golden brown. Let stand 15 minutes before cutting. Sprinkle with 1 tablespoon parsley.

- Preheat oven to 350 degrees F (175 degrees C). Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.

- Bring a pot of lightly salted water to a boil. Cook pasta for 8 to 10 minutes, or until al dente; drain, and rinse in cold water. Preheat oven to 350 degrees F (175 degrees C).
- In a skillet, cook onion in butter over medium heat until tender. Remove from heat, and stir in cream cheese, cottage cheese, egg, basil, and salt and pepper.
- In a medium bowl, mix together the soup, milk, wine, crabmeat, and shrimp.
- Lay 3 cooked lasagna noodles on the bottom of a 9x13 inch baking dish. Spread 1/3 of the onion mixture over the noodles. Then spread 1/3 of the soup mixture over the onion layer. Repeat the noodle, onion, soup layers twice more. Top with Cheddar cheese and Parmesan cheese.
- Bake in preheated oven for 45 minutes, or until heated through and bubbly.

- Heat butter in a large saucepan over low heat until melted.
- Add garlic.
- Stir in flour and salt. Cook,stirring constantly until bubbly.
- Remove from heat. Stir in milk, broth and white wine. Return to stove and heat to boiling, stirring constantly.
- Boil for 1 minute. Add mozzarella cheese,onions, basil and pepper.
- Cook over low heat until cheese is melted, stirring constantly.
- Spread about 1 1/2 cups of the sauce in an ungreased 9X13 pan.
- Top with UNCOOKED lasagna noodles, overlapping as needed.
- Spread the cottage cheese over the noodles.
- Spread with another 1 1/2 cups of sauce and then top with another 5 lasagna noodles.
- Spread seafood over this layer and top with another 1 1/2 cups of sauce. Cover with the last 5 lasagna noodles and top with all of the remaining sauce. If desired, top with 1/2 cup grated Parmesan cheese. Bake, uncovered at 350~F for 35 - 45 minutes or until the noodles are tender.
- Let stand for 15 minutes before cutting.

SEAFOOD LASAGNA
Excellent seafood flavor - scallops, shrimp, and crab with just the right amount of creamy sauce. I can never have just one serving of this. I think the clam juice is what gives the sauce such a good flavor. I use precooked shrimp so I don't have to cook them with the scallops at all. I always add extra Parmesan cheese (the real shredded kind, not the powdery grated kind) to the sauce and on top. You can use either white pepper or black pepper.

- In a large skillet, saute onion in oil and 2 tablespoons butter for about a minute.
- Stir in broth and clam juice and bring to a boil.
- Add the uncooked scallops, uncooked shrimp, 1/8 teaspoon pepper, and 1/8 teaspoon garlic salt and return to a boil.

- Cook lasagna noodles in a large pot of boiling salted water until al dente. Drain well.
- Preheat oven to 350 degrees F (175 degrees C).

- Combine the mushroom soup, milk, and garlic. Stir in the white wine , bay scallops, flounder fillets, and shrimp. Set aside.
- Assemble ingredients in a greased lasagna pan as follows: a thin layer of seafood sauce, 1/5 noodles, 1/2 cheese mixture, 1/5 noodles, 1/2 seafood mixture, 1/5 noodles, 1/2 cheese mixture, 1/5 noodles, 1/2 seafood mixture, and remaining noodles. Place mozzarella cheese and Parmesan on the top.
- Bake at 350 degrees F (175 degrees C) for 45 to 60 minutes. Remove from oven, and allow to stand for 10 minutes.

- Preheat oven to 350. Butter a shallow 2-quart casserole with 1 tablespoon butter.
- Combine shrimp and crab in a large mixing bowl, and toss well.
- Heat a large pot of salted water to boiling and cook the noodles according to the package directions, until just tender. Drain and set aside.
- Melt remaining 3 tablespoons butter in a large skillet, add onion and mushrooms and cook, stirring until softened, about 5 minutes. Add onion mixture and lemon juice to the seafood. Season with salt and pepper and toss again.
- Combine eggs, half-and-half, and Parmesan in another large bowl and stir until well blended. Add about two-thirds of the egg mixture to the seafood mixture and stir again to mix well.
- Spread about a third of the seafood mixture over the bottom of the prepared casserole. Cover with 2 of the noodles, then spread another third of the mixture over the noodles, cover with 2 more noodles, and spread the remaining mixture over the top. Cover with the last 2 noodles, pour the remaining egg mixture over the noodles and sprinkle the mozzarella evenly over the top. Bake on the center oven rack until bubbly and golden, about 35 minutes. Let stand 10 minutes before serving.

AUNTY PASTO'S SEAFOOD LASAGNA
This lasagna features a white sauce made with cream of mushroom soup, white wine, crab meat, and shrimp. A wonderful dish to serve guests either at a luncheon or for a dinner party. I have served this dish to so many of my friends, and they have all asked for the recipe.

CREAMY SEAFOOD LASAGNA
Uses no-boil lasagna noodles. Sometimes I use 10 oz chopped broccoli in place of the spinach. Great either way!

- Preheat oven to 350. Have a rectangular lasagna pan handy.
- In a saucepan, melt butter and add garlic.
- Stir in flour and cook until smooth.
- Gradually whisk in the milk until smooth.
- Stir in the parmesan cheese and ONLY 1 CUP of the mozzarella. Add dill. Stir until melted, smooth and thickened. SET ASIDE 1 CUP OF THIS SAUCE TO POUR OVER TOP OF FINISHED LASAGNA.
- In a small bowl, beat together ricotta, egg, salt, scallion and spinach (or broccoli).
- In a separate small bowl, toss together the shrimp and scallops.
- Spread a thin layer of the cheese sauce on the bottom of the lasagna pan.
- Place 3 lasagna noodles across the bottom.
- Spread 1/3 of the ricotta/spinach mixture over noodles.
- Sprinkle 1/3 of the shrimp/scallop combo over top.
- Spread 1/3 cheese sauce over that.
- Repeat these layers two more times.
- End with the last 3 lasagna noodles.
- Evenly top with the reserved 1 cup of cheese sauce and the remaining 1 cup of mozzarella cheese.
- Sprinkle chopped dark green parts of scallions over top; if desired.
- Cover with non-stick foil and bake for 45 minutes.
- Uncover and bake for an additional 15 to 20 minutes.

CREAMY SEAFOOD LASAGNA (TREASURE TROVE #5)
I seem to be on a roll entering recipes from my long-lost treasure trove of recipes newly found. This is #5 of the series & was sent to me by ContentMail as their RECIPE OF THE DAY E-mail for 1/2/2001! They acknowledged Vicky S. who said "While this lasagna takes a bit of effort to prepare, it's so well worth it. It's absolutely fabulous served w/a fresh garden salad & warm garlic bread." ... There are 15 RZ recipes for seafood lasagna & ea is unique & appealing in its own way. Now there will be 16 to enjoy!

Steps:
- Preheat oven to 350°F.
- Heat margarine (or butter) in a 3 qt saucepan over low-heat till melted.
- Stir in the garlic, flour & salt. Cook (stirring constantly) till bubbly & remove from heat.
- Stir in the milk & broth. Return to heat source & bring to a boil, stirring constantly. Boil & stir for 1 minute.
- Add mozzarella cheese, onions, basil & pepper. Cook over low-heat (stirring constantly) till cheese is melted.
- Spread 1/4 of the cheese sauce (about 1-1/2 cups) in an ungreased oblong baking dish (13x9x2 in). Top w/3-4 uncooked noodles (overlap as necessary).
- Spread the cottage cheese over the noodles. Repeat with 1/4 of the cheese sauce & 3 noodles.
- Top w/crabmeat, shrimp, 1/4 of the cheese sauce & then w/the remaining 3 noodles & cheese sauce.
- Sprinkle evenly w/parmesan cheese. Bake (uncovered) till noodles are done (35-40 minutes). Let stand 15 min b4 cutting.

COTTAGE CHEESE SEAFOOD LASAGNA
Mmmm...creamy seafood lasagna with a rich white sauce. I sometimes add broccoli just to give some color (and sneak in those "Five A Day"). I think spinach or zucchini would also be a wonderful addition. YUMMY!!

SEAFOOD LASAGNA ALFREDO
This looks like it should be horribly difficult, but it's really simple. If you are a beginner cook and REALLY want to impress people, this is the recipe for you. I use fresh garlic and garlic powder - feel free to cut back on either. We actually prefer this made with surimi (fake crab meat) rather than fresh crab, but either is fine. Make sure the crab is picked over for shells. Feel free to toss in some scallops too - just saute them for a few minutes in some butter first. Substitute 1 box of chopped broccoli, defrosted, for the spinach, if desired, or omit entirely.

- Preheat oven to 350 deg. F.
- Melt butter in medium saucepan over low heat; add garlic.
- Remove from heat.
- Stir in flour, stir until smooth.
- Stir in milk and broth and return to heat. Bring to boil, stirring constantly. Reduce heat to low.
- Stir in mozzarella, onions, basil and oregano. (add SALT if desired).
- Cook over low heat, stirring constantly, until cheese is melted. Set aside.
- Beat egg, and add ricotta. Mix till smooth. Add pepper, garlic powder and onion powder.
- Spread a thin layer (about 1 cup) of cheese sauce in 13x9-inch baking dish.
- Top with 3 or 4 uncooked noodles.
- Spread 1/2 of ricotta cheese over noodles.
- Sprinkle all of spinach over cheese, trying to avoid clumps.
- Sprinkle with 1/2 of shrimp and crab.
- Pour about 1 cup cheese sauce over, and top with 3-4 uncooked noodles.
- Repeat layers with remaining ricotta cheese, seafood and a final layer of uncooked noodles. Top with all of remaining cheese sauce.
- Sprinkle with parmesan or romano cheese.
- Bake, uncovered for about an hour.
- Let stand 10 minutes before serving.
CHRISTMAS SEAFOOD LASAGNA

Steps:
- Prepare seafood sauce. Heat oil in a large skiller over medium high heat. Add the onion and garlic and saute for 5 minutes. Add the tomatoes and puree and cook for 5 more minutes. Stir in the wine, basil, fennel seeds, salt, and pepper (to taste). Simmer uncovered over medium heat for 45 minutes, stirring occaionally.
- Stir the cream into the sauce and then the pernod. Stir in all the shellfish and simer 5 minutes. Remove from heat.
- Preheat oven to 350 degrees.
- Cook the lasagna (if necessary). Also ok to use the no-pre-cook lasagna.
- To make filling, with a wooden spoon, beat the ricotta, cream cheese, and eggs in a mixing bowl until smooth. Stir in the spinach, crabmeat, red pepper, scallions, basil, and salt and pepper to taste.
- Butter a large rectangular baking pan. Spread a thin layer of the sauce without any shellfish on the bottom of the pan. Cover with a layer of noodles. Top with half the filling, then half the seafood sauce. Cover the sauce with a layer of mozzarella.
- Place another layer of noodles over the mozzarella and spread with the remaining filling. Top with another layer of mozzarella. Add a final layer of noodles and then the remaining seafood sauce. Cover with the remaining cheese.
