Number Of Ingredients 6

1 small onion, chopped
2 tablespoons butter
3 eggs
1/4 cup 2% milk
1/4 cup diced hard salami
1/4 cup shredded Swiss cheese

Steps:

  • In a small skillet, saute onion in butter until tender. In a small bowl, whisk eggs and milk. Add salami and cheese; pour into skillet. Cook and stir until eggs are completely set.

Number Of Ingredients 10

1 tablespoon extra-virgin olive oil, 1 turn of the pan in a slow stream
1/4 to 1/3 pound salami, deli sliced or whole mini, Genoa, dry or sopressata, chopped
1 clove garlic, chopped
2 to 3 scallions, chopped, 1/4 onion may be substituted
1 plum tomato or 1 vine tomato, seeded and chopped or 3 tablespoons chopped sun-dried tomato -- your preference or, depending on what you have on hand
8 large eggs
4 ounces your choice of: Boursin garlic and herb cheese, crumbled, alouette garlic and herb cheese (4 rounded spoonfuls), crumbled feta cheese, crumbled herb goat cheese - again, whatever your preference and whichever you have on hand
Salt and pepper
Chopped parsley leaves, for garnish
Chopped or torn basil leaves, for garnish, optional

Steps:

  • Heat a medium nonstick skillet over medium to medium high heat. Add extra-virgin olive oil and salami. Cook salami until it renders some fat and starts to turn a deep burgundy color, 2 minutes. Add garlic and stir 30 seconds, then add scallions or onions and cook 1 or 2 more minutes. Add tomatoes and cook another minute. Scramble eggs with cheese, a little salt and a generous amount of pepper. Add eggs to pan and scramble it all up together. Serve scrambles with parsley and/or basil garnish.

Simple, Paleo, low carb appetizer for any party. It's so simple, but looks fancy and everyone loves it. For 10 people, I prepared three of these. They will not look pretty when marinating, but they "blossom" when you cook them.

8 ounces beef salami (Whole log)
8 ounces Dijon mustard
8 ounces apricot jam

Steps:

  • Slice salami in a diagonal pattern, about 1/8 to 1/4 inch thick, but not all the way through. First one way, then the other to make a "Chanel-esque" pattern.
  • Leave it intact enough at the bottom so it will hold together.
  • Place salami and dijon mustard all in a large ziplock bag.
  • Rub the salami through the bag so the mustard covers the entire salami.
  • Let salami sit in mustard overnight or at least all day in a ziplock bag in refrigerator.
  • Bake at 350 for 30 - 40 minutes and then place under broiler for a few minutes to toast the top of the salami.
  • Cut up salami and use toothpicks to serve.
  • Use extra marinade as a dipping sauce.

A tasty variation on scrambled eggs. We like this for lunch or dinner, as we don't usually eat a big breakfast.

Number Of Ingredients 6

1 Tbsp unsalted butter
4 large eggs
2 Tbsp cream (or milk)
1/2 c diced salami
1 c shredded cheese (i used a mix of chedder and jack)
salt and pepper, to taste

Steps:

  • 1. Melt butter in a 10-inch skillet over medium heat.
  • 2. Whisk eggs and cream in a bowl.
  • 3. When butter is melted, add eggs to pan and let cook without stirring for 1 minute. When edges start to firm, add salami and cheese and stir lightly until eggs are done to your liking. (I like mine soft and bit wet).
  • 4. Season with salt and pepper and serve with toast.
