12 ounces cooked medium shrimp, peeled and deveined
2 cups cooked rice
1 can (10-3/4 ounces) condensed cream of mushroom soup, undiluted
1 can (4 ounces) mushroom stems and pieces, drained
1 cup shredded cheddar cheese
4 tablespoons butter, melted, divided
2 tablespoons chopped green pepper
2 tablespoons chopped onion
1 tablespoon lemon juice
1/2 teaspoon white pepper
1/2 teaspoon ground mustard
1/2 teaspoon Worcestershire sauce
1 cup soft bread crumbs

Steps:

  • In a large bowl, combine the shrimp, rice, soup, mushrooms, cheese, 2 tablespoons butter, green pepper, onion, lemon juice, pepper, mustard and Worcestershire sauce., Transfer to a greased 1-1/2-qt. baking dish. Combine bread crumbs and remaining butter; sprinkle over top. Bake, uncovered, at 375° for 30-35 minutes or until lightly browned.

I haven't made this yet but it sounds yummy to me. Recipe comes from The old Farmer's Almanac. It was submitted by Mrs. Henrietta McClellan. I'm thinking that cream of shrimp soup might be a good substitute for the cream of mushroom soup. At the holiday season this would be pretty made with red and green bell pepper. This casserole is also good topped with grated asiago or longhorn cheese.

2 cups cooked rice
2 cups shrimp, peeled and slightly cooked
1 small onion, finely chopped
1 small bell pepper, finely chopped
1 (10 ounce) can cream of mushroom soup
5 ounces milk (1/2 of soup can)
1 cup grated mild cheddar cheese, grated (4 ounces, more may be used)
paprika (to garnish) (optional)

Steps:

  • Preheat oven to 350 degrees F. Butter a baking dish.
  • Mix all ingredients except the cheese together in a bowl. Transfer to the prepared baking dish.
  • Cover with cheese and sprinkle with paprika, for color, if desired.
  • Bake in preheated oven until cheese melts and is bubbly and lightly browned.

1 pound uncooked medium shrimp, peeled and deveined
2 tablespoons butter, divided
12 ounces fresh mushrooms, sliced
1 large green pepper, chopped
1 medium onion, chopped
3 tablespoons all-purpose flour
3/4 teaspoon salt
1/8 teaspoon cayenne pepper
1-1/3 cups fat-free milk
3 cups cooked brown rice
1 cup shredded reduced-fat cheddar cheese, divided

Steps:

  • In a large nonstick skillet, saute shrimp in 1 tablespoon butter for 2-3 minutes or until shrimp turn pink. Remove and set aside. In the same skillet, saute the mushrooms, green pepper and onion in remaining butter until tender. , Stir in the flour, salt and cayenne. Gradually add milk until blended. Bring to a boil; cook and stir for 2 minutes or until thickened. Add rice, 1/2 cup cheese and the shrimp; stir until combined. , Pour into a 1-1/2-qt. baking dish coated with cooking spray. Cover and bake at 325° for 30-35 minutes or until heated through. Sprinkle with remaining cheese; cover and let stand for 5 minutes or until cheese is melted.

Got this easy recipe from a friend at work. Since I dislike shrimp, I replace with bite-sized chicken. Either way it is rich and creamy.

2 cups cooked rice
2 cups cooked shrimp or 2 cups chicken
3/4 cup chopped onion
3/4 cup chopped mushroom
3/4 cup chopped green peppers or 3/4 cup chopped jalapeno pepper
12 ounces thousand island dressing
6 slices uncooked bacon

Steps:

  • Mix together rice, meat, and vegetables.
  • Transfer to 13x9 baking dish.
  • Pour dressing over all.
  • Place bacon strips on top.
  • Bake at 350 degrees for 1 hour.
