SCOTCH SHORTBREAD (COOKIES)
This is an old recipe from the American Woman's Cookbook, originally published in 1938. It was my dad's favorite cookie. Time includes chilling time.

Steps:
- Beat butter and brown sugar together until light and fluffy.
- Mix in flour.
- Wrap dough and chill for about 1 hour, or until firm enough to roll out.
- Preheat oven to 325°.
- Roll dough out on lightly floured board.
- Cut out cookies.
- Place on ungreased baking sheets.
- Bake for about 20 minutes, or until lightly browned at edges.

UNCLE BILL'S SCOTCH SHORTBREAD COOKIES
I have been making these cookies for over 50 years. The recipe was given to me by my Nana who came to Canada from England just after the First World War.

Steps:
- Preheat oven to 350°F.
- In a large mixing bowl, sift flour with baking powder and salt.
- In a separate mixing bowl, mix together butter, sugar and almond extract; beat until very light and fluffy.
- Combine butter mixture with flour and mix by hand until dough is very smooth.
- If dough is too hard to handle, refrigerate for about 1/2 hour to chill.
- Form dough into 1 inch balls.
- Place dough balls on ungreased cookie sheets.
- Flatten to desired thickness, about 1/4 inch thick using the bottom of a drinking glass preferably with a pattern on the bottom.
- Bake in preheated 350 F oven for 20 minutes or until light golden brown.
- DO NOT OVERBAKE.
- Store cookies in a container with lid.

Steps:
- 1. Cut butter into small chunks. 2. Add sugar and mix together thoroughly until very smooth. 3. Add flour gradually. Mix with hands until it makes one smooth ball. 4. Chill for one hour. 5. Roll out on a floures surface until 1/2 to 1/3 inch thick 6. Cut in small circles about 1 1/2 inch. 7. Place on cookie sheet 8. Poke with fork. 9. Bake at 325 for 10 - 15 minutes until golden brown around the edges.
