SHRIMP AND SCALLOP CURRY

36 medium shrimp, peeled and devined (shells reserved)
2 green onions, minced
2 cloves garlic, minced
2 teaspoons curry powder
3 cups heavy cream
1 cup white wine
1 lb scallops
salt and pepper
1 tablespoon butter
1 tablespoon chopped fresh parsley

Steps:

  • Combine shells, green onion, garlic and curry powder in medium skillet over med.
  • high heat and cook for 1 minute.
  • Blend in cream and wine.
  • Increase heat to high and cook, stirring constantly for 5 minutes.
  • Remove from heat.
  • Discard shells.
  • Set sauce aside.
  • Season shrimp and scallops with salt, pepper and curry powder.
  • Heat butter in saucepan over med.
  • high heat.
  • Add shrimp and scallops in batches and cook for 2 minutes.
  • Remove shrimp and scallops from pan and set aside.
  • Add cream sauce to pan and cook until sauce is thick about 3 minutes.
  • Return shrimp and scallops to saucepan.
  • Blend in parsley.

SCALLOPS IN SAFFRON SAUCE

These are the most delicious scallops I have ever had. Perfect for a special occasion as an appetizer. I found the fish stock hard to find so I substituted vegetable stock and it was just as good. Also, I would imagine you could substitute the scallops for prawns.

2/3 cup dry white wine
2/3 cup fish stock
1 pinch saffron
2 lbs shelled scallops, lge
salt and pepper
3 tablespoons olive oil
1 small onion, finely chopped
2 garlic cloves, finely chopped
2/3 cup heavy cream
lemon juice, squeeze
chopped flat leaf parsley (to garnish)
crusty bread, to serve

Steps:

  • Put wine, fish stock and saffron in a pan and bring to a boil. Lower the heat, cover and simmer gently for 15 minutes.
  • Season the scallops with salt and pepper.
  • Heat the olive oil in a large heavy bottom skillet. Add onion and garlic and cook for five minutes or until soft. Add the scallops and cook gently for five minutes stirring occasionally, or until they turn just opaque. Be careful not to overcook.
  • Using a slotted spoon, remove the scallops from the skillet and transfer to a warmed plate. Add the saffron liquid to the skillet, bring to a boil, and boil rapidly until reduced to about half. Lower the heat and gradually stir in the cream, just a little at a time. Let simmer gently until the sauce thickens.
  • Return the scallops to the skillet and let simmer for 1-2 minutes just to heat them through. Add a squeeze of lemon juice and season to taste with salt and pepper. serve the scallops hot, garnished with parsley, and accompanied by chunks or slices of crusty bread for mopping up the saffron sauce.

If you love garlic, marinara sauce, shrimp and scallops you will adore this recipe. Omit the scallops if you don't care for them!

4 tablespoons olive oil
6 cloves garlic, pressed
1 can del monte fresh packed tomatoes seasoned with basil garlic & oregano
1 can tomato sauce
1 1/2 teaspoons salt
1 teaspoon crushed red pepper flakes
1 lb angel hair pasta
1 lb small shrimp, peeled and deveined
1/4 lb bay scallop
1 tablespoon chopped fresh parsley
freshly shredded parmesan cheese (optional)

Steps:

  • In a large saucepan, heat 2 tabelspoons of the olive oil with the garlic over medium heat.
  • When the garlic starts to sizzle, add the tomatoes.
  • Season with salt and red pepper.
  • Bring to a boil.
  • Lower the heat, and simmer for 30 minutes, stirring occasionally.
  • Cook pasta according to package directions and drain.
  • Heat the remaining oil in a stir-fry skillet over high heat.
  • Add the shrimp and scallops.
  • Cook, stirring frequently, until the shrimp turns pink.
  • Be very careful not to overcook the seafood, as it will become rubbery if overdone.
  • Add seafood to the marinara, and stir in parsley.
  • Cook for 5 minutes, or until the sauce begins to bubble.
  • Serve over pasta, and top with freshly shredded parmesan cheese if desired.

THAI CURRIED SHRIMP AND SCALLOPS

I didn't have any green or red curry paste as a base, so I had to improvise and came up with this, it might have just been a one-hit-wonder, as I haven't made this dish again and am drawing the spices from memory, so just sample the paste and if it tastes about right, go with it!

gingerroot, peeled (about 2-3-inch)
2 teaspoons garlic (minced from a jar is fine)
2 teaspoons honey
2 teaspoons chili powder
1 1/2 teaspoons turmeric
2 tablespoons fresh cilantro
2 tablespoons desiccated sweetened coconut
3 teaspoons hot madras curry (McCormicks)
1 teaspoon salt
2 tablespoons fish sauce
3 teaspoons lime juice
2 tablespoons vegetable oil (or peanut oil)
1 lb shrimp
1 lb scallops
1 (14 ounce) can coconut milk
150 g rice or 150 g bean noodles

Steps:

  • Using a food processor, puree the ginger and garlic.
  • Add in the rest of the sauce ingredients to form a relatively thick paste.
  • It's best to refrigerate the paste for a few hours to let the flavors inter-mingle, but if you have to use it right away, than do so.
  • Heat the oil over high heat, and add the scallops and shrimp when the pan (or wok) is uniformly hot.
  • At the same time, boil some water for the noodles (or you can serve with rice if you want).
  • Stir the shrimp and scallops frequently for about 2 minutes, until slightly browned.
  • Add in the paste, and reduce heat slightly, coating the scallops and shrimp thoroughly.
  • After about 90 seconds, slowly stir in a can of coconut milk.
  • Reduce heat and simmer for a few minutes to reduce the liquid.
  • Serve over noodles or rice.

2 1/2 tablespoons vegetable oil
1 hot red chili pepper, thinly sliced crosswise
3 green onions, thinly sliced, white and green parts divided
1 lb sea scallops
3/4 lb large shrimp, shelled and deveined
14 ounces unsweetened coconut milk
1 tablespoon green curry paste, Thai
1/4 cup chicken broth
1 tablespoon light brown sugar, packed
1 1/2 tablespoons fish sauce, Asian
1 tablespoon fresh lime juice
12 ounces linguine
1/2 cup fresh cilantro, chopped

Steps:

  • Heat 1 tablespoon oil in a 12-inch nonstick skillet over moderately high heat until hot but not smoking, then sauté chile and white parts of scallions, stirring occasionally, until lightly browned.
  • Transfer with a slotted spoon to paper towels to drain.
  • Pat scallops and shrimp dry separately and season with salt.
  • Heat remaining 1 1/2 tablespoons oil in same skillet over moderately high heat until hot but not smoking, then cook scallops until browned, 2 to 3 minutes on each side (scallops will be almost cooked through).
  • Transfer scallops to a bowl with slotted spoon and sauté shrimp in same skillet, stirring occasionally, until almost cooked through, about 3 minutes.
  • Add shrimp to scallops.
  • Add coconut milk, curry paste, broth, brown sugar, fish sauce, and lime juice to skillet, then simmer, stirring occasionally, 5 minutes.
  • Meanwhile, cook linguine in a 6- to 8-quart pot of boiling salted water until al dente, then drain in a colander.
  • Stir scallops and shrimp with any liquid in bowl into sauce in skillet and heat to boiling.
  • Reduce heat and simmer until scallops and shrimp are just cooked through, about 2 minutes.
  • Transfer seafood to a clean bowl with slotted spoon and add linguine and cilantro to sauce in skillet, tossing to coat.
  • Divide pasta and sauce among 4 bowls.
  • Top with seafood and sprinkle with scallion greens and chile mixture.

1 teaspoon grated lemon peel
1 1/2 cups long-grain white rice, freshly cooked

  • Melt butter in heavy large skillet over medium-high heat. Add ginger and garlic and sauté until fragrant, about 2 minutes. Add curry powder; stir 1 minute. Add shrimp, scallops and green onions. Sauté just until shrimp turn pink, about 4 minutes. Add cream and lemon peel. Simmer until shrimp and scallops are just opaque in center and sauce thickens slightly, about 5 minutes. Season with salt and pepper. Mound rice in large shallow bowl. Top with seafood curry, then cilantro.

1/4 cup olive oil, plus 2 tablespoons
5 cloves garlic, finely chopped
4 cloves shallots, chopped
2 cups white wine
2 tablespoons chopped fresh parsley leaves
2 tablespoons chopped fresh basil leaves, plus sprigs for garnish
1 teaspoon chopped thyme leaves
2 cups heavy cream
1 1/2 pounds (20/30 count) sea scallops
1 1/2 pounds (16/20 count) shrimp peeled and deveined with tails left on
1 1/2 to 2 pounds cooked pasta or rice, for an accompaniment
1/2 cup grated Pecorino Romano

Steps:

  • In a large saute pan, heat 1/4 cup oil and cook garlic and shallot until translucent, about 2 minutes. Deglaze the pan with the wine, and add parsley, basil and thyme and let the liquid reduce by half. Using a fine strainer, strain the reduction into a clean saucepan and add the cream. Over low heat, let the sauce reduce to medium thickness. To the now empty saute pan, add 2 tablespoons olive oil, saute scallops, cook until opaque and remove to a utility platter in a warm place. Then use the same pan to saute shrimp just until pink, and remove to the utility platter. Add cream sauce to saute pan to toss the drained pasta or rice with the cream sauce and seafood, reserving a few scallops and shrimp for the top. Transfer to a serving dish, and sprinkle with cheese, as garnish. Arrange shrimp and scallops on top and garnish with basil sprigs.

I took a recipe for scallops with mushrooms from Emeril Lagase, and I added shrimp plus made a few other minor changes. This is the WONDERFUL recipe that I developed.

16 large sea scallops
24 large shrimp (peeled and deveined)
3/4 lb mixed mushrooms (incl. Oyster, chanterelle, cremini)
1/4 cup extra virgin olive oil, more for drizzling
4 shallots (thinly sliced)
1/4 cup balsamic vinegar
3 heads frisee (washed, may substitute curly endive)
salt & freshly ground black pepper

Steps:

  • Season the scallops and shrimp with freshly ground pepper and set aside.
  • In a 12 inch non-stick skillet, heat 2 tablespoons of olive oil until smoking.
  • Place the scallops in and DO NOT move them.
  • Allow them to cook until crisp and golden brown, unmoved on same side for 5 to 6 minutes.
  • In a 14 inch saute pan, heat remaining olive oil over high heat until smoking.
  • Add shallots and saute until softened, about 3 to 4 minutes.
  • Slice the mushrooms into 1/4 inch slices and add them to the saute pan.
  • Toss 3 to 4 minutes until softened.
  • Add the shrimp.
  • Add the vinegar and turn shrimp until they are pink.
  • Then add the frisee or endive.
  • Toss quickly, season with salt and pepper to taste, and divide among 2 dinner plates.
  • Without turning the scallops, remove scallops and arrange 8 on each plate.
  • Drizzle with olive oil and serve.
