5 medium potatoes
2 tablespoons butter
2 tablespoons flour
2 1/2 cups milk
4 ounces chive & onion cream cheese
3/4 cup gruyere cheese, grated
1/2 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon grated fresh nutmeg
1/4 cup parmesan cheese

Steps:

  • Melt butter, whisk in flour.
  • Add milk.
  • Simmer 5 minutes.
  • Add cream cheese, gruyere cheese, salt, pepper & nutmeg.
  • Cook and stir over medium heat till cheeses melt and mixture is fairly smooth.
  • Slice potatoes.
  • Treat baking dish with cooking spray.
  • Layer potatoes and sauce in baking dish.
  • Finish with sauce.
  • Sprinkle with Parmesan cheese and bake at 350F for 1 hour and 20 minute.
  • If it gets to brown cover with foil.

2 C. Whipping Cream
1 TBS Dried Thyme
3/4 tsp Salt
1/4 tsp Pepper
Dash of Cayenne
6 med-large-large Russet Potatoes, peeled
1.5 C Melted Onions
1.5 C Cheddar Cheese
2 TBS Butter
Salt and Pepper to taste

Steps:

  • Combine thyme, cream, salt, and peppers and mix well.
  • Using a mandolin slicer, cut potatoes. Add slices to cream and stir from time to time, as you go.
  • Once all Potatoes are sliced and soaking, cover the bottom of a 9x13 (or 4qt) casserole pan with slices. Make 3 layers of potato slices.
  • Cover top of third layer with melted onions, tiny dabs of butter, and a light sprinkling of cheese.
  • On top of onions layer, make 3 more layers of soaked potatoes.
  • Repeat onion layer.
  • Continue layering until entire dish is filled.
  • Pour remaining cream on top of potatoes. Sprinkle generously with cheese.
  • Bake at 350 degrees Fahrenheit until potatoes are tender. Approximately 1 hour.

1 cup whipping cream
1 1/2 cups canned chicken broth
1 cup dry white wine
1/2 cup milk
1/2 cup minced shallot
1 tablespoon minced garlic
4 teaspoons herbes de provence
3/4 teaspoon salt
1 tablespoon gravy flour
1/4 teaspoon herbes de provence
1/4 teaspoon mild paprika
1/4 cup crushed graham cracker
200 g soft fresh goat cheese
4 lbs russet potatoes, peeled, thinly sliced

Steps:

  • Preheat oven to 370°F Butter 13 x 9 x 2-inch glass baking dish.
  • Mix 1/4 part of goat cheese, crushed graham crakers, paprika and herbes de provence. Set aside.
  • Mix first 9 ingredients in large pot. Bring to simmer over medium-high heat while stirring constantly. Add remaining 3/4 of cheese; whisk until smooth. Add potatoes to pot; bring to simmer.
  • Transfer potato mixture to prepared dish, spreading evenly. Spread the cheese, herbs and graham mixture evenly on top of the potato mixture in the glass dish. Cover with foil; bake 30 minutes. Uncover and bake until potatoes are very tender, the top crust is golden and liquid bubbles thickly, about 35 minutes.
  • Let cool 15 minutes before serving.

You can use any three cheeses you like, but I find using a sharp cheddar, freshly grated Parmesan or Romano cheese, and thin sliced provolone (because it melts very well) are the best! Takes time to cook, but the result is so yummy and the smell is intoxicating!

1 ½ pounds Yukon Gold potatoes, thinly sliced
2 tablespoons butter, divided
1 pint heavy cream
2 cloves garlic, thinly sliced
salt and pepper to taste
2 cups shredded Cheddar cheese
4 slices provolone cheese
½ cup grated Parmesan or Romano cheese

Steps:

  • Preheat the oven to 325 degrees F (165 degrees C). Grease a 1 1/2 quart or larger casserole dish with butter or nonstick spray.
  • Layer half of the potato slices in the bottom of the casserole dish. Dot with half of the butter cut or pinched into small pieces. Arrange half of the garlic slices over the potatoes, then pour half of the heavy cream over. Sprinkle one cup of Cheddar cheese over the layer, and season with salt and pepper. Repeat layering of potatoes, garlic, cream and Cheddar cheese, then top with the slices of provolone cheese. Season again with salt and pepper.
